[Music] hi everyone and welcome to my kitchen my name is rosana and today we're going to be making fried taquitos or flautas these are usually stuffed with beef chicken or potato but today we're gonna be stuffing them with chicken i'm so excited because this recipe has been in her family for so many years and i can't wait to share it with you so let's get started first we need to cook the chicken in a medium deep pan add one pound of chicken breast a quarter of a medium white onion two garlic cloves and enough water to cover and cook the chicken completely i'm using four cups of water place over high heat and let it boil when boiling go ahead and season with salt then bring it down to a simmer by lowering the temperature and let the chicken cook the rest of the way meanwhile we can get a jump start on the toppings we need shredded cabbage or you could also use iceberg lettuce either one you choose works great i do want to say our favorite is cabbage because of its crunchy texture make sure you rinse and drain after shredding it next is the cheese take your queso fresco which is what we use when making taquitos and crumble it up and of course the salsa is a must i have some recipes you can use i'll leave the link in the description area and cards above so you can pick one when the chicken is ready let it sit in the hot liquid for approximately 10 minutes then remove from the pan and allow it to cool down completely in a different container once no longer had also shredded into thin strands the reason why i like to do thin strands is because i can fit more chicken into the center of the rolled taco when all the chicken is shredded set it aside these fried tacos are made with corn tortillas here are two kinds you can find in the grocery store the white tortilla is what you want to use they are thinner and crisp up to perfection the yellow one is thicker flakier and to my preference it absorbs more oil with a slightly less crispy texture they both work but i prefer the white corn thinner tortilla now heat a pan or komal to medium heat we need to warm up the tortillas in order for them to become soft and flexible we are now looking for them to crisp up or develop a color all we need is for them to become softer in order for us to be able to roll them without breaking them if the command feels too hot and the tortillas are browning you can always lower the heat when all of them are ready it's time to roll lay one tortilla at a time on a flat surface and add a good amount of chicken to the edge take the end of the tortilla and tuck over the filling then tightly roll the rest of the way until you reach the other end once rolled you will notice a flap that did not get tucked go ahead and insert a toothpick through the center of the flap to secure it and continue to press on the stick until it comes out on the other side go ahead and stuff and roll the second taco repeat the same steps and make sure both flaps end up in the center facing each other this will hold up both shapes and prevent them from opening while frying follow the same steps with the rest of the tortillas and chicken you should be able to fit two tacos per toothpick and this recipe will give you 16 to 18 taquitos total when finished place a pan or skillet over medium heat and add a quarter of an inch of canola oil allow it to get hot to make sure it's up to temperature i take a taco inserted and if it sizzles we are ready to start frying add them to the hot oil but try not to overcrowd the pan and fry away let one side achieve a golden brown color and crisp up then you can turn them to the other side and let it do the same the tacos should be crispy on both sides i like to achieve an even color so if you need to rearrange them feel free to do so okay let's talk rolled fried tacos are popular in mexico women would set their tables outside their home together with a deep frying comal or bowl and make taquitos and other dishes for sale they only set up for dinner and people would stop and eat on their way home or leave their homes to go enjoy a delicious dinner these really bring happy memories when fried to perfection place them on a plate lined with the kitchen paper towel to absorb excess oil i waited for them to slightly cool down because we want to be able to remove the toothpick without burning ourselves and also enjoy them warm and do not forget to remove the toothpick now for the toppings spread sour cream right over them if you can get a mexican style cream or crema even better then sprinkle cheese queso fresco is the way to go because of its texture and flavor next follows the shredded cabbage or iceberg lettuce now the salsa typically a blended salsa is used because we want a smooth one rather than a chunky one that way it spreads beautifully as you lay it on top you could also add more cheese if you desire and lastly if you like spicy pickled jalapenos are the perfect addition this is the way we serve them at
