[Music] [Music] what's up everybody welcome back to that Louisiana life we're going to do something a little different today it's been freezing cold outside crazy windy so the next best thing for us to do is cook a gumbo and I'm pretty sure a lot of people in south Louisiana can relate to that so Tara's going to whip us up a gumbo it's not a how-to video it's how Tara Cooks a gumbo so you ready to do it Tara I guess so yeah she makes an awesome gumbo she she don't measure a whole lot of stuff though we just kind of throw stuff together and it always comes out good but today she's going to try I'm going to try I'm going to struggle but I'm going to try measurements yeah let's get it okay so we're going to start off with the room I don't normally measure the ingredients but we're going to do a half a cup of oil going to heat it up a little bit once it's heated up a little bit we're going to add a half a half a cup of flour okay the the oil is nice and hot now so I'm going to go ahead and add a half a cup of flour because that's what we put in oil so let's see and basically I'm just going to stir it until it's the color that I want it to be which would be like a medium brown yep almost every good meal in Louisiana starts off with a gur room our R is done it's a right color I did add a couple of more tablespoons of flour just because it wasn't as thick as what I like but uh this is it so I'm going take this off the fire and go on to our next step all right next step is I am cooking down 4 lbs of cut up Frozen okra I'm cooking it on the side because I don't know if I'm going to use it all in the gumb whatever I don't use we're going to freeze so that's it just cooking the okra down for now okay we're going to go ahead and get the Gumbo Pot started I'm going to put the r that I just made in the pot I'm not going to use all of it I'm just going to use a little bit of it down here and I'm going to add our season season l which is onions bell peppers and celery I did put about 3 lbs of Seasons blend in here cuz we're making a really big pot of Gumbo so of course adjust to what size gumbo you want to make next I'm going to add Rotel some people don't use Rotel in there gumbo we do over here so put our Rotel in I'm going to let these seasonings kind of heat up a little bit and get back to you in a second okay so while the okra is cooking down I'm going to put in a little white vinegar it just cuts down on the Slime that's involved with okra not much just a little bit and that should be enough to get rid of it while this Cooks down okay uh since we're making a chicken and sausage gumbo we're going to go ahead and put this stock in from when we balled and deboned the chicken last night it's just uh chicken stock going to add some in here we have quite a few more containers but this is what we're putting in for now I'm going to let this mix up a little bit get it cooking and add more ingredients later I guess while Tara's cooking up that gumbo we're going to play some foodball Drake's about to take a BT with him you ready [Applause] yep where you at boy daddy still know how to play oh it's your ball you going your ball buddy look go ahead what you got no it's been a while since I play [Applause] this for anybody who's wondering yes we have a fball table right in the middle of our living room well I used to play a lot but nice come on Drake put it on him nice I guess I can help Tire a little bit I'm going to go ahead and cut up the sausage we're going to do some rehor smoked sausage I'm going to start off with 3 lb if that's enough we'll go with that I got another pack in case you want to add some more this stuff is good it's good good get cutting think I can do something to help you huh yeah besides watch yeah okay the ochre is done so we're going to go ahead and add it to our gumbo I have no idea how much I'm I'm going to put in here I'm just going to spoon it in until I think it's enough cuz we are cooking like five gallons of chicken sausage gumbo yeah we always cook a lot of Gumbo so we can put some in the freezer it's always good to have gumbo in the freezer now we're adding our Cajun spices Tony sashes yeah that's our goto yeah season to taste and I'm throwing in a little bit crushed red pepper some people use Cayenne I like the crush red pepper I'm going to go ahead and add the debone chicken we did last night we debone 20 lbs of lead quarters and we wound up with 7 lbs of meat so man that's some heavy bones huh there we go add that in there and I put the skin in too love the skin Keith loves the skin T don't I wish we had the gizzards and the liver to put in there too but again TI it on oh we got to run away there you're doing great I know we're going to add a sausage in a little later we let this cook up a little bit and of course you can do it the easy way if you want and buy chicken stock and boneless chicken and avoid all of the work that we did last night that's no fun but I like doing it this way yeah the more loving you put into it the better it tastes that's the truth yep so the Gumball's been cooking down for about what 45 minutes or so yeah 45 minutes an hour something like that it's looking amazing so we're going to go ahead and add all this sausage smoked sausage I did cut up a few more pieces in here because I probably ate at least a pound of it while it was sitting on the coun so we're going to add this in and uh I don't want to Splash me and cook me all up so I'll add it in nice and slow h y doing good I know you're a good helper I'm trying you helped me so much the other day netting all my fish I figur the least I could do is uh help you cook a little bit that's right H yep cuz you are an excellent fish Netter I have a lot of practice when I'm fishing with you all right everything's in sausage chicken all the goodness look at that skin that's mine I'm taking all yours so how long we letting this cook down for um probably going to let let it cook down for maybe another half hour 45 minutes more yeah yep the longer it Cooks the better it is look at that it's all done look at that man I already know it's good cuz I tasted it it's delicious Taran I is going to drink us a cup of coffee while waiting on the rice to cook look at this dude yes check out my cup thanks Mr Alvin R for sending me this cup he made that for me how awesome is that you did a good job appreciate you buddy wait on the rice and we're going to fix us a bowl of gumbo see you in a sec it's pretty good it's delicious how's it Drake good good delicious it's delicious
