Hi everybody, this is Nina and I'm going to
make this easy peasy chicken lo mein using spaghetti noodles. You don't have to go out and buy egg noodles. This is the easiest way to do chicken lo mein and, we're going use spaghetti noodles. We have 1/2 pack of the
spaghetti noodle and it's cooked already. After it's all cooked don't
cook it too much, but you have to run it under cold water. So it stops cooking and so it's al dente. Then we have 2 cups of cabbage. We have about half a carrot, but you have to cut it like theses shredded pieces or julienned. We have the scallion too, that's for garnish, you add that at the end. Then we have these, they are like a Chinese sofrito. We have the white part of the scallion. We have minced garlic and a little bit of minced ginger too, it's optional. We have the chicken here , it's like about half a cup of chicken ( thigh meat ). So we have to marinate
the chicken, The first thing we do with the marination with the chicken is you have to put two teaspoons of soy sauce. Put some pepper in there, and then what you need is a teaspoon of cornstarch that makes it really smooth. Okay you mix it up really well Usually you can make this chicken ahead
of time so at least let it sit for about an hour or half an hour. You can do that with shrimps or any kind of meat you like. Then you have to put some oil in it about a tablespoon oil in it. Then you mix it really well again You can just leave in your fridge overnight too if you want. Before we cook we're gonna make the
sauce. You need a bowl to make the sauce. You need water or chicken stock. Put like half a cup of water in here,
and then you need soy sauce, like 3 tablespoons of soy sauce, 1 2 3. This is the dark mushroom soy sauce. If you don't have dark soy sauce, it's okay. It gives a little darker color that's it. Put 1
teaspoon of the dark soy sauce. I also use oyster sauce. This gives it
like a really good flavor, but you don't have it, that's okay too. Just use whatever you have in your kitchen. I put two tablespoons of the oyster sauce. Okay, now we can start cooking. Also
I always put some sugar in there too. Just to balance the flavor out, so I put
one teaspoon of sugar. Put some white pepper or black pepper,
whatever pepper you have in there too. This is gonna be your sauce for the lo mein. All right I'm gonna start cooking
It might be a little loud as I put my vent on. The first thing we do is put the oil in the
pan about two tablespoons. The pan has to be hot before you put the chicken in. I usually do it with a nonstick pan. It;s easier so the chicken doesn't stick to
the pan. The chicken goes down. Cook it until it turns brown on one side, then turn it around let it cook all the way. I cut the chicken into like small
pieces so it cooks faster. About 5-10 minutes You can involve your kids to cook with you, like a family thing. They can cut the vegetables for you with a plastic knife. I usually transfer the chicken onto a plate You have some oil here already, but if you
want, you can add little bit more oil to cook the vegetables. Not too much because you don't want to be too oily. Now you put garlic, ginger, and the white part of the scallion. You can smell the aroma of the onion, the garlic and the ginger. The next thing I will put is my
cabbage and carrot. You can put other vegetables if you want, but it's easiest to get carrots and cabbage. You can put broccoli in
there you want too. I always put a little bit a little bit
of salt and pepper, like a pinch just to give it a little flavor. You see that the vegetables start to wilt. You mix it up Now you can put the sauce in.
This is 1/2 a cup of sauce. You don't like it too wet you control
the sauce a little bit. I put it all in. If you like it darker you can put
more dark soy sauce. You can buy at the Asian supermarket. It's called the mushroom soy sauce . You don't have it if you don't have one. Cook everything until soft, and the
water is about to evaporate. It looks like the sauce is dried, now it's a good time to put the chicken back in. This is how I do my chicken lo mein in my house. Everybody has their own version. So, to give it a little better flavor, you can
put sesame oil at the end or cooking wine. If you like it spicy you can add your red
chili pepper or Sriracha hot sauce. Sometimes I put vegetables like bok choy too. The last thing I put in is the green part of the scallion or cilantro is fine too. It gives it a good color. Cook for
