French dish of mayo F Mayo egg Mayo in English is a very popular starter served in French Bistro it is basically a hardboiled egg sliced in half and covered with mayo a deceptively ser simple dish and yet French people have turned this into an art form in the previous episode I got the chance to taste the world champion egg mayo and it was spectacular so I guess now it's my turn to create my very own version com up fore when [Music] I'm I'm in yeah I everybody everybody know know when to [Music] click so it turns out that creating a recipe is more complicated than you might think you might need to think about balance layers of flavor textures it's an exercise in pure creativity in the end I came up with three ideas the number one is to do it Bistro style so I'm thinking of three halves of egg covered with a thick Mayo maybe Co slw or even fennel or celery underneath it's generous it will be balanced but there is a deeper problem it's very similar to the exact dish that I had in the previous episode it's almost like a it's not almost a copycat it's a copycat it's not going anywhere so afterwards I'm I'm thinking let's make an elevated version that would be served in a palace por rad on the side micro green cream or gel version of the egg delicate drops of sauce and a foamy Mayo H doesn't sound like the type of dish I would order in a pistol I've lost myself in that dish so this idea is gone as well the challenge was come up with your version of the egg may I have to put some of me inside that dish funny enough I watched the previous video one more time and during the chat I had with my video editor I had an epiphany you're telling me you want to do a video about chopped up egg in some mayonnaise it's not it's not chopped up it's a different concept do you value Ramen eggs yes do you consider that making a Mayo is is a demonstration of technique yeah I would agree with that then Mayo with a Ramen egg that's exactly of mayo exactly may I want to turn ramen one of the key elements to Ramen is the broth I can't wrap my head around having an egg with mayo on it in a broth it sounds gross so instead what I'm going to do is turn a Ramen broth into a sauce so in order to do that I'm doing a reduction of chicken stock and Japanese Dashi by doing so I will concentrate the flavor but I will also increase the uh thickness of the broth uh I'm going to put this aside and work on a nice another aspect of my egg Mayo so amongst all the toppings that you can find in ramens there are a few Classics Nori seaweed spring onions marinated pork belly now I don't have pork belly but I do have this Italian bacon called guell I'm not sure if I can make it work or not so I'm just going to try I'm going to marinate my one Chell with a bit of sake a bit of mirin and then soy sauce just going to let this marinate on the side for let's say maybe an hour okay so my chicken stock and dashy combination has fully reduced and it's flavorful I can feel the chicken but I can also feel the Dashi definitely some Umami going but I'm going to improve this by just adding a bit of soy sauce to it I'm thinking egg Mayo is very rich the whole thing is going to lack a bit of acidity maybe if I add a bit of pickle [Music] juice that's the sauce we need now we need to thicken that okay so I think we got something [Music] okay so I'm still missing the egg and the Mayo I'm going to start with the Mayo and then we'll tackle the [Music] [Music] [Music] egg so I know there is a Japanese Mayo out there it's called Ci or Cai C CI so I don't know it exactly cuz I've never tasted it Lou you got to help me on this what does it taste like very sweet very sweet yeah what does the sweetness comes from is it coming from sugar it's coming from Mir it could work maybe in our situation thanks man the only thing is that I'm slightly worried to lose the thick texture I'm going to save some of that just in case right so I'm going to add Marin it's not breaking the Mayo so far what about this Cy mhm okay this is a good story right here Mayo sorted right so there's still one big missing element and that's the egg in the ramen series I cooked a bunch of eggs at many many different timings I can tell you that I want an egg at 7 minutes and 30 seconds the white is set but the yolk is still a little gooey okay so in front of me I've got all the elements that I Envision for my dish eggs shashu gual C Mayo spring onions Ramen broth sauce now having all the elements of the dish nicely separated like that in front of me it allows me to quickly check if they match or if they don't uh by just doing Simple combinations that's too many elements in my mouth I think cuz I'm I'm suspecting an element to be off the Grell so I'm trying it without the Grell to see no it works this is nice I love gu Chell but using guell like this is wrong we're not making carbonara right here right this is ramen it still is missing two elements of ramen noodles I can't add noodles without disrupting the egg mayo and second the aroma oil usually in ramen we use Aroma oil and they are heavily flavored I've got one specific oil in mind that's pretty [Music] [Music] cheeky so this black oil is called Mayu it's pungent it's kiky it's bitter and it's very addictive and I think this may be the missing piece of my egg Mayo puzzle wow that is very naughty indeed and that is for sure exactly what I was missing I think we've got all the elements now I just need to assemble them together it's business time [Music] stop [Music] p this is my egg Mayu it looks like a mini Ramen I added a piece of norish seaweed on the side just to make it really look like Ramen and also because I love the taste with eggs the yolk is on point a bit of sauce few shavings I'm very excited to taste this I'm also slightly worried cuz some of the elements I wish I had done them slightly different like maybe the sauce would have been a little darker the Mayo Just a Touch thicker but in the end I did my best and this is the bite this is the almighty bite it's really good and I think what is adding a lot to that dish is the burnt garlic oil it's adding so much depth m also the salt I decided to go with a pinch of flaky salt on it and it gives you that little crunch the yolk is a showstopper now obviously I'm no Michelin starf this could be improved maybe a few texture could be pushed a little further the crisp of this the silkiness of that but the flavor combination it does work and it does taste like Ramen you serve this to me in a French pistro with Japanese Inspirations I would be over the moon okay guys that's it I really enjoy putting my spin on an allmighty dish like the French of Mayor very very fun I also love the challenge and I love the little adjustments that I had to do
