successful so today we are about to dive into another subject dim sum for the moment we have prepared a steamed dim sum so the dough is a red color we make with the beet wood juice it's beautiful so yeah and the shrimp quality and simple simple the taste should i serve you more i know because i still have a surface need to work okay no worries i'm gonna take care of all this don't worry slightly nervous for this one because i've seen the whole process of the filling the wrapping the dough and the steaming is this a classic this one is crazy okay this one is exclusive i knew it the wet and gold in china almost like happiness chinese new year how you call this hong kong house like the crystal ruby so the dough is transparent yeah transparent it's beautiful i can see what's inside the skin is amazing on this one it's bouncy slightly chewy and the filling is uh intense and flavorful and garlicky but the wrapper is amazing the relation with the wrapper and the stuffing is like juicy the rice and the fish is very important so allow me to interrupt for a second this is just me trying to break down what dim sum really are you see i recently posted a poll on my youtube channel in the themselves dim sum is those little bamboo steaming baskets in chinese restaurant that's all you need to know for now so we have a sweet nut dim sum these are egg tarts so i'm pretty familiar with these i love these slightly warm it's like a little hug or welcome the custard is so delicate yeah not jelly like like yes what are these we call it uh jet the name also is uh gao but the color is a green when you bite into it's very soft and creamy and it's so different than the others italian it's vegetarian have mushroom radish water chestnut the dough coming from spinach and thai civility so the color will be coming green right so dim sum level one dim sum are actually a small foods which are meant to be enjoyed along tea and that's in fact how they have been originally created in tea houses in south east china and hong kong in some ways they're a bit like a spanish tapas which go along things so well and just like tapas dim sum are meant to be shared i can't just so i order this and this is all for me you can but normally it's for sharing should i serve you first it's not necessary to so it's more it's more relaxed more relaxed yeah okay and if it's relaxed i'm going for the next one yeah oh wow i was looking at this one rice bro we are using the fermentation rice so so the red color yeah comes from the fermentation on the rice yeah it's natural madness this one is fun because first of all when you have it you think it's going to all be soft it's only going to be in fact inside it's crispy steamed and deep fried we can buy together hmm we have two in two different emotions one and then the other one each sialong has its own little basket yes makes sense i don't think it's going to be super hot this one wow juicy inside right it's like an ocean for all the other dim sum i'm always surprised for this one i thought i wouldn't be surprised because i thought this is xiaolong but i had chiaronga a few times but it's chicken and it's unexpected the simple thing is more difficult doing well right always level two they are not like spanish tapas they just told us that they were like tapas in level one now in level two they are not yes they are similar but in fact dim sum shouldn't be served in the evening they are a breakfast thing up to like early afternoon after that you switch to tapas okay this one looks amazing you know what this one looks a bit like a north african pastry [Music] wow okay wow wow big one i would have never thought that this would be dim sum i thought it would only be soft juicy this is traditional yes so fresh like every layer is independent what what is this one similar like more cheap it's cold yeah this is why i love eating with my hand [Music] it's like ice cream almost inside cream mascarpone cheese fresh food inside soft skin then then cream then oh there's something in the center then juices fruits freshness i went over heels and valleys on this one this one is very taro puff stuffing inside chicken mushroom [Music] oh wow this is insane that's what i just said in french it's so delicate so crispy and inside it's mad dim sum level 3 dim sum are not only steamed food i cannot believe this turns out they can be baked fried braised and steamed or like a combination of all these cooking process right guys that's it you've basically graduated from dim sum university this one is the barbecue purple this is barbecue pork bun yeah i would have to never guess in a million years they look like sweet patisserie it smells like butter yes i feel like i'm in a french boulangerie oh wow okay the classic one is the steamed one this one is oven breakfast it's amazing this one and it's the sugar has caramelized yeah and it makes like a little shell inside it almost looks like french puffs yes with the crackling on top caramelized toasty crispy crumbly this is sweet the other were savory it's normal because you have a tea when you eat some savory you drink tea you can go into the street after the sweet you can have a drink of tea going to the savory it's hard for me to pick one but i have to say this one because of the wrapper and and i think the shumai that's right yeah if i had to pick more i would go for this one and this one and this one and this one and this one and this one today you have uh experience the high-end team some but one day if you go hong kong to discover more and more much thoughts go into making each and every of these little beauties beauties this episode is not only about feeding my stomach it's also about feeding my imagination as i mentioned earlier in this episode i wanted you guys to have a sneak peek into my creative process you see in between series i have many experiences i go to restaurants i meet chefs and artisans i basically feed my soul my mind with loads of things that could be useful in the future now of course otherwise it would be too easy not all of these you know experiences and ideas end up being developed into series but i guess if you don't plant the seed there's a hundred percent chance you will never see a tree or a plant or flower so in the end i'm not saying you will never ever see a dim sum series on this channel but just
