- Today on Cookin' Something, we are gonna make a breakfast sandwich. I love breakfast sandwiches. I love them so much, but not really. Let's be honest, when I'm at home, you know what my breakfast sandwich is? I take two pieces of (beep) toast, margarine, HP sauce, couple
streaky bacons, crispy crispy, and that's it. I eat that. That's just a bacon sandwich. On Cookin' Something
today, I'm gonna have a go at making what I think is
gonna be a great sandwich. Bacon, we're gonna have sausage. We're gonna have hash browns. We got avocado. We got pickles and jalapenos
and cheese and eggs! You can smell pastures. You actually can. That smells like a chicken's butt. (people chattering) Perfect. That's farm fresh. It kicked in after a second. I did it a couple times, but
now I can smell a chicken. (bluesy rock music) Hey, let's make bacon! First thing we wanna do is
throw the bacon into the pan. I know that I cook bacon
different than a lot of people because you know what I like doing? I like to just throw all
of my bacon in at once and I just layer it. As the bottom gets crispy, it all starts steaming and rendering and all of that good stuff. Look, now I'm done touching bacon. Everything's in here. We're gonna cook it. We're gonna render it. We're gonna crisp it up. We're gonna control it. We're gonna cook some bacon. We wanna make breakfast sandwiches. Things that are important when you're making breakfast
sandwiches are textures or flavors or layering styles. First thing I gotta do is get
all my mise en place ready. But y'all wanna keep it warm,
so we gotta turn a oven on. (host yells) Come on. 550 hot. Okay, we're gonna take our
frozen, beautiful hash browns. Take those. (intense music) Putting these in the oven. Ow. They're gonna take about
15, 20 minutes, okay? I wanna kind of do this in like real time because then you can see that it's not that difficult
to do this all together. We're all together. I'm gonna whisk up couple of eggies. I'm gonna make maybe like three
breakfast sandwiches here. We're gonna do five eggs. Look at the egg yolks. These are beautiful. When you get the nice orangy egg yolks that's the good stuff. Let's just get a bigger bowl. We wanna just whisk 'em up. Bacon's cook and hash
browns are in the oven. (air swooshes) I'm gonna pull out a griddle like I'm making breakfast
actually here, okay. Let's calm 'em down. So now I can cook my sausage on here and I'll cook my buns on here. We're gonna do our eggs
and a nice non-stick. Do we have a large non-stick? Ooh, what's this? No. Yeah What's that? (pans crashing) (cat meows) There we go. Boom. (pan crashes) Plan your picnic, everybody. Plan your picnic. My bacon's getting crispy on the bottom. You give it a little love like that. Boom, boom, boom. Nice. I literally just took sausages and we made balls out of 'em. So we're gonna cook a couple of those. The bottom of your bowl,
press down on that. That didn't work too good,
but it worked kind of good. So use the bottom of your
bowl, smoosh down, make a mess. Or you could just use a spatula, maybe. You know, now you got a dirty bowl too. Perfect. Look at this. This is frying up real good. I like crispy bacon. That's kind of curly. It has a little bit of body
in it, you know, curvatures. This Matheson Cookware pan. ♪ woo, da, da, da, meow, meow. ♪ At home, I usually would
just take some paper towel throw it on the counter, and
when our bacon is good, look. That looks good. This piece looks good. This piece looks good. When you're cooking with a
cast iron pan, once you kind of get to a nice heat,
just turn your heat off and you got all that nice residual heat. Everything's gonna keep bubbling. Nice, maintained. Look at this. Oh, look at all that bacon. Okay, let's check. Ooh, look at that sausage patty. Ooh, we got sausage patties. Once you cook 'em, you're
gonna cook 'em like 90% on their side. Put these over with the bacon. ♪ do, do, do, do, do, do. ♪ (air swooshes) So we're gonna cut these
rolls, boo, boo, boo. We want to toast them up a little bit. Nice buns. Let's check on the hash brown, shall we? Oh yeah, they're toasting. Look at this nice and crispy. Another like five minutes
and these are gonna be done. Okay, so (sighs) what are we doing here? What are we doing here? Okay, let's toast these buns up. Okay, we're gonna just put these on here. Residual heat. I got no butter. We're gonna make a breakfast
special sauce, everybody. Two tablespoons of mayonnaise,
two tablespoons of ketchup or whatever that is. Like one and a half, HP sauce. Americans, do you know what HP sauce is? House of Parliament Sauce. It's amazing. It's like ketchup are like
"woosh sha sha shire." This is breakfast sauce,
special breakfast sauce. You know. We have our hash browns, we got sausage patty,
we got American cheese. Put one in between each one, okay. That's nice for us. Then we're gonna melt this in the oven. Okay, so here we go. We're in a critical moment here. Turn my eggs up. We're going high. Take a fair amount of butter like two tablespoons
worth of unsalted butter. Melt that in a pan. We don't wanna brown it too much, okay? We just wanna melt it. Throw in our eggs, take it off of the heat and we're just gonna
kind of do this, okay? Hit it with some salt. Take these last two
slices of American cheese. Rip it up. Throw it into the eggs. We're just gonna move this around. Nice, beautiful cheesy curds. Check out this. Look at this. This is melted. This is the part of the
show where you really, wow. Start making a mess. Okay, sh. We're just gonna leave this here. Now we've created, let's see. It's nice. (air swooshes) Boom. We're going sauce. Look at that. Three perfect little things. Hash brown, sausage bottom. Oh, this is gonna be a good one. Now, little avocado. Boom. This is a nice avocado. Spread that out onto it. Okay, fresh crack pat. Eggs? Eggs, we're back on eggs. Oh, that's nice. Isn't that nice? So what we're gonna do is
to divide this into three. We have a beautiful little
French omelet as they say. Look at that. (laughing) I'm swinging from a pendulum. Bacon, bacon, bacon. Okay. Couple "pickies." Couple jalapenos. People like the little
spice up your life, eh? Then blip, blop. Whoa. That's how Big Dog makes
a breakfast sandwich. You know, club sandwiches
notoriously always packed in paper and sliced in half. And then you get the reveal. Let's see. There you go. (string music) It's magical It's laughing at me. Lets bite it.
