I love gumbo you love gumbo we love gumbo have you ever made a whole pot of gumbo and ate the whole thing in one seeding by yourself alone sad looking into the bowl of gumbo by the time you get down you ever actually used Google Earth where like you just zoom all the way out and you're like damn there it is just a speck on a flea on a dog getting itched by the [Applause] [Music] Galaxy half a cup of pork lard let's start [ __ ] all this [ __ ] gumbo town I've been to New Orleans a couple times Big Dog's got that pork lard I've had gumbo a couple times I've even made gumbo before that's a half a cup of lard we're going to melt that down and I know your mom and your grandma melting it down made it way better than me melting it down I'm never going to be able to do it right I'm just trying to show the love that I have and I really want a gumbo we need to make a dark rout we're going to have to cook this kind of gently and slowly this isn't High heat cuz we don't want it burnt PSA not from the south I'm from Canada we're going to add in our flour we're going to stir now we're going to turn the heat down right now it kind of looks like oat milk we're going to bring this till it's a nice golden beautiful dark R while we're doing that we got our celery the jalapeno our onion and our bell pepper this is how you cut stuff up when you're putting it in a blender don't judge me I'm going to just blend these up with no liquid in them nothing oh yeah we're good here you can thicken something with a rue so then it makes more volume but if you reduce it to a thickness it takes a lot more product therefore I think adding a rue was something that they would do to create more volume does that make sense it's all about this this is the base look at this looks like almond butter this is what takes the time cuz everything else is relatively quick I want get it to the point where everyone's like yeah that's dank you know I could cheat and just put some soy sauce in it and make it look real nice ooh look at that smell that do you smell that that's it that's as good I I don't know I'm panicking what's happening I'm like this is how you guys feel at all times cooking at home I wouldn't cook at home either I get it [ __ ] it I'm going in I'm taking our vegetables now this it going to [Music] sizzle oh mama beautiful I'm a beautiful cook okay pepper gross Maddie hey it's you yeah Peppermill salt cellar yes please yeah you can grind pepper and sprinkle salt on anything it makes food taste good wow yeah bye cook like a mat this smells so incredible the peppers and the onions and the Rue deep caramelization I really want to sear our uh andoy little oil just to get it going we got one lound of onoi I want these kind of caramelized cuz you could just take them throw them in but I'm like I don't want to do that so just take them cuz it is about that deep flavor my family my mom's side we're pores we're acadians we're cooking here my whole family is acadians you know smell that are you nuts right now but we didn't grow up eating gumbo uh-uh we're going to get those nice and crispy and then we're putting them in cuz we're Canadian acadians we're Canadian acadians from New Brunswick and Nova Scotia we came over my family the son they came over from like Normandy in like 1837 to Nova Scotia so I'm going to take we got two tablespoons of Arcadian spice boom in my family's been out here I want to wake that up with all that pork fat all that lard we're we're not like Acadian acadians but we're acadians perfect this is nice and this is nice this is nice and this is nice there's a lot of things happening right now but nothing is out of control look at that that's just flavor okay so the sausages are getting nice and crispy I think it's time we're going to add two bay leaf boom we're going to add our CR brush Tomatoes we're going to add Our tomato puree just let that cook for a minute look at this space now oh mama I loveing like the hottest places in the world for making stuff like gumba like first time I went to Texas it was like the hottest place ever I'm like so you guys figured out to just start a giant fire and smoke large pieces of beef now we're going to add our chicken stock it's hot as [ __ ] you know what I want to eat when it's hot as [ __ ] out ice cubes so I want to what I want to do is bring it up to a boil so then that does its work and then we'll know the real consistency of this soup ice cubes like maybe like a a nice chilled soup I got my sausages now oh yeah you guys are drinking sweet tea and giant pieces of brisket you ever been to Louisiana it's hot wow and it's humid let's just do a little salt action here I'm going to do some fresh crack couple poles you know what's good for that jumbalaya gumbo what's the other one ATU feay you guys just like hot stuff we're going to come together cuz it's always nice to come together you guys like hot stuff on Rice don't be a selfish gumbo maker you walk outside of a hotel in Louisiana and summer you walk out I'm wet I'm dripping I'm a human swimming pool always come together we're going to put the lid on we're going to reduce the Heat and we're going to come together on this one we're back look at this are you kidding me right now do you see that this gumbo looks like gravy you see that look at that let's finish up the gumball we got one lb peeled no tail no nothing [ __ ] [ __ ] bag shrimp take those throw those in there boom he give that a stir those cook in 30 seconds okay we're going to slice up the gumbo slice them up we need the gumbo okra even though I dislike it maybe I'll like it I need to open my mind okay put that in there that sticky it's like bugs so we're going to add 1 tbspoon of fil boom give this a stir oh mama and that feel like gives it it's almost like corn starch okay I'm going to put the lid on this for a second I want to get my rice ready you know these little containers these are perfect I want to make some rice we got some cooked rice this going to be like day old rice so I'm going to pack it in there you go see o this is looking good I'm excited about this we got like a beautiful uh like a cup of like just cooked crab some lump crab I like a gumbo with crab in it okay shoot me let's do like a nice 5 minute we're going to go piss hey everybody come get your gumass so you got your rice you got a beautiful gumb this look at this I think this is the first time I tried to make gumbo where I tried to actually make gumbo and I didn't do any twists or turns or like any stupid cheffy [ __ ] I don't think maybe you're going to say you're an idiot and you're wrong and you ruined it I didn't mean to before I even taste I'm just going to do a little couple of little luggies okay here we go M mhm this is fire okay we're just good here we're just good good gumbo my dad used to make gumbo no disrespect it was not this good I was bullying okra and now I know okra there's the perfect bite little everything I got the everything on and I'm like okra is nice what are you doing Maddie it's not [ __ ] and snotty although it is y'all are eating just [ __ ] [ __ ] [ __ ] vegetables eating [ __ ] fine got check your oil every once in a while you know have a great day I'm Maddie mat fill up at the nearest combo station have a great [Music] day it's all I got left see this this is my life you
