how I see it going down all right the frame flowers to the right okay mountain peaks in the back I don't know if you guys picked that up but this is uh hey guys today I'm going places we're down here on the Big Island of Hawaii we're gonna team up with some friends do a little archery hunting for some wild boar got my Pig shirt on you know if we get anything we're gonna celebrate that animal in a traditional fashion and couldn't be more excited to learn about that dive into their culture and let's get started [Music] [Applause] [Music] [Music] this little ravine kind of bring out things about us [Music] oh yeah [Music] [Music] sometimes hunting isn't successful tell us why we set traps I understand and I noticed we were walking in these pigs come in and they start rooting around and it looked like they were just tearing up all the grass yeah big-time over here they're invasive you know they tear up the land for one they just unroot everything and just with a little bit of rains and i just washes down goes into the rear buries gets into the ocean and you know kills it reef right they just in there I'm guessing they don't really have any predators other than people here huh no not really throws the balance off exactly and just like everything else you know that's not native has to be managed we brought the pigs here as humans we have to manage them you know culturally it's a big part of people from Hawaii I mean at any given luau or a birthday party or wedding we're helping out the environment we're helping out the community and we get to feed ourselves you know and culturally at the end of the day that makes everybody happy yeah there's a role at that mug book we got a little plan B we set a trap a couple of days ago and fingers crossed we'll have something inside did you hear the pig run away whoa you're doing I swear to God and you're doing your intro like just youth we're like oh I just kind of wish you guys kept that one do something great have you seen this you know this is sleeping grass whoa whoa we got our sow in the pen here mm-hmm it seems like it's gonna be quite the adventure getting this animal out little whitetail yeah that was the size the one that was sneaking up on us and we are doing the intro huh I think that that one could have ate this one no so what we're gonna do is is lasso her and real pretty soon as you grab her as humanely as we can harvester yep basically slide a knife in and cut her heart yeah you got it yeah there go there you go that's the beauty of archery hunting is this happens but you don't see it happen right you walk up when it's already it is done yep you go to the store you get a pig in a slaughterhouse it's not a prettier game you know this pig's life was outside it was wild you know how to take a wild life for five minutes then it being in a in a food farm you a pig lived a pig life exactly you guys are the real deal man without an experience before I'd say so did the harvesting and feel really good about it we're gonna head over to the EMU spot prep this pig and get it in the ground we'll celebrate her tomorrow all right pig showed up how's it place so now we're we're at the EMU spot and I'm uh teamed up here with Saul tell me a little bit about what we're what we're getting involved in here what we're doing so we're gonna cook the pig in the ground yeah we do it for like pretty much every you know every first birthday or oh cool weddings any kind of celebration you know do the e/m was one of the easiest ways to cook the food we heat up a bunch of Emirati we used we cover it with layers of banana stomp banana leaf and we use the heat from the rocks to cook the pig you got the palate down there and yeah it's tart stuck in the wood off of that and then the rock goes on the wood as the fire burns down it's gonna heat all these rocks and drop down on the coals I just love how all of this is it's easy to just throw it in the gas or electric oven or something you know but it's just a whole new layer special you know yeah and I got asked a couple times like what's your favorite Hawaiian food and it's the food is great but it's the preparation it's everybody's hands like it's the ritual yeah you know it's that cultural affect my cultural past 9 absolutely spare with everything I mean look at how much people have put together this evening you got seven different families here right that's the beauty of of the Hawaiian Ohana it really yeah the Ohana it so really is just a celebration you know a family and and love you know exactly well little too many effects cool so now what's next we're gonna let this burn down and yeah so you can see it's burning yeah like the back of my legs so yeah we're gonna let this fire burn down let them stones get red-hot that's gonna be our heat source for the cook and I in the meantime we're gonna go clean up this pig that we harvested and get it all set up ready for for the EMU since she's a nice healthy people gonna take our time and try and get as much of the fat off okay meat as possible yeah every step is just layered with respect exactly yeah I'm gonna skin down and I'm gonna take it off at the hip and then we'll have one whole roast put in so what you're gonna do is use the tip right mm-hm angle it up and then a little bit to shell and you're gonna go use the skin and you're gonna use that as your guide actually you don't want to cut the hair because if you cut the hair you see how there's all the loose hairs okay so if you cut from the inside out well just like anything else you know the more you do it the better you get is it lunch all right camera guys you complain there all day you know people here when you go to like a supermarket and you get like that you know just just that BES pork and it's like bone white you know I mean this isn't definitely not way it's almost like it's like a red meat you know and that's uh that's always a good sign in my book you know we're social support yeah of course we're done breaking down down the pig you guys are laying it out on the banana leaves what are we getting into we're gonna try and pick off all of the the black hairs okay in there from what I was butchering uh I didn't want to see we're gonna try and clean it up as best as we can I see you cutting slits in Airway just to open it up get the salt in yeah and just to help it cook evenly a little bit okay cool it seems like we're gonna probably need some more banana leaves huh I would think so man we're gonna need as much of that moisture from the banana as possible right right all right cool well why don't I go work on that you guys salt up the pork huh Coco oh yeah it's so awesome that you have kind of everything you need to pull this off is just like on the property it's you know it's a it's a part of nature surround them yeah yeah well the good thing about you know living in a place that we do is this stuff grows abundant right and the thing with like banana you cut it down it you it'll grow out of the same stock same thing with tea leaf oh yeah so so I noticed this little look caged bill here yeah makeshift basket for our food which is chicken wire rebar chicken wire rebar line it with this banana leaf yeah we got our Hawaiian blanket on in there my blanket and then what what's next with you Tea Leaf yeah we can put some tea leaf in there cool sure beats tinfoil yeah yeah we pretty much butchered that pig up and kind of just cut it into like primal cuts yeah little bit everything ya nothin goes away so and I first spread them too wide because we wanted that's how he concentrated there you go pace yourself you're gonna be or watch me work supervise it yeah yeah don't worry you ain't next okay that's good let's get our meat on there step it over follow me yep yeah I go up you go down yeah let's see already came yeah let's go listen put the pans in it cool you ready for the pans perfect I like the teamwork we gotta get to know steam is coming up [Applause] you guys down ya know art art and over everything and then though we start shoveling man I just love how much how we all get involved you know it's the community it's it's the people you're doing it with you know the food's almost a byproduct of what you're doing [Applause] ah you will let this cook overnight we'll come back tomorrow and yeah there's a real good chance this pigs gonna be perfectly cooked huh [Music] hey guys day 2 of the EMU here pigs been cooking overnight you could see that before when it was all puffed up with the theme it all kind of sunk down now sauce a and that's a good thing so I'm guessing some of that vegetation kind of what kind of like wilted down steam kind of collapsed yeah exactly is that a sign of like it's kind of done we left it overnight so it should be done what we're gonna do is because dirt is a commodity here sure he got it right so we're gonna take this tart and we're gonna try and keep the dirt oh absolutely one place because we don't want it to lose because without dirt we can't do it again and hopefully as soon as you start peeling off that a burlap bag and all that sense we'll just taste that your nose before your mom any time so here we go ass get going let's do it well the reason that dirt is such a commodity is we're on a volcano right right run rocks so if you go 20 miles that way it's all lava rock digging down in the dirt is huge that's why this side look at the the plant all the vegetation here and that just happened for over time you know thousands of years of vegetation decomposing and that kind of ties in to like what you were saying yesterday with the borer how they kind of just root around what took you know millenniums to create just washes away so got to keep them pigs in check you know oh yeah keep them in check by putting them in the ground okay put him in the belly yeah well I mean you can see these they've lost that like fresh veget all kind of sponging this they had to hide out this pigs gonna be dry I'll tell you that so Hein legend has a legend of hollow which is the legend of the first Hawaiian okay and the first one you know mother father sky mother had a baby and the first baby was so badly deformed okay came up as a bulb so they buried it and mother cried over the gravesite okay and out came a taro plant then father sky mother had another baby and they came that one Hollow which is the first hole I am and the relationship is you take care of the land the land takes care of you right basically you treated like family I wish more people lived by that philosophy now you know and I think that's from growing up on an island sure Ellen is you have to be societal where you going you ain't going in the next a surfboard you're gonna come right back to where you started it smells so good in celebration of the pig celebration with everybody grab a hand thank Linc Linc oh we're gonna let this cool down a little bit shred it up a little and then we're we're gonna have a celebration and a feast here I mean even though we didn't end up getting one with the bow it was a hell of an experience doing it the other way too and no hang out you guys and can I just want to be able to show that it wasn't just you know me and you know in three of us but it was it was a collection of the whole family you know roll the clip I'm confused cue the video to
