welcome back to little pig BBQ this is your first time stopping by please hit that subscribe button below give me a thumbs up and leave me a comment and let me know what you think so it is beautiful outside here in Kentucky today it's 70 degrees really nice so I was craving chicken wings today so I've got four pounds of chicken wings that I'm about to get seasoned up and I'm gonna get the weber kettle fired up and we're gonna hit these with some good smoke using my vortex today vortex it's gonna get these wings nice and crispy and when I get them in the house and I'm gonna saw some in homemade bourbon buffalo sauce it's gonna be really good really spicy but it's also gonna have some sweet elements to it so stick around and check these wings out because you're not going to want to miss it okay so here are the wings there's nothing fancy about these they are actually frozen out of a bag so what I did to prep these pull them out of the freezer let them defrost in the refrigerator for about a day or two and then I drop them off very good so there's no moisture on these wings at all that's gonna really help with the skin get that get the skin nice and crispy to season these we're gonna use Kosmos honey killer bee that's gonna give it a nice sweet element that's gonna complement the buffalo sauce that we're gonna put on these at the end so let's get these seasoned up [Music] and that's it on these wings we got a good dose of seasoning arm and nothing crazy I didn't go super heavy because again you want the flavor of the sauce at the end to complement the rub you don't want too much rub on these we're going to get out to the grill I'm gonna let these hang out for 20-30 minutes in the refrigerator let this rub kind of penetrate a little bit and where I get the kettle fired up and again we're using the vortex probably my favorite way to cook Ling's I think it does the best job of getting that skin nice and crispy let's get out to the grill and get the grill fired up [Music] [Music] [Music] all right we're out here at the brew let's get these wings on temperature on the grills pegged out at about 600 degrees again we're doing these indirect on the vortex so they're gonna be really nice and crispy the color of these really good that Kosmos cue honey killer bee rub is really good stuff you should try it out I'll put a link in the in the description good and the good thing about this vortex is a four pound bag of wings is the perfect amount on a 22 inch kettle as you can see I've got it packed pretty tight and everything fits really nicely last thing we're gonna do is we're gonna put one chunk of cherry wood right in the center there that's gonna give us some good smoke so we're gonna check on these in about 30 minutes and see what they look like all right let's let's get these things flipped it's been about 30 minutes oh man these things already look good get them flipped over here so we get that good crispy nice golden color on both sides the tops are already looking really good this cherry smoke smells amazing I can't wait for these to be finished the temperature of the kettle's around 500 degrees but on the outer edge it's probably somewhere between 3 and 350 I would say so you got a nice indirect cook going almost there all right we'll get it closed back up it's gonna be about another 30 minutes and we still have plenty of wood so it's still smoking nice so we'll check back in about 30 minutes and they should be done [Music] let's open up it's been about an hour you can see the color on these are really nice so I'm gonna check the temp wine and see see if they're finished which I know they are and I'm shooting for around 185 190 on chicken wings you can take them all the way up to 200 and they're just fine these are coming up at about 190 so I'm gonna call these done I'll pull them off and we'll get them in the house and get them tossed in that sauce that way here they are let's take a look at these wings the skin turned out really nice really good color they smell amazing so you could serve these just like this with no sauce at all but I'm gonna take about half of them and get them tossed in the sauce that we made so let's do that real quick and put some out on the on a cutting board and see what they look like okay I got about half of the wings separated out on the cutting board and I'm gonna take the other half and toss them in the sauce that we made first thing I'm gonna do is just put five or six in here just grab a couple you don't want to put too many because you want the sauce to get evenly coated run through six burgers now I'm having a sauce simmering stove on low and it doesn't take much you're just gonna barely drizzle a little on there just like that we're going to give it a good toss be good get these plated on the other side of the board now the sauce really puts a nice color on these wings so we're gonna get the rest up and tossed these are a little smaller Russian ability get all these in that's perfect so let's get these on here we'll get a close-up of it so you can see the color of the sauce man they smell good you really smell the Bourbon too that's one thing that I really like about this sauce wait let's get you in here so you can take a look there we are we've got no sauce we got sauce they both look and smell amazing the ones with just the rub they're gonna be sweet there's no heat really again we use the Kosmos cue honey killer bee so they're gonna be really nice and sweet something that everybody can enjoy and then these they're gonna have a little bit of heat to them because we added some hot sauce we added some red pepper to the to the sauce that we made but it also does have some sweet elements got honey plus the rub that we used so these are going to turn out awesome I know they're gonna be good so I'm gonna I'm gonna bite into one and see see how we did try wine with with no sauce on it first so you definitely taste the the sweet rub on this and that cherry wood complements it nicely skin is perfectly bite bird this is exactly why I love using the vortex for wings I'd give these a 10 out of 10 so let's let's dig in one of these with sauce this is what I'm really interested in really nice and sticky got a nice color well if you can see the color on these but they look really really good so we'll try this out this sauce is really good and if you want more heat just add a little bit more hot sauce to it or even some more red pepper but I like the balance of sweet and high so to me these are really good I also give these a 10 out of 10 so if you're in the mood for wings get you a bag of frozen wings or good fresh wings these are convenient they were in my freezer again I'm still trying to use up stuff that's in my freezer so these wings turned out amazing the the rub was perfect the sauce is perfect good cherry smoke you can't beat vortex wings the vortex puts out amazing chicken wings if you don't have a vortex and you have a kettle I highly suggest you get a vortex I'll put a link to that in the description box I really appreciate you on stopping by if you like the recipe give me a thumbs up
