would you rather have homemade blueberry buttermilk pancakes made from scratch or a sardine omelette I thought so we'll make a pancakes all right it's so easy to make blueberry pancakes from scratch almost as easy as opening a box so alright here's the recipe it's 1 cup of flour now I'm using all-purpose right here but you can do half all-purpose and half whole wheat pastry flour with this it's going to be 1 teaspoon of baking powder leveled off just like that ok and 1/2 teaspoon of baking soda the soda reacts with the buttermilk and makes the pancakes nice and fluffy okay and just a dash of salt 1 dash just like that alright you mix up your dry ingredients just a little and now we're going to add the buttermilk mixture I have 1 cup of low-fat buttermilk right here and to that we're going to add 1 egg and 2 tablespoons of oil now I'm using canola oil but you can use whatever oil you choose to use 2 tablespoons of oil you just mix that up a little bit make sure the yolk is broken and it's mixed up did I get it okay there it is and then you pour this all at once into your dry ingredients and I just mix it up now the key to good pancakes the good blueberry pancakes or good buttermilk pancakes even if they're playing because these are really good just plain is not to overmix you just mix it until it's barely mixed and when you're doing blueberries you actually leave it with just some of the flour just like it is there you leave it like that and then you add the berries now I have 1 cup of fresh blueberries here now here's the thing I know they can be expensive when they're in season you do blueberries if you if you have to fill out a loan application to buy blueberries you can do the same thing with diced Apple very very good with diced apples but here is one cup of inspected you got to check them over make sure they're all good inspected blueberries and going in the mix and then you just mix that up and that finishes up any little bit of leftover pieces of flour and even if there's some lumps that's perfect look at this this is perfect right here don't mix it any more than that and they're ready to go now all I'm going to do is move things over with the griddle out here and we're making pancakes okay here's my pancake griddle it's already preheated up to 375 if you're using a pan you use a very large pan and about medium-high and if you're not sure if the pans ready you can just test it with a little water if you sprinkle some water on and it sizzles like that it's ready now a non-stick pan doesn't require any oil or butter or anything if you want to the very least I would wouldn't do any more than this is just take a stick of butter and just rub it like that on the griddle that's all if you want to you can do that or you can also do it without anything at all now this is it you're gonna put the pancakes on the griddle just like this here's one oh my god all right and two this is probably gonna make six and we get a little bit more in this one and three they're gonna spread out a little bit and four and five and six okay get the rest of the batter right here you can just divide it between wherever they need it now you can hear the sizzle and what I do at this point too is I look and see if the if the blueberries plopped up evenly if they didn't you can actually move some over I just moved one over there like this you know that's pretty good right here I'll see all the blueberries right here over on the side you can just to even it out so you get blueberries in every bite you just move them like that okay all right so they're gonna cook for about two maybe two to three minutes on each side so I'll be back into just a couple minutes and we'll check the bottoms and we'll flip them over and they're done okay they're sizzling away that's time to check it's been maybe two two-and-a-half three minutes you just kind of peek under one like that you just flip it see it's nice and gold and brown looking so they're ready to go and flipping pancakes you have to just trust yourself and get the biggest spatula you have just get under there and do it fast and do the best you can if they're touching you can move them after they've cooked a little bit here comes the next one do it fast get under there and just flip there next one oh look at that and the last one okay now you can't see there's no way you can make this that's not from scratch it's just amazing nothing out of a box would ever come like this all right so the blueberries are pretty well distributed now we're gonna now that it's cooked for just a little bit you can probably move it yeah there you can move it away so they're not touching about another two minutes on that side and they're all done so I'll be back it's been about two minutes to two and a half minutes and once the edges are dry like this you can see that means the pancakes are done so it's time to take them off the griddle and you just lift look at this this is such a treat there's two three and four this is big look at that it's a big stack four and five can I do it and six yikes there there is the most awesome blueberry pancakes you could ever have they'll give you lots of energy to do whatever it is you want to do on a Sunday morning I'm not here to judge
