[Music] hello this is Chef John from foodwishes.com with beef aou that's right you can't have roast beef or prime rib without a nice boiling hot ramkin of beef aou next to it so no matter what method you use you are going to have something that looks like that a roast and a pan that has a bunch of drippings in it now it's very important you use a heat proof flame proof roasting pan to do your beef that way this can go right onto the stove to make the aou I'm using a cast iron glazed roasting pan here just plain cast iron works great just metal works great but something high quality something you can put right on the flame after it comes out of the oven okay so step one here we're going to pour off most of the fat we're going to leave about a/4 cup of the fat along with all those wonderful meat juices AKA drippin we're going to place it over medium high heat and I'm going to sprinkle in a little bit of flour now this is not a thick gravy okay so I'm only going to put in here maybe a rounded tablespoon maybe a tablespoon and a half I'm going to guess why didn't I measure cuz I don't have to and it's no fun so you're going to continue to cook that flour whisking making sure all the caramelization comes off the bottom you know we call that the fond all right so we want to get every Speck of that brown caramelized meat juice off the bottom and by cooking the flour in the fat we're taking away any of that raw pasty flour taste all right so after 3 minutes it's going to look like that so I'm going to drizzle in a couple cups of cold old beef broth by the way most butcher shops will sell a very nice quality beef broth or beef stock do not use bullion cubes there are many nice allnatural commercial bras available once the stock is in I'm going to raise this to high heat bring it to a boil and as soon as it boils you pretty much are ready all right so you can serve this right away as soon as it comes to a boil it will be thin like a traditional aou if you reduce it for about 5 minutes it will look like this slightly thickened which is sort of how I prefer it of course you're going to taste here for salt depending on how your beef was seasoned you may or may not need to add a little bit and that's it now one tip here don't worry about skimming off the fat from the top there won't be that much and if you see this shot here in the ramkin that thin thin layer of fat is going to insulate this aou and keep it really super hot your medium rare roast beef or prime rib is not going to be piping hot it's just going to be warm so very important you have hot hot aou next to it and that little bit of layer of Fat's going to help now I'm very very sad I don't have any shots of me dipping the beef in the hot aou and all I have is this stupid little thing here look that's it a couple seconds of a dripping bite of beef my camera ran out of batteries and I screwed up the last shot anyway you get the idea it's really delicious and so easy takes about 10 minutes start to finish and speaking of simple and easy the flavor profile here is not supposed to be complicated it's supposed to be a simple beef panju or juice so don't load it up with a bunch of herbs and garlic and hot pepper and stuff this just not really what this is about all right and that's it all the ingredients are on the site so go check it out and as always enjoy
