[Music] hi I'm Stephanie Gosk of joy baking calm today we're going to make a banana bread and this is what it looks like this bread when it's first baked the outside crust is wonderfully crisps inside its moist and sweet with the flavor of bananas and some ground cinnamon and then you've got a little bit of crunch from some chopped nuts so the first thing you will need to do is to pre-heat your oven to 350 degrees Fahrenheit which is 180 degrees Celsius and then you will need a loaf pan now you could just spray the inside of your pan with one of those nonstick cooking sprays what I'm gonna do is I'm gonna butter my pan so what I did is I just melted a little bit of butter and then with a pastry brush I'm just kind of brush the inside make sure you get those corners you don't want the bread sticking there okay and then I like to put a little piece of parchment paper in the bottom of the pan that way we make sure our bread doesn't stick there so banana bread is a quick bread quick to make I'm not using a mixer here I'm gonna do it by hand so in a large bowl we're gonna put the dry ingredients so I have one in three-quarter cups which is 225 grams of all-purpose flour you may know that is plain flour to that I'm going to add 3/4 of a cup 150 grams of granulated white sugar and then I'm going to add one teaspoon four grams of baking powder 1/4 of a teaspoon 1 gram of baking soda and then a quarter of a teaspoon one gram of salt and then I'm adding one teaspoon of ground cinnamon I really like when I make a banana bread to have that ground cinnamon one it adds a nice warm flavor and it also it's what gives our banana bread that nice kind of golden brown color now if you would prefer if you don't like cinnamon there you don't like it with you your banana you could leave it out although if you've never tried it please try it it really is good and then I'm going to add one cup which is 120 grams of chopped nuts now for this I'm using pecans you may say pecans you could use walnuts I think hazelnuts would be good I've tried that now I've never tried almonds but I think you could use that as well and all just a little sigh now if you kind of wanted chocolate chips in your banana bread what you could do is replace some or all of your chopped nuts with chocolate chips white chocolate chips is good or dark or butterscotch whatever you like so I just gotta mix that in like so and that's our dry ingredients I'm just gonna make a little well in the center and that's where I'm gonna put the wet ingredients once I'd mix those so um it for our wet I have a large bowl I have you will need one and a half cups which is 360 milliliters or if you want to go by weight 375 grams of mashed bananas and that would be about three large when you go to a grocery store and now when you go to the grocery store to buy your bananas typically they're bright yellow and they're quite firm which is fine if you just want to eat it for baking we want to let them sit on the counter a few days until if you see these they get like if you feel it it's soft and it's got all these brown spots which is what you want and then it's kind of and then if you peel you will even notice brown spots on the banana and they're nice and soft so that's what that's what you want now when I went of course I have an extra one don't throw this away what you can do is if you know you say don't eat your bananas and you have some but not enough to make a banana bread just peel it put in a freezer bag and throw it into your freezer and then when you have three bananas then you can make another banana bread so don't waste and then what I like to do is just take a fork and just because they're soft you can easily mash them I know some people say oh I want to do this step and a blender or a food processor you know I don't want to stand here mashing you could do that but be very careful because you can process those bananas so quickly and then they become like water which is not what we want we want to kind of thick like this and a few chunks in there is absolutely fine so once you do that now in another bowl I have two large eggs that would be a hundred grams of eggs and they're at room temperature and I'm just going to whisk this okay and then I'm just going to add in get all that and then for some flavoring I'm adding 1 teaspoon four grams of pure vanilla extract if you don't want the vanilla flavor just leave it out and a half a cup 113 grams of melted butter I'm using unsalted here I prefer the flavor and I like to regulate the salt in my recipe but if you have a favorite salted butter go ahead and use that if you do use salted then I would leave out that quarter teaspoon one gram of salt that I added in the dry ingredients so when you melt your butter let it cool down to you know room temperature before you add it you don't want to scramble our eggs and just whisk all that together okay simple enough and then it's going to pour that into the center and then we're just gonna mix everything together I'd like to do this by hand because when you're doing your mixing a quick bread it's important you only mix everything until all the dry ingredients are moistened you don't want to over mix because then you know your bread or muffins or whatever will be a little tough and we don't want that just scrape around and just make sure get to the bottom of the bowl you don't want any flour under there that's why it's good to use a like a wide like this bowl that's a lot easier to mix so we're done and just pour it in there yeah and then just level the top so now for baking everyone's oven is a little different and your pan may be a little different than mine so I'm gonna say 62 could be as much as 70 minutes so what's going to happen it's going to rise it's going to turn a beautiful golden brown you won't get a split down the your bread so don't panic if it you know separates that's perfectly normal and then what you want is the toothpick inserted into the center will come out clean so I'm going to say between 60 to 70 minutes so our banana bread is done so put your pan on a wire rack doesn't that look gorgeous beautiful golden brown now if in Europe and if you found that the top of your bread was over browning and yet it wasn't when you put the toothpick in it was still a little moist then you could cover it with a little bit of foil the top so that doesn't Brown anymore so what you want to do see it rises a toothpick inserted into the center came out clean so what I'm gonna do is just let it cool in the pan for about 10 minutes and when we come back we will take it over the pan so to take our banana bread over the pan first what I like to do is just take take a knife or I've got a offset spatula just run along sure it's not sticking still hot so then just peel that parchment off and then put a right side up so now I'm just gonna let this cool down to room temperature and then when we come back we will cut a slice so now we're ready to cut our bread so put it on a cutting board and oh so there we have it you can see you can see the flecks of the chopped pecans there and little pieces of banana so when I cut Oh smell that banana it's very good spread with some butter but I won't do that today when this bread is freshly baked the outside crust is really nice and crisp now that if once you cover and store it like overnight you will find that that crust softens but first date nice and crisp and you know you can really taste that sweet flavor of the banana it really comes through and I like the crunch of the pecan so that kind of adds a nice texture it's a very moist bread it really is good a great way to use up ripe bananas or I always just go and buy them just to make the banana bread so
