Best (and Easiest) Banana Bread

hey youtubers welcome back to desert half a garden I am back in the kitchen today and I want to share with you another recipe and I call this recipe best banana bread and I think you'll agree with me it's simple it has all the delicious moistness that you expect in a banana bread it has a crisp caramelizing on the outer crust and it is just super easy to make no weird or exotic ingredients but do you ever have these guys hanging around your kitchen some bananas that are a little bit too ripe and nobody wants to eat them well I can tell you as soon as there's even one freckle on them my daughter won't even think about eating them so we have some super ripe bananas here and I hear that this is when you're actually supposed to eat them when they're like black is when they have the most health benefits of all but nobody's going to eat them just like they are so we have to make them into something else and right now I don't want to waste anything especially fresh produce I don't want to go to the grocery store more than necessary and so we're going to put these to use and not waste I'm going to show you my super simple banana bread recipe let's get started the first thing to do is to immediately pre-heat your oven to 350 degrees because this is a quick bread it will be made quickly so you want to get that oven nice and warm and additionally I like to put a pizza stone on the oven rack in order to keep the bottom of the bread from browning too quickly or getting burnt so those are two things you want to do to get started with your oven preheating next you'll want to prepare your bread pan and for this I use a glass bread pan and this is a little bit smaller size I believe it's 8 by 3 or 8 by 4 inch size it's smaller than what I use for a regular loaf of bread and I take a little gob of butter onto a napkin you can do it straight on your hand either way and just smear it all around and get it nice and greased up so that you don't have any issues with the bread sticking to the pan when you're finished a bread pan is prepared let's move on to our ingredients in order to get our bananas ready for the recipe you will want to crush them and there's no better way to explain this other than to just go out it with a fork and smash them into a bowl so you can see this is super ripe and falling apart you just take the peels off and put them into a bowl so using that fork we just mash them all up in there click that bowl aside and next we will mix our dry ingredients I use a separate Bowl for the dry ingredients and here we will have one-and-a-half cups of all-purpose flour I'm using a half cup measurement there so I used three of those and next comes in 1 teaspoon of baking soda there we go one teaspoon of baking soda and 1/2 teaspoon of salt using a fork actually you can just use a whisk or a fork we're going to be using a whisk in a second so you might as well use a whisk just go ahead and mix those ingredients together so that you don't get any spots in your bread that have a really salty spot or baking soda kind of has that same salty flavor to it as well and you don't want little patches of that alright set that aside and next we will cream together our butter and sugar now I have cringed together the butter and sugar so it was a half cup of unsalted butter and one cup of sugar and you can see it's creamed together there the lighting it's kind of weird on that there but you can do it by hand but by golly that's not something I'm interested in doing and next we want to put in eggs - Eggs and really using a mixer makes it a whole lot easier and the same thing can be achieved with a hand mixer one of those handheld jobs ok these happen to be duck eggs that a girlfriend gave me so they're a little bit on the big side but it still works just fine so you give it a couple mixes around with the eggs in there now they are incorporated tilt it up for you to view and in goes with banana next when I ask the banana I also add one teaspoon of vanilla and go ahead and mix that up well [Music] doesn't take long but you may want to straight down just to make sure that everything is getting incorporated on the bottom it looks like I have some of the sugar butter mixture that's stuck separately there's a couple chunks of banana there and that's okay that just adds to little sweet passages within the mix and now we will begin to add the flour so I like to add half approximately and mix it and then I will add the other half it goes the second half of the flour mixture try not to make a mess like me you really don't want to overmix this so we'll just allow that to be good enough except that I will go back with my spatula and mix in the extra little bits that were stuck to the side of the bowl if your kids like to lick beaters this is a good opportunity for that I don't know about you guys I grew up on licking beaters eggs and all I made it so here I just mix in that last a little bit of flour and that is all it takes for your banana bread and it is going to go into your greased bread pan and pour it right in there but here is where you have the opportunity to add a little something special if you like walnuts add in a cup of walnuts if you want to make it more like a dessert bread add in a cup of chocolate chips and to me banana bread is already so sweet that I like to add the chocolate chips in order to make it really special so about a cup you can even do less if you prefer but a cup will make it super nice and chocolaty and those you just stir right in now we're ready to go into our pan let's pour the batter right into the bread pan using the spatula level it out a little bit and wipe off the excess batter now it's ready to go into the of it now you have your loaf ready to go into the oven make sure you have your pizza stone in the oven ready to go already preheated with the oven that will keep the bottom of the bread from burning and we will put this in for 55 minutes I'll check back with you in almost an hour after 55 minutes my oven begins to beep at me and we need to check this banana bread a little bit of steam there on the camera the bread is looking really nice but I can see it jiggling as I'm pulling it towards me so I can already tell it's going to need more time the toothpick test is where you insert a toothpick and see if it comes out clean and look how gooey that is this guy totally needs some more time so I'm going to give it 7 more minutes to start with and we'll check again and see how it's doing now we're looking much better let's give it a try with the toothpick and so it looks like it came out clean we're going to call that finished and this ended up taking a total of 15 more minutes so an hour and 10 minutes beak and I suspect that is largely because I used those duck eggs in the recipe and duck eggs are so much bigger than the chicken eggs I normally use which are usually a size large chicken egg so here is our banana bread all baked and ready looking beautiful and we will allow it to cool a bit before I go ahead and slice into it our loaf of banana bread has cooled off a bit and I was able to easily remove it from the pan because it had been greased and so it just slid right out when I turned it upside down and set it here banana bread does not have to be completely cooled in order to cut into it feel free to slice into it right away and have a little taste for this one I don't need any taste testers because banana bread is definitely my number all right I'm going to show it to you so you see lots of chocolate chips in there and it has a nice crisp golden crust that is super tasty my outside got a little bit darker than I would like but that was definitely because of the added moisture from the deck eggs so if you're going to use extra-large eggs like a duck egg compensate with a couple tablespoons of extra flour in there or just stick with the regular size large eggs so here goes mm-hmm that's the good stuff so I love banana bread just the way it is you can also spread on some butter you can toast you in the morning put peanut butter on it it's super awesome no matter what you do I hope you guys
