if you wish to master the art of amish and mennonite cooking there is one ingredient you simply must always always have on hand it goes in everything on everything over everything you simply can't live without it there's nothing like butter to bring out the taste of your favorite foods there's butter and there is no other only butter not buy all that butter that was just for the video however butter is a big staple in traditional amish mennonite cooking you melt it you brown it you pour it over you bake it in it's a staple and it kind of explains why some of us struggle with weight a little bit maybe anyway i've gotten a lot of requests to make some cooking videos especially now that i have my new kitchen i want to do that in this video i'm going to be making three different meals over this week i am going to be referencing out of different cookbooks that i would highly recommend there's gonna be a link below there's a lady that has a website with a lot of amish and mennonite cookbooks and also cookbooks that are staples in the amish mennonite homes so the first meal i'm gonna be starting with is a very very traditional mennonite amish kind of old school style cooking i don't cook this way normally at all i wanted to do it for the sake of the video and then we're going to go into more my style of cooking in the next meal and then some other quick recipes and so on so when it comes to kind of traditional amish style cooking it's very much centered around meat and potatoes and i would say this is very much a meat and potatoes type of cookbook pun intended and what i mean by that when people say you know let's get to the meat and potatoes of the subject this is very much your core foundational type style recipes so if you like kind of tried and true recipes sort of the old traditional style meals this cookbook would be great for you it's got tons of recipes from meat side dishes desserts and so on and i believe it's a pretty popular cookbook among mennonites so i'm going to take kind of a traditional style meal and really ramp it up to like what even pa style cooking is like for instance buttered noodles is such a thing here in pa at least among the old school style and something i didn't really grow up making but i decided to make it tonight just for kicks and giggles so there's lots of fats and carbs and it's not really a healthy mixture of food per se and so we tend to not cook like this terribly much we do like to have our meats and our vegetables but we try to stick a little bit more whole food style so for the menu tonight i'm gonna be having sliced cheesy potatoes you have to have cheese and butter and all kinds of things on your carbs [Laughter] we're gonna be making poppy seed chicken now this is deviating a little bit away from like the really traditional style cooking because often this would include like meatloaf or meatballs or something down like that sort however i wasn't really into that tonight and the poppy seed chicken recipe is one that i love so we're gonna be making that one and then we'll have a side dish of peas i think i'm gonna try it peas in like a cream sauce that's pretty uh popular as well and then i'm gonna add like the buttered noodles which is such a random dish so once again i'm gonna have these recipes over on my blog you can go to the link below find the recipes there and also you can get your own cookbooks like i said before in the link below all the cookbooks i'm using you can find there and i would highly recommend checking them out so i'm starting with the sliced cheesy potatoes first which are on page 323 in the abc cookbook the recipe calls for six medium potatoes i usually adjust this if i think i need more or less we like having the skins on our potatoes so i simply wash and slice and put them in a dish now this recipe is so easy you really don't need the measurements however it calls for three tablespoons butter melted and forget the butter that you pour over the potatoes and then you sprinkle with half a teaspoon of salt eight teaspoon garlic powder 8 teaspoon black pepper and 8 to a 4 teaspoon nature seasoning or your choice of blended seasoning really there's no need to measure this out just sprinkle over the top of the potatoes to your liking cover the dish and pop the potatoes into the oven at 350 for 45 minutes once your 45 minutes are up uncover and sprinkle with one cup of grated cheese and then pop it back into the oven for an additional 15 minutes this recipe is delicious but i will admit it's not so great for the waistline all right next up poppy seed chicken super easy recipe the poppy seed and chicken recipe is on page 347 and this is to be served over rice however i'm not doing that today you need two cups of chicken already cooked now the recipe has you chunking the chicken and mixing it with a sauce however i simply slice mine and pour the sauce over the top for the sauce you mix together two cans of cream of chicken soup one eight ounce sour cream one teaspoon poppy seed and a fourth of cup butter melted i just pour that over the chicken and then add half a cup crushed ritz crackers to the top bake this at 30 to 40 minutes and this would definitely pair better with rice rather than potatoes but for the sake of making more amish style recipes we are sticking with the potatoes as a side so for buttered noodles i've actually never made these before i've had them before you can look them up online it's called amish buttered noodles first off we're going to melt the butter in a small saucepan and simmer it until the butter is kind of brown and foamy and with little brown bits in it so basically just browning your butter and then we're going to add chicken broth and boil into the pan bring to a boil and stir in the egg noodles and bring to a second boil and then cover and turn off the heat and let it sit for about 30 minutes i brought them to a boil for the second time after the noodles are in now we're just supposed to cover it and stir occasionally for the next 30 minutes and turn off the burner by the way um so now off to the peas the recipe i used for the cream peas had you make the cream sauce and then add the frozen peas however i think it would be better to cook the peas separately then add them to the sauce as the frozen peas caused the sauce to get cold and thicken and thus it was burning easier at the bottom of the pan before the peas could thaw for the sake of time i'm going to skip going over the recipe here and you can just check it out on my blog [Music] okay what chicken and this is potatoes chicken potato dad could get you a little bit of noodles noodles please get yourself yummy what's your favorite xander uh noodles the noodles okay good now obviously that food would have fed much more than just us but it's really nice to have a lot of leftovers to put in the fridge for xander and for nolan now traditionally a lot of people would finish this off with desserts whether it's pies cookies whatever but it is something that we decided not to do as a family it's just not healthy to have sugar and sweets every day especially as a habit after a meal but for special occasions it is nice to have something around but we don't make a habit of it and also we usually do have some ice cream somewhere hiding in a freezer someone really wants something to for pictures what's really nice about this cookbook it's very simple recipes um kind of more your whole foods your healthy style of recipes so this cookbook avoids white sugar and flour and you'll be finding more alternative sweeteners and also um more your almond flours and those types of things but yet they're not complicated recipes they're easy simple to put together healthy tonight is just going to be a quick simple meal it's called cheeseburger pie i'm sure some of you have had this before it's just kind of like your cheeseburger pie base and then you top it with like lettuce tomato onion whatever all you want ranch dressing if you'd like and then i'll just serve it with a side of applesauce sometimes it's just nice in the evenings to do a quick simple meal something that's not too heavy and that is refreshing first off i'll be browning a pound of hamburger and then i mix the hamburger cheddar cheese salt and minced onions together pour that into my nine inch pie pan and then from there i'd beat my eggs and add sour cream and whipping cream mix that together and pour it over the hamburger and then top that with cheese we're going to bake that 350 for 30 minutes and then when that's all finished we'll serve that with lettuce tomato any other toppings you might like and for these types of meals i like serving it with a side of applesauce i think that pairs nicely together wow i am cooking supper my son is having a hoot and a howl with one of the puppies we have here they're just tearing up my kitchen far down this dusty road wild flower is always grown there's a little house and you can call your own wear a heart like yours will never starve for love and you will never feel alone do it [Music] [Applause] [Music] [Music] just don't get him in the lettuce oh okay you think the puppy likes lettuce if we see the sunrise tomorrow [Music] means we sat the sunset today [Music] is it good i never didn't dig into this okay it's garden onion okay all right i've saved the best until last and this is around the family table it's a big thick cookbook and it's all based around the trim healthy mama plan if you're not familiar with trim healthy mama it's a diet that you embrace for a lifetime and has lots of good food and it's basically the concept is that you separate your carbs from your fats and it's also very much more of a healthy type diet there's some things in it like the sweeteners they use that i'm not a huge fan of simply because i have gut issues and i can't handle even like alcohol what do you call it is it alcohol sweeteners i can't even think now like xylitol on earth or toe where it's like anyway it causes like problems with my stomach so i rarely use it i only use stevia which i do cook with a lot however the sweeteners do taste really well in their desserts by the way if you're a big fan of desserts some of them are just amazing but this cookbook like i own a lot of trim healthy mama cookbooks i like when they are easy to follow they have good recipes and have a lot of them and this cookbook right here was made to follow that plan it has everything labeled in fats and carbs it does a really good job and i'm telling you they cover like canning and freezing you have appetizers you have desserts you have meats you have grilling also sourdough lots of sourdough recipes and i just gotten sourdough starter before i got second my last flair and i was super excited to try it but then i gave it to my mom but once i'm back to normal sourdough is something that a lot of ulcerative colitis people can handle so i'm hoping to get into that later once i get out of this flare so super excited to try that like pizza dough recipes and breads and get my family on sourdough anyway like i had mentioned before i am a big fan on quality food not that we eat like that 100 of the time but like simple foods whole foods types of recipes so tonight i am picking honey mustard chicken which is something that right now i can eat and i'm going to pair it with sweet potatoes now if you're following the plan this wouldn't be for weight loss because you're combining the carbs of a sweet potato and the fats of this honey mustard chicken however we're gonna roll with it i want sweet potato and chicken i'll probably throw green beans on as a side that is something that is a staple in this household it's low carb it's healthy it's not a grain and we raise a lot of it in the summer and then i freeze it so it's our own homegrown green beans so that is something that we have with almost every meal when i like cook a full-blown meal so yeah tonight's menu honey mustard chicken sweet potatoes and green beans and it's only going to be xander and i because nolan is out west helping his family so let's get rolling so for this recipe i'm going to be using chicken thighs i love chicken thighs they're so much more tender and moist and so very simple recipe there is butter mustard salt curry powder honey and then they use a fourth a cup of sweet mix which is a specialty mix in the back of the book they have their own recipes to like all the specialty items um different mixes like if you want like a brown sweet mix instead of brown sugar this is all part of this plan they have their own recipes that you pre-mix ahead of time for all of these recipes i'm gonna skip it like i said before i don't do well with these and the other thing this cookbook would mostly bake with things like your almond flour your flax flour oat flour all this type of thing and there's a specialty mix that trim healthy mama does sell it's called trim healthy mama blend i believe but different people have copycatted this recipe and that is in here it's like a baking mix that mixes a bunch of these things together and makes a much tastier mix than if you just use like almond flour or oat flour and then you use this throughout the recipes and i when i'm cooking this way i always have a big batch on hand and yes when you're starting to get into this style of cooking it's a little overwhelming at first but a cookbook like this really helps break everything down love it anyway so back to the chicken recipe this recipe has become one of our favorites now as i mentioned before i rarely use the other sweeteners this recipe calls for 1 4 cup of sweet mix however since i was not currently following the plan to lose weight but rather to improve my health i added more honey than the recipe called for to substitute for the sweet mix i like to do equal parts honey and mustard so roughly two tablespoons of each mix that with fourth cup melted butter and add one teaspoon salt one and a half teaspoons curry powder and pour that over the chicken bake for one hour at 350 basting it occasionally the chicken is so soft and moist and simply amazing and so quick and easy to prep sweet potatoes are a staple for us as well and baking them is as simple as putting them on a baking sheet spraying with some oil sprinkling them with salt and baking for an hour in the oven toss a bag of homemade green beans on the stove and we have a healthy meal that didn't take much time at all to prepare much to our delight my mom stopped in for the evening and even had a few bites with us god is great and god is good and we thank him for our food mom yeah what cupboards we do what's that oh bought where's your grandma why would you
