can you tell me the the name here okay and that means tree house while listening to the the sound of the river right yeah okay awesome hey everyone hope you're having an amazing day it's mark wiens and i'm at this amazing rainforest jungle it's kind of a homestay kind of a lodge you come here for the nature for the river for just being surrounded by the rainforest owners are they're so cool and they also emphasize organic wild food and so today they've they've like gone above and beyond they've offered to make us a completely plant-based meal from the things that they've picked surrounding um ingredients that they get locally uh so we're gonna quickly pick a few ingredients and then we're gonna go back we're gonna go back to the kitchen cook for us some amazing local food oh and by the way did i even mention we are in southern thailand in patalong province in the rainforest kind of in the mountains as the mountains start in patalon [Music] for foreign we are on our way to walk through the rainforest a little bit uh to gather some ingredients forage for some ingredients wild ingredients just straight from the jungle yeah ah and she's immediately picking some melinda leaves these are just wild wild chemicals jungle wild melinda leaves one of my favorite vegetables and this area is just beautiful just the vines going up to the sky just a canopy of green one day or two day again wow yeah it grows back in one or two days it grows really fast [Music] you can try yeah you can eat the raw leaves oh yeah it tastes like long beans yeah oh it's delicious a little bit of a sourness it does really taste like a string bean or a long bean okay yeah it's your fruits i mean this is just the real rainforest right here but we're just like steps away from the lodge [Music] um [Applause] it's snake fruit it's uh it's this type of like very spiky palm it's such a juicy delicious fruit so she's just picking one bunch of it wow bro i haven't lie we had no knife with us that's okay but these are just beautiful wow and it's so spiky and hairy these are wild the wild ferns yeah awesome whoa that is a huge frog maybe i love this place [Music] [Music] very nice amazing thank you i had no idea they're just going above and beyond set out all of the ingredients on the table on the deck over the river this is amazing the colors the basket of durian you can smell papaya's corn all the different vegetables and seasonings that's going to go into i'm not even sure what they're going to make but everything natural everything made from natural packaging and then this basket is amazing the melinda leaves this one this one is harder to find it's called in thai it's a type of snake fruit but it's usually more sour here's a comparison this one is salah or salak which i know this one is snake fruit and this one is in thai it's rakam i'm not sure of the difference in english but you can see they're definitely different they're similar but different this one is a lot more sweet and juicy and rakam is a lot more sour and tart and then there's a bunch of the the wild uh fern leaves and this is i think this is uh which is torch ginger flowers which are i love them too okay chocolate dried coconut yeah but also with papaya and it's not a oh we have a taste test of the of the coconut this is like dried and fried i think oh and mock up wow it's so much flavor but the salad is going to include papaya that's orange but it's not ripe it's still crispy which she chopped up and then she's adding some of the the rakam so that's going to go in and then something that's specific to this village that they specialize in this village is called chok a type of little palm jelly fruit okay thank you inside okay for the same to help eat the stems awesome you can eat the stems yeah peanuts sauce some sauce uh [Music] [Music] coconut coconut there's so many things in there plus the palm fruit plus the wild burn plus the but you can actually smell it's so fragrant plus the papaya and wing beans and coconut thank you very much taste test oh wow oh lord mark hub [Music] of flower yeah i'm on top markup okay i love it large ginger flour [Applause] today now [Applause] [Music] she's making two variations one she took out already um and the other she mixes with rice noodles now you can eat it more hearty with rice noodles but that flavor is unbelievable [Music] also just the packaging is just perfect and she finished it off with drala torch ginger flour one of my favorite ingredients and you can see those are the little jellies from the fat palm fruit i just got the rock i'm treated on that bite but oh wow that is that is unbelievable oh and she just opened the durian oh with that salad incredible i can't even believe how flavorful that is from all the different ingredients but especially from the rakam that type of snake fruit is just it's powering it but in that bite i also had a lot of those little um i can't remember the english name at all i'll write it here i'll have it listed they're almost like little jelly beans or like like gummy bears you have this amazing jelly texture and a slight crispness then the coconut in there the mix of fresh ingredients that salad is outstanding makes it so good yeah yeah only like a little bit of rakam and it's so good um smells so good [Laughter] [Applause] okay and now to try the the one with the noodles the kadam jean salad oh that's delicious too it just adds a different texture to it with those noodles and i like those little jelly beans the luke choke it's so unique of a texture man this is a salad of your dreams and that rakam is what just like push it is it over the line of flavor did you enjoy that durian can i see your mouth did you enjoy that durian [Applause] [Music] smoking corn yes yes how is it swiss sweet smokey okay the corn is ready i think you're just having straight smoked cool that's hot yeah [Music] oh yeah sweet pops in your mouth smokey i haven't eaten corn on the cob like this in maybe years oh that's blazing hot you grow the corn here too everything is from right here but nothing compares to that salad and the durian oh wow it's it's spectacular oh and the torch ginger flower [Music] this is absolute like [Music] oh is there a leaf in the camera [Music] just i can't i might even explain first of all the setting that we're in it's so pristine rainforest it's so green it's so natural and then just eating food that just it feels so good and it's big on spice it's big on flavor the tartness the chilis the balance of flavor and the little look look choke they're literally like little crunchy jelly oh jelly beans because they're dense look they are like gummy worms but like dense gummy worms i think if you taste one just on its own to me it has a slight taro taro taste to it or cassava but yeah kind of that like that taro taste to it [Music] and what will you make with this from uh salad from easy ah okay yeah uh not not like it not make uh some not pounded just okay just uh so you take some of those get the some of the leaves again yeah [Music] [Applause] um a salad wrap some sauce little bit salt sauce okay salt salt one more oh nice [Applause] wow wow thank you that's one bite that's a big bite yes i think i can handle it um oh wow again the rock um we're good on the coconut and then you taste the chilies and the leaf that's so much going on that is that is ultra freshness you cannot even believe the explosion of flavor that that produces [Laughter] you got it out of this world [Laughter] oh [Music] she said to open it from the bottom is better oh yes i got a lucky a three a three piece oftentimes they're just two piece but the skin just peels off it's kind of sharp but not like not too sharp and then you just peel it out [Applause] wow is such an amazing flavor it's so like it's tart and sour but in such a balanced kind of way because there's a sweetness to it too and so juicy it's such an incredible flavor and just like two of these fruits can or one of these fruits can power that entire salad to flavor it man i just love it and that's gonna bring us to the end of this video that was such a cool setup that they had with all the different vegetables all the different fruits and just bursting with flavor and they're also just amazing people they have uh they even have a school they run a school which is free for kids uh in this community and they also uh sell the the that type of palm fruit jelly that we we ate but that's going to be it for this video yeah what a time we're having here so cool i want
