One thing Iβve always been astounded by in haute cuisine is the small portion sizes. What does he do with all the leftover fish if he orders new fish every day?
Iβd assume he ages it for sushi later, but youβd think heβd get backed up every now and then, and I doubt heβd have some sort of fish-a-palooza-everythingβs-gotta-go type of deal

My wife and I went to a similar place in Honolulu. The Teppanyaki Ginza Onodera. Was about $700 total for the two of us but it was our honeymoon. Was the same style we had 2 other people dining with us but that was it. The chef personally prepared everything in front of us like this chef in the video. As most people said it's an experience. The food was amazing and the chef was top notch. Well worth the money and would do it again for a special occasion. We got to try real Kobe beef and it was amazing. Not something we would do often, but once every couple years when money's not tight why not? Having a master at his craft focus on only you is a great feeling. Is the food worth the price? Probably not but your paying for more than just the food. 10/10 would splurge again.
His discipline and work ethic are to be admired and respected.
