back on the griddle and we are doing some comfort food steak and cheese we haven't done a steak and cheese on the griddle yet so it's something i'm looking forward to i did something on the uh smoker before like this is like last winter so uh it's fall time gonna do a great steak and cheese i've got some some peppers and onions over here that i sliced up i'm just gonna keep it real simple we're gonna do salt pepper a couple different types of cheese let the griddle do the work cook this steak up make it all delicious uh so the first thing i want to do is fire this thing up i'm going to get it super high best part about a seasoned grill is not only the nonstick but just i feel like it adds so much more flavor get a great sear it's a nonstick but it's like you know the history of what's been cooked on it kind of comes through it really has like just like a seasoned wok it really adds flavor to what you're cooking with so i you know anybody who's out there and is is playing around with the griddle try some different oils you know cook with some coconut oil cook with some peanut oil cook with um you know cook your heart out but just try different things i tend to not use olive oil because it gets kind of burnt in a bitter flavor i think a lot of people do olive oil or blend i use vegetable oil 100 sunflower vegetable oil has a really nice smoke point but i also use peanut oil if i'm doing stir fries coconut oil and a mix of sesame and uh and peanut oil just really amps up some some flavor profiles so keeping it simple right now but play around you know enjoy yourself have a lot of fun and i'm gonna hit this up with some steak so again keeping my meat really really cold had this thin sliced i have it there's even some ice particles in here because i had it so cold in my fridge and i packed it in ice so thin made the shot on that barrel i don't know if you heard that or not three points salt i'm always generous with the salt this beef is uh completely unseasoned it's just um some ribeye that i had uh sliced up nice and thin let the heat do the work here a little bit of black pepper i think i mentioned this before but i grind my own black pepper i like it to be a little bit more coarse that's me i think the coarse black pepper adds almost like another level of spiciness to the food i'm not going to put any pepper on these a little bit of salt break down those onions and peppers see all the steak i put down there now it's like down to this but that's why you got to use some good steak a lot of fat cooks off so you want to make sure you have that flavor in there all right so get this going i'm gonna put the cap on it and let it crisp up so we got this nice and steamy coming out of here look at that yum yum all that fat and deliciousness onions peppers are getting nice and brown i like mine a little crunchy that's me a lot of people like to cook them down i really like to have the texture of crunch in my with my steak so the steak is already soft god i love steak and cheese sandwiches so good so good i think last time i did steak bombs which i added mushroom and salami but i mean this is my my go-to when i was a kid so many good sandwich places around boston area steak and cheese is just a staple i'm not doing philly style but i can always do that for another uh video i'll have to tap into my friend danielle down in the philly area and my guys over at bernick restaurant see what they have to say about it i mean four sandwiches i could probably do six but i like to stuff mine up man you know i'm going through all this just to get a half filled sandwich that's mostly bread so i'm gonna do up four gonna do six but no that's the fat kid that i have in there maybe five watch out for these guys very dangerous in your food magical wouldn't be a good steak and she's sad if stuff wasn't falling off the side next time i'm gonna make sure i have some of those aluminum foil uh wrappers so i can wrap these up hold them up so hope you try these out and enjoy them nice crispy onions peppers the cheese is all melty and delicious gotta love steak and cheese enjoy it
