have you ever been making eggs on your griddle and you're trying to do sunny-side up and the whites don't quite get set before the bottom gets brown and burnt i mean i've done that a ton of times you probably have your griddle a little too hot but a trick you can do is squirt down some water put a dome or a lid on it let the steam kind of cook the top of the egg that's the first tip for doing good griddling i'm gonna give you nine more number two i've said in a lot of videos so keep it short and sweet these things get really really hot okay like really hot so you want to keep it on low medium low get yourself an infrared thermometer even if you've worked in a restaurant it's a totally different piece of equipment that's a 3 000 griddle these are for residential use they get really hot you got to get used to them get a thermometer there's a ton of different spatulas you really want to get a spatula or a dough scraper with a beveled edge so it's like angled i think that's what beveled means i'm not the sharpest tool in the shed but it's like angled so when you're getting your smash burgers up it really helps get underneath though and keep the crust so get one of those especially the dough scraper i really like mine for cleaning and for getting smashed burgers up you might want to get yourself a little bit of a warming rack i like this little guy here uh there's big ones there's ones that adjust there's all sorts of them that you can get it comes in handy when something gets done early or when you just want to keep your meat nice and warm while you're cooking everything else so definitely get a warming rack because like i already said they get hot and when something's done you got to have somewhere to put it but you also kind of want to keep it warm all right if you've already been doing this you're going to be like i knew this already johnny if you haven't done it you'll be like that's kind of weird and disgusting why would i do that try toasting your bread with mayonnaise not butter mayonnaise i know look i didn't know about it either i did a grilled cheese i did a blt here i'm just look it speaks for itself look at the picture give it a try it's egg and oil so the fat and the egg that's something happens i don't know it is just it's wonderful give it a try number six i call this the cheese steak flip if you've worked in restaurants you've probably done it or familiar it's just a little trick uh when you have your meat here you put your cheese right on top of it for cheese steak i've done it for sauce peppers and onions i've also done it for hot dogs that i put cheese on with peppers and onions put your cheese on top hit it with some water put the bun on top slide the spatula underneath boom flip it right into the bread when toasting your bread for like a burger or blt or a patty mouth i like to use the front part here close to the grease trap it seems to be the cooler part of my griddle so it really helps not like over toast it too quick and just be patient you got all day because you're bread you're still waiting on everything else and you'll get that nice golden brown toast to it for whatever sandwich you're making number eight is one that i don't even do enough uh double up your portions if you're doing fried rice make a lot of fried rice you'll eat it during the week for lunch if you're doing chicken don't make three pieces of chicken make like eight that's the beauty of having a giant griddle like this uh you'll definitely eat it you make up a bunch of chicken breasts you can make chicken salad or you can make an actual salad with chicken on it not just mayonnaise and chicken salad you know different things i'm from ohio so salad means a protein with mayonnaise covered all over ham salad chicken salad uh you could also you know the fried rice you'll eat throughout the week just make it a little bit more because you'll eat it and it'll save you time later in the week if you kind of food prep ahead a little bit bonus tip you might want to start exercising i've put on like 15 pounds since i bought this thing and it's really hard to keep lying to my doctor like has there been any changes in your diet i'm like [Music] nope nothing i can think of number nine use your steak weight or your smash burger press for things other than smash burgers specifically i like to use it for potatoes especially shredded hash browns it gets a nice thin layer of crispy shredded hash browns by forcing a little more weight in a smoother contact with the surface of the griddle i also use it on cubed hash browns as well and i've used it obviously on bacon because it's a baking weight if you want to make your bacon all flat and cook it faster so there's multiple uses for the little smash burger weight you can do cinnamon rolls if you want to smash those down those are really good so use that for other things especially potatoes try it out on potato finally number 10 is the cooking order learn your cooking order general rule of thumb whatever takes the longest goes down first so at breakfast it's usually the meat and then you follow it up with the potatoes and maybe some pancakes and then maybe some eggs at the end or veggies at the end because they're the quickest so but it's a little different than smash burger you want to toast your bun first because a smash burger cooks so quick you won't have your bun ready once it's done on the griddle so
