okay that's it let's see late nights and sit there you go there's daddy jack's cool with the blues here so i'm gonna make the world's best meatballs in my opinion okay everybody everybody's mother the grandmother everybody makes the best meatballs their own best meatballs there's no one best meatball what you smell the pork the ground beef and the the orsinis triple hot and i made them i made them the other week last week i said i gotta i've gotta duplicate this recipe so i'm gonna make a tomato gravy with it it's not a tomato sauce not a sundae gravy but actual tomato gravy and uh but here i've got some different bread a little bit of leftover rolls and some bread so i'm going to soften it up with a little bit of warm water just to get a little soft soften it up not too much just sort of it absorbs some of that softens it up and mix it okay okay i put my meat in okay i'll put a little pepperoncini in there believe it or not that adds a little bit of heat okay have some links well let me forget the fresh garlic lakeisha okay so a little bit of red nice red pepper and it's a late was the middle of april nice spring weather but we got a cold front came through a little bit of rain going on and i have my uh it's a good day indoor to do something so i've got a stock of chicken stock going in the back here we roasted the chicken so we use a little bit out in the gravy but see these inside here the onions we're starting to go to seed i never like to uh i'll put those in the stock okay we don't want any real big chunks of onion in there okay then okay i'm gonna put some uh granulated garlic some parsley flakes fresh parsley is always better but fresh basil also but it has some dried i got my secret blend here my seasoning blend about curry a little jerk seasoning even a little bit of cinnamon a little bit what how seasoned how you like it okay gotta have a good amount of black pepper don't forget we got the spice and the garcinias okay salt eggs i'm going to go three eggs this kind of smaller size okay the key should give me the eye because i don't have everything set up but that's how i roll tis true okay stay on that amount of parmesan some fresh garlic fresh garlic and then i'm gonna get my skillet warm i'm gonna put some uh olive oil a little bit of bacon grease we'll fry up these meatballs [Music] okay i'm gonna mix it says a little wet i'm going to add a little bit more breadcrumb okay don't forget i put three eggs just gonna finish mixing this and we'll be right back right axle all right axel you're doing a taste test see okay so so i'm going to start browning these off got my hands a little wet i just want to put a nice little nice brown on the outside and that'll help color our sauce that's the whole thing some people flower flop or fried or meatballs and others don't all right we're gonna finish these here slowly fry them in a skillet last one in look what i got left here so when i pull some out i get a little taste sometimes i'll sometimes i'll taste it anyway to uh for the seasoning i make a little patty check your seasoning that's sometimes the best but it's going to cook in a well seasoned uh sauce so i'm not really that pork always browns up nicely too so uh that's what we're doing is brown them up a little bit and uh just everything nice and toasty brown and we'll be right back we'll make the sauce the gravy slap it in the oven for about half hour 45 minutes maybe to an hour we'll just see how it goes we'll be right back hey jack go sister pam came come here for a second pam axel loves her we all love her get out right pam remember he's gonna kick out she just brush everything onto the foot and she really hit the hey axel hey hey come here come here buddy come here come here bad manners accent geez pam just brought me a nice bamboo cutting board here oh that's a beauty pan look at that thank you so much all right so that's it we're gonna gonna brown everything off and uh looking forward to tasting one oh they are beautiful oh yeah that's what you want got a good ground going on yeah some onion for our gravy nice sweet onion and i have my stock going so i'll take all my peelings skins and all right in there okay got some good heat going just throw an onion in there a little bit of a little bit of butter for for a roux first you have to have a good amount of garlic brown that up real good turn our fire up i just want to get a little bit more color on these meatballs so leave them in there all right we're just going to finish getting these onions nice and translucent and we'll be right back daddy jack's cold with the blues okay so add a little bit of flour just to absorb a little bit of that okay a little bit more my friend keith he grinds this for me this hulk natural whole wheat organic can't beat it my oven's up to temperature because i'm gonna we're gonna pop this in the oven after so just like you make a regular gravy put the stock in a little bit of djs for the color and the flavor that's some real nice chicken stock i have going on here make sure you get all your lumps worked out then i have my ultra cucina sure hope i don't get my shirt [Music] arm's length arm's length and uh some more juice place a little bit more stock into it what's that look smells delicious oh my god let's give it a taste oh yeah what i'm gonna do is i'm to put just a little bit of water because you know as it cooks down that's the kind of consistency we want right there that's a tomato gravy let the meatball just poach off in there [Music] always clean i'm clean always clean just like old school check out uh old school soul food i love him when he when he's not he does some incredible videos and uh when he's not jeff chef jeff and you can learn a lot from him but uh when he's not cooking between steps in the process he's always wiping and cleaning and that's the key right there you know organize keep yourself organized you know so get them going a little flavor there turn them over that's it in the oven for about i'd say about we're just going to put i'm going to drop it down it's 350 and drop it down about three and a quarter for about 30 minutes that's it world's best meatballs with tomato gravy we're going to put them over some uh buttered egg egg noodles we'll be right back daddy jack's going to blues all right so you know um we've just had a previous discussion uh off camera um no so i've got egg noodles so we're gonna strain those off and my question was whether do um you know buttered egg noodles i mean really can't beat it so put some butter in i always got a little salt and pepper on my noodles right akisha so the main question was whether we should present these with a uh put the sauce on these so pam said no she didn't think that was uh good so what we'll do is um here they come check this out lakisha okay good egg noodles and gravy that's for me [Music] okay [Music] so [Music] that looks so good oh my god not tomato gravy not sunday gravy tomato gravy that's it we got a little bit of green onion but that's it all righty let's give it a taste here says oh delicious [Music] very good [Music] oh yeah nice nice flavor then as you know when it when it cools down it's going to suck up all the moisture out of the skillet it's always better also the second day i love the egg noodles pennsylvania dutch egg noodles very good that's it two bites right location that's right that's it it is daddy jack's cold water blues here it's springtime up here we just did two days of really intensive yard work and well it's good to get outside and get some fresh air and beautiful weather that birds are chirping and the colors the yellows and greens of spring i love it love you pammy glad you could stop over thanks delicious have a great day
