[Music] all right daddy Jax told a blue so we're going not old school you know flashback you know in the days and one of my most prized possessions here my mom's all of her recipes you know and I was one of my my regrets is doing all these videos I never got her doing she had some great you know recipes and so but you know it just you know about Alzheimer's and it went quick if she lost her memory but she we had her for a good you know what a few years after her first diagnosis what she was a fantastic cook and a lot of recipes handed down from her grandmother her mother my grandmother my dad's great on you know what dad's mom was a great cook but so you know I hadn't looked at this you know but I want to start doing some of her recipes and so location was just looking looking in I know just when to back and pulled the card out first card out chicken ala King it was crazy it was like I don't know we want to call that so but you know I was looking at all the recipes is pretty much and I talked to my sister's star about her just famous every time we came to came home from Texas or came home from college or back in the day you know that was my favorite she'd always whip it up and not so in the beginning it was with over toast which is still my favorite to over rice over you know guess if you want over pasta but later life herb you know she liked to go a little fancy with it was patty shells you know pepperidge farm puff pastry shells and that's what she served it you know like set the table real nice with her athlete where and China and you know we really did it up you know you know Allah King you know it's got a got a nice connotation to it so uh but one thing I was reading the article reading the card here which my sister star given me her version of the recipe was I know she put some evaporated milk into it but I'm not gonna do that use a little bit of heavy cream maybe and but here it is the cigarettes appeal of a couple of egg yolks and sherry wine at the end you know make like like a real carbonara but I mean it's to use the egg yolks and to share it of flavor to thicken it so here's what we're gonna do and now I'm gonna put that right here but one of one of a deal all was ours remember was you know a lot of people don't like to cook with green bell pepper my mom did end up up and we want to get the dice right you know so we don't want it just to disappear it to them into the dish we want to kind of stand out a little bit then I'm going to use a couple of multi-node all right I actually got to put that into soup I don't throw that out that's a baby it's a baby that I've called pepper was pregnant it's got a little I got a little baby a baby pepper growing inside it all right so I got a little funnel here a little fennel in there I'm not going to use the bigger part is just under inside I will use that down the road all I go in to end something I don't throw any of the light so [Music] put some butter in the skillet the end that's we're gonna make a roux Otto so I don't want too heavy of a fire going [Music] we'll get our onion as Justin Wilson used to say on y'all he was my favorite back in the day Justin Wilson what a guy first uh really entertainer you know like a you to bluff or out public television sensation Steven Jacque Pathan Julia Child he was a character if you ever get a chance to check him out up on YouTube his old stuff he got to start doing party records you know a little old guy who wouldn't expect him up about having a - nasty party records well he what he wasn't all lily-white so hope they beat up on that a little bit on your yeah [Music] the color is the key yeah all that so my mom always used pimento what I'm going to use some red bell pepper you know you didn't have it unit back in the day you didn't have like go to go to grocery store get red bell peppers you always like you know roasted peppers pimentos [Music] see the bay it's all these days it's not all about the protein to me it's about the gravy so you know it looks like I know you could have as much your little chicken that you want but uh corks gonna have some garlic even though it's Yankees cook with garlic don't listen to what everybody says about us you know we got it we got it we got the Italian influence up here the Arcadian influence from Canada now we're getting a lot of a lot of nice people from Canada combat way you know there are our wonderful neighbors to the north we got a nice color right there I love it make sure you know we're not gonna we're not overcook that because you want that color in our and our sauce I won't get in here just uh there one more piece of water then [Music] growing our fire down again contrary to popular belief the stove goes have settings on it so uh Agustin but make sure you cook the flower you know so cook the rawness out of your flower [Music] nice chicken stock I'm about to get out a little water because I'm you know that will reduce down there cooking it even though looking on the bottom is going to give us some color to the sauce work out all the lumps [Music] more chicken stock [Music] I got all my bones you know I I poached off the chicken into the you know you I have the next at home that's my favorite part cuz I put that foot while I put the back I put the back and all the scraps you know I cut all the to scraps I get that stock going get some flavor into it and I love to pull that out regular meats just barely coming off the bone you guys that always stir in the back of the yeah back and even the wings I love oil way too low boiled chicken I really do okay so so we're just going to let that simmer down and turn up a little bit or justices your taste [Music] as jaegers say dynamite remember Neely and good times right we let that just simmer down we'll pick and all naturally taking a little bit we're back like God like three minutes set your clock [Music] the Finnish Finnish business here I cut off the chicken we're going to put that in there stew it up for a little bit and see yeah just a little bit of chicken where you got enough for a whole family right here no I'm just going to let that simmer down the chicken was like you know it's cooked but you know cook a little bit more pick up some of that flavor and one more lamppost stock so that's a good feeling to for chicken pot pie if you wanted that there's a sauce when you think of chicken chicken stock that's a veloute that's a chicken veloute it's called one with mother sauces veloute is a mother sauce you can from there you can do anything work that you know and done what else you got hollandaise you got a espanol which is like a veal stock marinara and a bechamel cream sauce those are five mother sauces so what I'm going to do is I don't want on what I had was like I said my mom used to do it over right close to the beginning that's still my favorite there's some nice whole-wheat Arnold's a rice paddy shot like I said but we're going to do it over toes and I'm just going to finish off what we're going to eat today because you can add that egg add that you'll give it away plenty of great [Music] we'll put some heavy cream [Music] you should do one egg yolk the thickness [Music] I had no one to go to I do go bigger stay home I Paula [Music] and uh no sherry wine trick I never knew that all these years one of those secret recipes you know that she kept it she kept it to herself oh ma did I don't looks like we're almost all bathroom as well much left in there I tried I try to get I try to get cute with it not nice thank you Father I would have burned it I have a kind of low what Yesi that's the color I remember nice to a nice simmer [Music] she put welcome Washington [Music] think I remember mushrooms in their clan [Music] well not today no today I remember funny I remember - pimento in the the green pepper [Music] oh yeah all right so I'm gonna cut fire right now [Music] a look at a time God makes it nice [Music] the French since were they thinking what they think of a potato and that eggs you know so this size will go to flower very little we could probably do without [Music] you bring it up you're slow [Music] I remember yeah yeah flavor it up flavoured of peppers coming through yeah played you doing what favorite to round to round plates a couple of us that maybe it's war I'm gonna knife [Music] see the rock I remember that was yesterday but cut an issue over the toast man I'll show you how Maya used to up sir [Music] I don't know [Music] and I you know she always liked their wine a little bit so and hetnet hope an extra select through glass of wine everyone's welcome Welbeck I grew up in the fifties late fifties you know born late fifties and uh they had a febrile Sparty's they'd have you know like cocktail parties I'll be smoking cigarettes and yeah it happened too bad but hold parties any go out is watch yeah I'll never take a crawl oh yeah I'm digging this one and she did put mushrooms but you know what to do about it is our version today this is how she do it I'm not gonna butter it he's got enough [Music] so all natural flavor Dave you can't beat it you know I mean why you're so whole chickens you'll thank me later so this is how she doing [Music] all right I got a garganta breast in there we should or should go like this whoa right they're going to go over the list here they're just a little bit now we don't want this for the color well I put a little black and seasoning but that's it grandfather [Music] as my favorite you have these extra pieces to mop up my puppet sauce [Music] whatever sauce but you sherry [Music] she's making early in the morning and would up you just get deeper flavor you know the next day [Music] when I was young she probably didn't tell us about the sharing of new money we needed her but really that so much - enough all the flavors and profiles coming back magnetic oh what a blows here paul begley in the house we're doing it I think we knocked this one out of the park mom my brain goes in our minds and check another King recipe I don't know who gave it to you but you copied it right and we were able to duplicate it right love you god bless and adios [Music] you
