I use you again what I'm saying I'm taking you I don't know what I'm doing actually I'm liking the personality coming to you probably gonna use some of these snips so okay you're talking to me you're I've had a lot of people ask me about what your crew eats and today I'm coming to interrupt a new chef chef Ian Dury here cooking the crew food and just kind of give you some insight as to what we eat obviously this is just one meal throughout like the week and it's obviously not always the same but I gave you Andrea to tell you a little bit about how she has to deal with yacht cruise preferences and having to cook a variety of different meals for vegans and vegetarians and meat eaters and a lot more goes into it that what you think so it's going to actually answer a couple questions and they'll show you guys what we're eating beginning today module next yeah okay so like a version of mongrel Mexican for lunch today leche is always a crew flavor we're gonna talk about that as well so let's get into actually before we get into it Liana has broken or fractured her foot pretty much did that during a fire drill and as if her job wasn't hard enough she's not having to elevate and work in a boots last boot today the enemy I'm gonna fire a few questions at you while you doing your thing if that's okay with regards to catering for meals for for curb is it as simple as everybody thinks or is it quite a process each other so let's use audience as an example catering on board what is some of the difficulties of catering on board with audience I'm nice to begin the vegetarian who's actually on the 16 crew by it believe me which is great and yeah it's just kind of like getting with right balance between because the meat-eaters don't want vegetarian with me so just have to get crates use your time wisely and that's actually pretty rare for a boat to have that many vegetative right it's really right for a boat so this one you go to do it like usually speaking or in the past anyway as a vegetarian used to be really difficult to have a ship like had if you think aside for for crew and I've had a few of my friends personally tell me that the chef just wouldn't cater to the vegetarian diet so if there was a salad or something then they would dig into that but the majority I know but the majority of the time everything is buffet style right yeah family style is the best fami stars the best dishes will be cut and prepped accordingly to separate dishes which you'll see in a minute and then Cruz's help themselves so on our Ian's we're lucky to have vegetarian style ships just a quick ones you just have to meet don't you know okay so this is not one of those normal situations where it's like she's vegan because she hates me she loves it but health reasons that's liandry's reason for being vegan a vegetarian but she loves meat so super weird oh yeah that's true Daenerys born and bred South African but majority of your life is Fenton okay there we go are you able to just kind of break down a week and wear your day looks like like a day in the life of a chef on board particularly cruise ship so this cruise quite lucky to get morning tea and afternoon tea and then lunch and dinner so for full meals very kind of really so I start 708 going to the cod room I'm gonna see what we've got from that I don't usually plan unless I know I need to like slow put something yeah I would know me everyone finishes at five but I I serve dinner at 6:00 6:30 chef Dean is great for that because he gives me two hours of it during the day got you okay so morning tea is at ten o'clock everybody comes down is like usually it's to tell you the truth usually it's just tea but somehow on this boat it got implemented that they were little bits of snacks throughout the day so little bits and pieces could be muffins it could be today was a special one because this Friday we had eggs and toast but that's not always the case on birds by any means and it can be quite extreme in some circumstances I've heard of birds saying like you can have a coffee but you can't sit down it was on Jeff's phone so muchi of can you make your coffee you'd have it to you then you'd go in our case we've got 15 to 20 minutes to have a team coffee and in sometimes a couple snacks by the chefs majority of the time at the moment but it's pretty rare lunch is served at 12:00 and then dinner at 6:00 so it's a full day of the ships ok so the biggest question and I'm pretty sure people have probably already commented because this video started already let's talk a little bit about gloves because there are this has been a big discussion on board and there are certain circumstances where you use them and certain circumstances where you don't and that's not just you that's all shifts the majority of the time my whole industry okay so talk about it as we'll do if you add gloves you Connie you wash your hands less there's actually less sand but when you're cooking of research like rapping research definitely definitely use gloves so veggies and stuff I got you're doing what you're doing you go you wash your hands you do the next one when you wear gloves you end up just touching a variety of different surfaces and it could actually be worse is that right let's go and confirm that with chef Dean what's the deal with gloves what is the deal we buzz when do you wear them when do you don't wear we handle meat seafood and any of the other times is it usually worse or what's the deal cuz you've got a strong opinion with clubs aren't you yeah I think that it should be worn when we handle meat and seafood and any other time where it's it's quite messy but other than that I think gloves hinder the knife spread germs and also because people think when they're wearing gloves that they're not getting their hands dirty so they wash their hands less the chili just wanted to confirm that with two you said exactly the same thing meat and fish hinders you from washing your hands so that's the deal with gloves look at that today so we've got fake meat mushroom which is actually be good steak steak for me it is not fake steak that's the real deal jackfruit another thang in meat alternative the cod is just the frosting nice so that's is that for the tacos and stuff are you doing tacos oh yeah we're just getting on top different so it's Mexican style help yourself okay they're not Mexican it's just fake Mexican fake Mexican I guess sounds good so your primary role on board is obviously that of crew chef but at the same time when this guests on board you're assisting the head chef a lot or how does that work so we actually help each other together which is actually quite nice way of doing it and a little bit don't do that my last boat prefigures me and then I still be helping with the guests food too it gets a lot but I'm actually quite lucky and one situation what's it been like we've seen so far [Music] talk a little bit about your background maybe but more so for everybody else is thinking about getting into the shipping world what's sort of the process seasons working smoothly got everything and then I just do my a CCW got my mg one and applied to an agency that job just like I so four years of working shoreside before you came into the healing work three years yeah I think yeah but I want to say like everyone can do it it's not that everyone but it's definitely for me the best kind of sharing because I worked in like events in restaurants this is like the pinnacle for me you can tell me if I'm wrong about saying this but there's always something that I kind of figured as a deck remember when any other division of boat that I'm almost a little bit jealous of you can be really passionate about cooking you can be passionate about food and passion about learning about the cultures and different food and stuff like that so this is a one job on AdWords which you can really be passionate about and like really look forward to waking up every single day and I know that it's hard I'm not saying it that's the case but what I'm saying is for Dekker and interior career I'm not saying it you can't be passionate about it for generally speaking you're maintaining your cleaning start you doing things like that on a boat you love to cook not everybody on earth who loves to clean that's kind of the purpose that I'm trying to get across so it really is a passion job which is talking about needing to be passionate about what you do I really do because you're gonna wake up every single day and cook they really can't be a day that you wake up and don't feel like cooking and I'm guessing that those days do happen they do go and feel like cooking again seven days in a row week off the week it gets consuming you guys like you can shut up but what do you do to manage my bus yeah but like it's pretty crazy there's one more thing I'm going to point out to you which maybe you've never considered you go to a restaurant right you can order Italian or you go to another restaurant you can order that specialty but on a boat you've pretty much got to be able to cook any different type of food any different culture for any different guest different like that must be how do you even how does that work like do you practice do you try and do every different culture and different type of food or yeah it's not authentic in any way but you you read books and recipes internet and you just learn you spend a lot of time doing that yes like I said it consumes you but like it's the same you're the KP you're the calming you're the everything because you're you have to clean up after yourself and do the jobs that like you don't need a restaurant the lower ranks would do and which is a bit of everything pretty everything yes yeah when you go to a restaurant how often do you find yourself being able to eat without critiquing something or having to like wonder how they did it like do you ever just get to enjoy a meal or not really know constantly thinking about I can do this to this and if it's not good yeah disappointing yeah I'm just gonna show you guys some the food that we having today I don't even know how to describe this is like a regular meal that you would serve during the week right yeah that makes special done for the video you didn't know I was coming today this is just a day run
