[Music] and this is the star of the show it is a three and a half pounds pork belly as you can see it has quite a bit of meat and that's exactly what you're looking for whenever you using pork belly because as I mention on many other videos the one thing that it has is plenty of fat so the first thing I needed to do is to split it in three pieces and as I did you can clearly see that this one has a good amount of meat and even though you can't always have good finds like this but when you do make sure you take it so I went ahead and split them in three inches squares that's because it's the perfect size to allow the right amount of marination to go inside now I'm gonna be a hundred percent honest with you this step is absolutely not necessary I'm still trying to find out the reason behind this step I think this was done in the old days so that it was easy to lift them up from the pot because by the time they're done cooking it will be extremely tender but now that they're ready all there's left to do is to back them up and throw in our marinade talking about that making this marinade is extremely easy and here's how into a sauce hot pan I threw in a good amount of Chinese cooking wine the one thing you got to make sure is to burn all of the alcohol off then you want to throw in ginger followed by sriracha low-sodium soy sauce a little bit of sweet soy sauce and a good amount of brown sugar now there's left to do is to mix it well and make sure all of those ingredients get combined together let it simmer down into everything reduces to half and once that's done your marinate is ready remember to let them cool down a hundred percent before adding it to the bag talking about that once that happens all there is left to do is to seal it up and get it ready for the water bath but first in order to make Pokemon food we must make some incredible rice and if you are in quarantine like I am I've been watching a lot of Pokemon lately and that is exactly where this inspiration came from I'm using the sushi rice the good kind this rice is special it's not any sushi rice and I've learned this from master sushi chef Hiro and like every rice the first thing you need to do is to wash it make sure you wash it until that water is a hundred percent clear because if you don't do it you will not have the same results and as you can see this one I got it as clear as I could the next step is pretty straightforward all you have to do is put it in a rice cooker and set it to cook just remember for this rice you want to use one part rice and one part water no more and no less once it's fully cooked you want to throw it in a big bowl because now you I add a special seasoning and this is what I'm talking about just like master sushi chef Hiro taught me this is the best Sochi seasoning there is it is not like any other rice vinegar trust me I've tried other things and he does not even come close to this one but now others have to do is to add it to the rice and mix it well and another important tip is to keep the rice cover if not you will completely dry out on you you can either use a wet kitchen towel or paper towel to make the perfect triangle balls I'm gonna be using a mold but if you don't have one you can just use your hand and if for whatever reason you don't want to make triangles like Pokemon you can also make balls it will work just as fine but it won't look as pretty but now going back to our pork bellies I'm cooking both of them in the same container at a hundred and eighty degrees Fahrenheit for eight hours and I'm telling you that is enough time and temperature to make them as soft as they can get it I got my beautiful pork belly cooked at a hundred and eighty degrees Fahrenheit for eight hours that is enough time to make it nice and tender so tender that you have to be kind of careful because if not it's just gonna fall apart on you but it's ready let's take it out let's do it as you can see I quickly took them out and I started by opening the bag and when I did oh no yep I scratched my table please learn from my mistakes everybody do it nice and slow the next step we got to do is to strain all of the juices because this will turn into an amazing sauce and as I change it to a clear container you will see that the fat will rise up that is exactly what you're looking for because you want to get rid of that and as you already might be gassed in the bottom is a hundred percent flavor to take it out it's pretty straightforward you just gotta use a spoon and go nice and slow do the best you can to avoid taking out the juices from the bottom the last thing to do to get it ready for the sauce is to strain it this will remove all of the impurities as you can see I'm left with a nice clear broth so into a saucepan I threw in all of the juices followed by brown sugar and a little bit of sriracha mix everything well and let it reduce to half to thicken the sauce I'm using a potato starch slurry and as you already know it's pretty straightforward a little bit of water and a little bit of potato starch mix it well and it's ready to be thrown into the pond as you do it your sauce will start to thicken out make sure it's nice and thick into the consistency you're happy with in your sauce is done and as you can see my pork belly does not look that good right now and I know that you know the reason why I wish you guys could smell it it smells fantastic everybody as soon as it comes out of the bag you can tell already that is gonna be something amazing because of that marinade you know what I mean now with all that being said traditionally as far as my research goes that the Chinese they do not sear it did you serve it like this with the sauce reduction right on top but if you know me you know I like that mail-id reaction that comes along with the searing so I am going to be putting a beautiful sear on these pork belly with all that being said I know they don't look that good right now but watch tell me so I know we've been quarantine for some time oh my god I'm tired of this quarantine everybody I'm pretty sure y'all out her as well but have you been watching some Pokemon yes we watched pokemons all the time everybody oh yeah yeah yeah I mean they I remember they made these in Pokemon I remembered that hey I'll tell you one thing all right the important thing is that you must taste delicious but most important if you're not having fun doing it you're doing it around everybody true you gotta have a good time and let me tell you making this thing's here it is a good old time with the kids all right which one you want to try first Pokemon let's try this one go for it this is kind of like my style or you see you have a Pokemon there yeah yeah yeah you had put on me now I will tell you one thing everybody the easiest thing that you can ever make an su V is this right here it takes no time at all of you actually cooking it yes it takes a long time for you to you know put it in the bag and just leave it there for a day eight hours like you saw it on the video but at the same time it's easy to make and very convenient are you ready Andrew yeah let's give this one a try all right cheers everybody cheers and your party come on come on huh that is amazing little bit spicy a little bit sweet ride a bit savory and a very lot of fat I almost cursed this is damn delicious don't curse no cursing out on the video Wow sauce is what makes it Hey yes yes yes yes madam don't be shy with the sauce oh look at that don't be shy with the sauce everybody the sauce is very easy to make I'm gonna right now I'm gonna tell it to you guys you need to make extra sauce let's see what the sauce extra it is amazing like all the way because it's spicy but not gonna kill you and it's very sweet because of the soy sauce and also of course the brown sugar it's savory that's what I will say it's so savory and I love it but you don't feel the sweetness yes I feel the sweetness I feel a little bit of spice in there I care about the savoriness it's great it says and it's super soft - extremely tender like tender to the max now here's the deal you got one over there which is the plain version we got sesame seeds and we got one with a seaweed the great thing about it is that the packaging you can store in your refrigerator and then just eat it whenever you want without ever being sick you're gonna go with that one oh you're gonna I will tell you right now you might be a very big fan of this you ready you want to try this one - yeah I'll split it in half hey go happy now our rice no cannot make that with jasmine rice I don't think so unless you like squeeze it until like there's no tomorrow you know I gotta add super mmm I put that sauce on everything Oh anyway guys
