so I've fallen into a style of cooking that helps me prepare lots of different dishes that are really fun and interactive but are also really quick so that I can go ahead and just take care of my guests and hang out with friends and family so in this series I want to show you a few of these recipe spreads [Music] today's lunch is Middle Eastern themed I'm going to be showing you how to make a beef Shawarma roast with two different types of sauces my personal style of making a shawarma rice a nice little quick tomato salad some grilled cheese and we're also going to be making some flatbreads from scratch and because I have friend that's pescetarian that's coming I'll be making a grilled fish that's really quick to make and that fits perfectly with the style of all the other dishes the food is meant to be interactive I really want my guests to get their hands dirty in some sense being able to customize the dishes to their liking adding various amounts of different dishes their plates to kind of make their own little perfect plate it's just a really fun way of serving food and it looks like a beautiful family spread when you walk into the dining room it's really no fuss and it's a lunch that I think you'll love [Music] so I'm going to use a 2.5 kg slab of both Eco beef ribeye usually for Shawarma you're going to be using some tougher cuts of meat usually from the sirloin side or flat meat which cooks for a very long time to get it nice and soft but also really nice and crispy but since I want something to cook faster here a rib eye will work great first thing you want to do is place this in the freezer for at least one hour so that way it'll be easier to slice thinly time for our spice mix I'm going to be using some generous amounts of ground coriander paprika turmeric garam masala cayenne pepper onion powder garlic powder white pepper and some salt just massage all of this together really get those flavors in there Shawarma basically has to be really heavily spiced so this is how I do it but there are tons of ways you can do this this marinates overnight [Music] now you don't need to do this whole spit rotisserie style if you can't you can use Cuts Like skirt or flank marinate them overnight as well and just cook them in a cast iron pad for a similar effect this was the first time I was going to be using this contraption in my oven so I wasn't sure it was gonna work but I'm happy it did this goes into the oven at 150 degrees Celsius until your meat registers about 50 degrees Celsius internal temp since this is a rib eye we can go ahead and make this medium rare to medium no problem we don't need to cook this out all the way so for my slab it took around 60 to 70 minutes to get this done for our pescetarian friends I have two beautiful Filipino Baja Fish these are honestly gorgeous as is and when I do grilled fish on some hot coals all I want to do is slather it in some olive oil make sure to put salt and pepper in the cavity add in some fresh herbs if you have them on hand and this is cooked on some very hot coals but also very low heat about 20 minutes per side make sure you don't get any flare-ups with the fire and you're going to flip this only once first thing you want to do is measure out your ingredients mix your salt with the water so it disperses nicely flour with baking powder and instant yeast slowly drizzle in the water until you get like a coarse texture almost like wet sand and then knead until you get a smooth dough this will rest covered for about two hours or when it's almost doubled the size all the ingredient quantities are in the description below by the way [Music] our dough should be cute and fluffy by now so just roll it out into the log section it out rest these little pieces for an additional 20 minutes then roll them out into thin sheets I don't have a roller with me so I'm just using a bottle of wine stretch it out if it fights back and then dry cook them a couple of minutes per side in a hot pan and do not be scared of grabbing some Char from the pan because it's really important that you get kind of like that Smoky flavor here really [Music] this white sauce is one of my favorite things to make and it's so easy to put together Greek yogurt mixed in with some coupon mayonnaise finely grate in some garlic a tad bit of tahini and just adjust as needed you don't have to really season this with salt or citric acid or acid in general because the mayonnaise already does that for you for the salad just chop up some tomatoes and cucumbers up to you if you want to remove the skins and the seeds I honestly don't care I like to keep them in add some thinly sliced white onions and toss this with some white wine vinegar I like to marinate mine with tarragon the white wine vinegar will just kind of remove some of the bite from the onions I'm going to let this rest and soften up in the fridge a little bit for maybe like an hour before finishing it up with some extra virgin olive oil and some salt [Music] for really quick and easy hummus that you don't want to start fresh with dried chickpeas you can go ahead and use canned chickpeas just make sure to boil them in some water obviously with some baking soda after 20 minutes of boiling you'll see that the Skins will slide right off and if you want a really really smooth hummus unfortunately you do have to remove the skin from every single Chickpea in front of you honestly it's very tedious and I don't really mind the Skins all that much once done strain everything and then just blend in some tahini grated garlic some salt and some olive oils now you'll see the texture is kind of coarse so make sure to keep some really cold water by your side but you can keep adding to smoothen things out [Music] [Music] [Music] a nice little bright sauce slash dip whatever tatiki really is I'm not sure what it is or salad maybe to balance out everything this is perfect grate some cucumbers mix that with some Greek yogurt some salt and pepper lemon juice some grated garlic and some extra virgin olive oil [Music] since we did a white sauce now we have to make a red sauce it only makes sense Shawarma really for me personally isn't complete without something chilly and spicy so take some dried chilies whatever you have available I'm using some dried pastillas and some chili Garbo steep this in some hot water until soft you're going to be removing that tough bark part and then removing the seeds chop up some onions some garlic fry that off in some olive oil until fragrant with just a little bit of salt and then pour in a can of whole peeled Tomatoes as this Cooks down I'm just season it with some oregano some apple cider vinegar and some soy sauce you're just looking to thicken this a little bit finally place the whole thing with your D seated chilies inside a blender and just blend until really smooth this is going to be really tasty and you can just always season this with a bit more salt if you need it [Music] fried cheese is something I absolutely love eating here I have a local white cheese called magdalumi so it's inspired by a halloumi and it's perfect for frying so just get some olive oil hot and then fry off your cheese on both sides until a really nice crust develops before drizzling this with some honey and if you have some pine nuts or crushed pistachios that goes perfectly on top of it as well finally time for our rice so hot pan olive oil some chicken oil sponsored by Nina and Rai thank you sir this thing is delicious add in some minced garlic turmeric and freshly cooked rice just stir fry everything for a few minutes [Music] [Applause] [Music] and oh will you look at that our beef is ready and it's looking absolutely beautiful make sure with anything beef related we're gonna rest this for about 10 to 15 minutes to make sure that it stays nice and juicy [Music] oh okay that was a lot of cooking everything is ready now people are ready to sit down and I am tired of cooking and filming my food at this point I was really multitasking this whole time um so it was it wasn't the easiest thing to host people and to film a video at the same time but it turned out really well so all you have to do now is serve watch people kind of customize things as they want to and make their own wraps or even if they don't want to put anything in a wrap it's fine they can just have all these little elements on a plate with a little bit of shawarma rice whatever people want to do no judgment here um just as long as they're enjoying it and you
