so when you guys come home I like to make like one pot lunch dinner on the weekend so I'm gonna make you a vegetarian chili it has garlic red onions red pepper green peppercorn pinto beans kidney beans and black beans along with a lot of spices and I usually serve it with pilaf first thing I would do is dice the onions on hold ready okay so he already does five cloves of garlic this is my one red onion okay the next thing is the red pepper and that washed it and everything I just take a serrated knife they cut the sides and then I try to trim off any of this white veiny stuff she not big deal but it's worth getting so the knight cafes and strips same thing with the green pepper side okay so then I'm going to add about two tablespoons of olive oil and put this on high to get it going that's it you know a little salt and pepper you're going to put a lot of spices in this so just need a little bit okay okay so I'm just going to sauté these for five minutes after on this saute for about five minutes then I'm going to add everything else and then you just let it simmer let the beans cook down and it's ready heaping tablespoon of chili powder teaspoon of cumin teaspoon of coriander a teaspoon of cocoa powder unsweetened a half a teaspoon of garlic powder and 1/4 teaspoon of cayenne pepper and then I'm going to put a little bit of smoked paprika and a couple of splashes of soy sauce it's all in there [Music] mix that in and some more and some Cayenne okay then I add the beans kidney Pinto and black beans a cup of corn put it back on the heat and I'm just gingerly don't want to mush up the beans mix it in for a minute 12 ounces I'm sorry 28 ounces of crushed tomato and two cups of veggie broth okay then you just mix it gently after you added the tomato sauce and the veggie broth I'm all done with this I'm going to cover it bring it to a boil and then once it starts boiling you put it down to simmer and you let it simmer for about 30 minutes and then it's done [Music]
