hello everyone welcome to come sit at my table we're Tom and Melissa and we appreciate you being here for our video we are having friends in tonight for a taco bar I think we have what 13 or 14 people coming I lot so you know you can't have tacos without having queso and chips so we're making homemade queso for for our get together tonight now this recipe that we're going to put together for you today is one that I've used for I don't know how long it's been years and years and years I don't even remember where I found this recipe if I had to guess I would say it was in a magazine but I'm not really sure about that I I've just used it for so long I don't know where it came from it is so simple to put together in fact the hardest thing about it is just chopping up the cheese to put in your slow cooker now that's that brings up a good point we are doing this in a crockpot in a slow cooker and that's the way I prefer to do it because during the party we can leave it plugged in we can put it on warm and it will stay melted and ready to use however you can make this in the microwave you do the exact same thing put all the exact same things in a large microwavable Bowl and you just heat it for 30 to 45 seconds at a time stir it put it back in heat it again until it's all melted but we prefer to put it in a crock pot because we can throw it all in turn it on low let it sit for 2 hours and then it's ready to use also you can reheat it in the crock pot if you have leftovers just leave it in the crock pot throw it in your refrigerator when you're ready for it put it back in your in your crock pot hot and let it reheat it works perfectly that way so this is a very versatile recipe and it's so so simple to put together let's talk about what we're going to use today to make our world's best queso dip we're going to start with 2 lbs of Vita Queso blanco now I know that some people have a real aversion to using Vita yes I know it's processed cheese but this is queso and you're going to have to have something for your cheese so that's what this recipe calls for and this is that's what we use now let me stop right here and tell you that because we have 13 people coming I am doubling this recipe I have already put one batch of this queso in my crock pot and we're we're going to add the next batch in on top of it we're only showing you here on the counter one batch of queso because I didn't want to confuse people if I showed you the double then people would say well that doesn't match the recipe you put on on the description box so what I'm showing you is one batch but we're actually doubling it today so when you see the finished product it's actually going to be twice as much in the crockpot as what one batch would be you can decide if you want to do one batch or two if we were doing it just at home for us or when we used to do it for us and our kids we only did a single batch it was more than enough we always had some left over but since we've got 13 other people coming we're going to have to double it today okay so we have a 2B block of velv Queso blanco we're going to add to that one cup of whole meat milk 2 tablespoon of butter does it matter if it's salted or unsalted I don't think it matters at all I don't I just don't see that big of a difference I always buy salted butter but if you would prefer unsalted then definitely that's what you should use we've got a 4 oz can of chopped green chilies we are also using 2 tablespoons of pickled jalapenos now normally at home I buy these in a jar already diced but we are still here in Florida for the winter and I couldn't find the diced one so I got the sliced ones and I diced them myself but you need about two tablespoons of pickled jalapenos and it does need to say that they are pickled that's one of the things that gives this this queso such a good flavor so make sure you've got pickled jalapenos we are using one teaspoon of taco seasoning now you can use what you like if you like the hot taco seasoning then use it we use the original we think it's perfect for this um we're not people that like things extremely hot or spicy but you choose what you think you would like and it's the same with the diced green chilies if you like the hot then get the hot you'll see here that we got the mild but you use what you like and our last ingredient is 1/2 teaspoon of garlic powder not garlic salt it's garlic powder if you use garlic salt this is going to be probably too salty for you okay so let's get busy putting this together we're going to start with our Vita and we'll just take that out of the box and open it up here well there it is if I can get it open there we go and you know you could put this in as a whole block it would still melt but I think it helps if you um just kind of chop it up a little bit I just like to cut it right down the middle lay those two halves apart cut it down the middle again and then just kind of cut those into chunks it's really pretty simple I just Cube it up put them right in there I think it melts better this way but it's fine if if you don't want to fool with this and you just want to put it in as a big block it will still melt so either way whatever works for you I like to help it along and let it kind of get started quicker maybe it's because I'm not too patient I don't know I can already hear what my wife's thinking no you're you're mistaken I hear you I know what you're thinking you were thinking Tom impatient no I just like things to be done you know okay so next all we're going to do is pour in our cup of milk pour that right in we're going to add two tablespoons of butter there's one tablespoon there's two tablespoons we're going to add our can of diced green chilies those were not drained right they are not drained you want to use the juice on those all right and our 2 tablespoon of pickled jalapenos and if you want more of those then you can use more um 2 tbspoon is enough for for us but you can use as much as you want and we need one teaspoon of taco seasoning that wasn't quite a full teaspoon I'm going to get just a hair more okay and 1/2 teaspoon of garlic powder now does it get any easy easier than that all we have to do now is put the lid on you don't have to stir it or anything uh you you can you really don't have to because we're going to stir it about every 30 minutes we want it to I guess I should move that over there and let you see it shouldn't I so there you go now remember that's a double batch I had already put one batch in and then I showed you the second batch that I put in on top of it you're going to stir this about every 30 45 minutes something like that until it's melted it should take about 2 hours and we are going to set it on low can you see that tip it up just a little bit yeah okay so it's on low we're just going to let it sit here and heat and about every 30 40 45 minutes something like that I'll come by and stir it and it should be melted in about 2 hours when it's ready we'll come back and let you see what it looks like and we'll do a taste test we'll be right back I have been stirring our queso dip about every 40 45 minutes and it is completely melted and ready for us to serve with our taco bar tonight now you can see how creamy and smooth this is It's A Beautiful queso dip and so tasty now let me tell you that this is an extremely easy recipe to double triple quadruple you can fix as much of this as you want you can heat it in the microwave you can do it in a crock pot it's just a very very easy recipe to use also it's a great re recipe just to keep oh I just lost the spoon it's a great recipe to keep in your refrigerator if you're going to have movie night at your house and you are watching a Netflix movie you can just take a scoop or two out of the bowl that's in your refrigerator heat that little bit in the microwave and you have some dip to go with chips while you're watching a movie or a game night or whatever you're doing it's just a great recipe to keep on hand all right let let's do a little taste test you know Melissa and I love being snowbirds there's a lot to like about being a snowbird and being in Florida there's the warm weather it's much warmer than it is back home in Kentucky there's the beach what's not to love about the beach a heated pool I could go on and on and on about reasons that we love being a a snowbird but the best thing about being a snowbird is that we have made some wonderful wonderful friends here and we absolutely love spending the winter with them and just sharing our lives with them and doing things together and tonight we're going to have them all over for a taco bar and that's a special thing to do all right by the way we are using these Tostitos bites bite size bite-sized rounds and those are really good but I'm going to tell you these are our favorite chips and this is what we're serving tonight I just hadn't opened these bags so I'm going to do my taste test with what we already had opened but if you're looking for some really good chips these are really good okay you want the first bite babe that's okay I'll wait until we have do I'll wait until we have our taco bar but thank you okay here we [Music] go just as good as always those pickled jalapenos make this whole thing they add a little bit of heat now remember I used the mild green chilies so they did not add heat but those pickled jalapenos did did add a little Heat hit you right there in the back of the throat they're not so hot you can't stand it but they are a little spicy those are so good you know now that I've put chips on these or queso on these chips I have to eat them all oh well until that really upsets you yeah all right if you would we'd appreciate you going right below this video
