Even by the 7th or 8th centuries, technology had moved far beyond the Roman era. For example, they have stirrups and horse collars, making horses much more effective, and they were bred to be much bigger and stronger. Oxen are just too slow, even when pulling a cart or a plow.They also had pants, which the Romans banned in the late empire. Buttons are another dark ages innovation, but it's not clear when they came in. Romans used safety pins to keep their togas up, and the Chinese found buttons strange in the early 20th century. The Slavic steel plow (and the horse collar) made Northern Europe farmable, something the Romans never managed, and the population boomed as a result. Tanning and metallurgy also improved greatly. The big Eastern expansion of the Franks and Saxons was largely driven by technology improvements in mining. agriculture and water mills. The Vikings may be remembered as barbarians, but Viking ships could literally sail circles around Roman ships, because they could tack and sail across the wind. And so on.
