[Music] i found fresh tuna in honolulu so i started thinking with my brother how to eat the best way i'm just 78 pounds i go check the tail first eat bread in the middle and like that i think it's good it's like in the middle of nowhere in some fish market you just have to like know that's what's awesome about it maguro is tuna in japanese despite my stone name magulo maguro brothers [Music] we really care about fish we try keep good quality very tuna it's a melt in the mouth my name is zhu and my brother yo we running restaurants maguro brothers hawaii in honolulu chinatown we come from japan it's about seven years now only me and him studies nobody else he's a chef but my brother is different every day i go auction my style is not only japanese pokey local style and sashimi japanese style popular dish is pokeball chutoro donburi maguro dombri mixed dombres pokeball is japanese white rice and then tuna fish salt onion soy sauce chili sesame oil and algo always the seaweed all mix after the green onion do any finish before i come here honolulu i i used to work uh tsukiji fish market walk about tuna bender around 10 years i count six o'clock every morning i play porky everything i make sauce my job is restaurant side my brother caught fish in our lazy side that's why we together good me are a little different like a auction every day [Music] so bold catch tuna and then come back here wonderful fresh fish every day so shape and color you can tell no fat all the red color no fat almost the only business looking and studying the fish that's what makes him better for his customers he comes here three years yeah 7 30 a.m now i just got two weeks to now someday i have to find like a big fatty tuna sometime i don't see any today i got two total about four thousand dolla it was a good deal today i enjoy i go chinatown right now head off next time hawaii tuna everybody like it like i think water different it's like people come from japan some people never try a wild fresh tuna i say some people surprise this is pokefish we work down the street it's amazing that this is where it is never expected here it's the closest thing i've gotten to actually flying back to japan they're grilled fish too i got the garlic belly and it's tender it's really amazing i get the extra large salmon if i can use the local parlance it broke the mouth super soft a lot of sesame flavor in there you got the massage balls just exploding spicy and just delicious this looks like fresh coffee this morning i wonder if it tastes so good [Music] we're boing kawasaki kanagawa japan and my father was a chef in japan i have my father's restaurant my dad teach me a favorite sashimi style one day my father asked me to go hawaii to the open up the restaurant i image like russian outside skiji fish market when we started 2006 we knew not easy different as japan so many different type people in u.s maybe a flavor different then we start slowly firstly one fish other day two fish little by little we always thinking after one more location so our waikiki stores opened 2015.
