hey everyone and in this video I'm going to show you guys how to make an awesome classic Pokey recipe for starters we're going to use Ai and I have a really nice AI block here I'm going to take off some of that belly piece that has a little bit of uh senu we'll save that for something else and then I'm also going to take off the bloodline and you know a lot of people like to take that blood and fry it crispy and eat that um for Pokey it's not always the best because it's really it can be very fishy so we're going to take that off next I'm going to look for this get a nice nice section here and then I'm going to go ahead and dice that now you can get blocks at the store you can get steaks and you can dice those when you're getting a piece of ailo you really want to look for something that's very fresh some it's very bright has a nice color in it and then you're just going to go ahead and dice it I like to dice uh the AI you know a 3/4 of an inch piece I think is a great size half in might be a little too small when you move into 1 in you know those pieces might be just a little bit too big um to sort of blend all the flavors you want to put into your Pokey when you're dicing the fish uh you really want to try to stay away the pieces that have a lot of senu in them as well and these pieces that I'm putting there uh definitely don't have that senu next we're going to start putting all the ingredients in and uh here I have a uh a sweet Maui onion I'm going to go ahead just take a piece of that and you know I like to just go by eye when I'm making Pokey we have a recipe for you to follow to start with and eventually I think you guys will all settle in a recipe or a ratio that works for you next that goes in here is green onions and uh in Hawaii here you know we use the white and the green part so I'm going to use both of those and I like to slice the the the the onion nice and thin keeping in mind when you're going to eat Pokey you want all the flavors to come together and you don't really want one thing to stick out so you know the onions I I sliced uh a little thinner I the green onions I'm slicing thinner now I'm going to put in some fresh chopped Ginger and that really makes a huge difference in the flavor of the Pokey next is going in uh this is Liu the Hawaiian word is Limu the Japanese word is Ogo and really what that is is fresh seaweed for some heat a little bit of uh chili flakes and then fresh chopped garlic I'm going to be putting in for salt I'm going to put in this is Hawaiian salt it's called Al and this particular salt is Hawaiian salt and it has um Hawaiian Red Dirt so it gives a nice mineraly flavor we got a little bit of uh sesame oil toasted sesame oil that just went in and then I'm putting in shoyou or soy sauce and I put in a little bit of vegetable oil because I really like that uh texture that the oil would give the Pokey it gives it a nice shine and it adds to the uh nice velvety texture that the AI will have then we go ahead and plate this and you know so really really simple recipe but it really captures the essence of what uh contemporary Pokey is these [Music] days so here we have our AI poke and you know what's interesting about this version that we made here is it's really a cross between what is traditional ancient Hawaiian C which was pieces of raw fish with seaweed and crushed candl nuts and the addition of things like ginger garlic soy sauce uh onion green onion and that sesame oil as well and so you're really sort of bringing together that Melting Pot of what Hawaii is and so it's a it's a Hawaiian SL Asian version and this is the version that in a more contemporary way you're seeing in restaurants and on menus um um it's a super delicious uh version and I I think it's a great one for you to start with if you're getting into the world of Pokey and then you can Veer off from this recipe you know you take some of the things out you add some mayonnaise you add some Sriracha a little bit of of flying fish roll and then you have a different style of Pokey and really this is you know a baseline that allows you or a foundation that allows you to go in many directions so start with this recipe I think you'll find it to be very delicious and for many of you this is going to be your go-to recipe for poke for more recipes like this visit us at foodland.com [Music]
