when you taste on my sofa get this lovely bright fresh tiny green notes coming from a little bit citrus as well from the coriander seed and the lemon peel the bit rootedness from the Angelica some floral notes from some of the botanicals and spiciness in the grains Paris and Cuba birds because these five main pillars of flavor wanted to elevate all the bees in a cocktail so we created the lavish dope cocktail especially for the opening of lamb steak Mill in 2014 now to make the lava Stoke we use our big burgundy balloon grass just there and we're going to squeeze in a couple of wedges of lime to start off with so grab a nice fresh fragrant lime here and I'm going to cut it straight through the middle through the equator again straight through the middle and at a 45 degree angle this way I'm going to get more juice from the lime wedge when I squeeze it into the glass we've got about 10 15 mil of lime juice next up we're going to go for some non-alcoholic elderflower cordial and handling with a bar spoon there's five mil measure on the end of this so we need two of these we need some martini Bianco a little bit of vermouth as loads of botanicals in here you get some lovely vanilla raspberry elements coming through from the roof so we need 15 mils of this so one two three and we go 15 ml of martini Bianco and then to finish off 50 mils of Bombay Sapphire just a double measure and that goes now the reason why I'm adding all of these ingredients first without the ice is because I want them all to mix together beautifully if I had all the ice in it first and then you have things like the cordial that's sweet and non-alcoholic it actually freeze onto the ice and it would mix properly then you'd end up with a sour drink so this way we're going to end up with a balanced cocktail I'm going to add some cubed ice to it now that more ice the better when I fill this completely full of cubed ice and then we're going to stir this around so then we bring the temperature of the liquid down to the temperature of the ice cubes let's go for some ginger ale it gives a nice warm floral root element to the gin and we're going to pull this down the bass B to retain some of the effervescence similar fears we're in the cocktail so I'm going to put my thumb on top of the bar spoon facing down turn it upside down 90 degrees to the glass I can even stir it around at the same time and we want about 75 mil to 100 mil of the ginger ale now we just need the garnish and for that we're going to employ our trusty mandolin may never have seen these before but chefs use them all the time and you get really nice fine shavings of ginger so I'm going to take a little bit of ginger here definitely use the safety guard and run my piece of ginger through the knife on here keeping my fingers well away and here no it looks a bit like a potato but we're just going to snap that over top that's going to leach some of those lovely gingery notes into the cocktail and then finally we take nice big mint leaf like this and we spank it on the back of our hand and what this does it means that the hair follicles on the mint leaf kind of stand to attention and they release their aroma so then we move pot listen to the drink it's going to release its minty aroma on top of the drink it's a bit like if you're in your garden you walk around you man you barely smell it but if you brush your leg against the mint releases its aroma that's one do 90 to 95% what we taste comes what we smell and not from what we taste so that's the important thing about having a lovely garnish on top of a cocktail we're going to smell mint ginger the lime going to have the botanicals from the gym and the martini Bianca let's give it a taste now I'm a bit biased because they create it but I do think it's amazing cocktail but you could also make it using martini Rosato perhaps use martini dry or even the mighty Rosso in the winter match your vermouth to the season Cheers you
