Sometimes I get scared for you to be eating eggs, though you are only allergic to raw egg whites, God knows we shouldn't be giving room to luck when it comes to allergic reactions. Awesome episode though ☺️ PS: happy belated birthday 🎂

Someone I know who raises chickens said that the ease of peeling is largely determined by how old the eggs are. The fresher the egg, the harder it is to peel.

Her recommendation was to float your eggs. If it sinks, it likely won't peel well. If it's a little buoyant (sometimes they stand on end), it will probably peel well. If it floats at the top, your egg is likely bad.

Past that, use whatever peeling method generally works for you!

I still wonder how deviled eggs taste like. The spices shouldn't dominate it as much but without tasting I cannot say.

This particular dish reminds me a lot of senfeier, a German dish, but senfeier doesn't touch the yolks in the hardboiled eggs.
