about what what is this what is olive oil if we get into that or should we just start drinking i would like to know what the [ __ ] olive oil is too because it's the only juice it's the only juice of a fruit that's oil is that correct that is raw it's really raw fruit juice that is an oil the thing is unlike all these other fruits that you can eat directly off a tree the olive is inedible off the tree needs to be cured must be cured to leech out this bitter accurate substance called glycosides to make it palatable and that's why olives there's a lot of people out there who like olive oil and don't like olives and that makes perfect sense because the olive is like a cured product and olive oil is a raw fresh juice they're completely different products from the same origin this is literally fruit juice it is a raw you just freaked me out when you said that this olive oil belongs in the produce section of a grocery store it does not belong with the other oils it's fundamentally different and the health benefits are different and the way you digest it is different um anyway do you want to get back to keep talking about it yeah i want to [ __ ] taste it let's taste it and then we'll keep going and this is the first time you brought in the oil from turkey yes it's pretty [ __ ] special yeah just like you want to taste a piece of cheese before you cook with it you want to taste olive oil independent of food to get the real flavor and viscosity and that will trigger ideas as to like what you might want to use it with so you want to put in the palm of your hand cup it with the other hand and warm the oil your bottom palm is warming it while the top palm traps the aromas and after about 20 or 30 seconds the first thing you want to do is just smell the oil get a little that mintiness fresh herbs very clean and a great oil should really transport you to the field from which it comes i lived on the fourth floor in queens every couple days they'd [ __ ] mow the lawn and you'd get that smell through the window takes you right there right there right to my right to my little right to my little futon yeah [Music] now for a layman just tasting you would imagine tasting it with wine you just want to put some air towards it it's not you're never going to do it as perfect as like he does he spits it out [ __ ] mist flies he can never get it perfect it's like i uh circular breathe it out the nostrils to maximize the uh organoleptic properties and you just i don't know it's a three coffer it is it's tremendous oil tremendous excellent it's really especially sure [Music] not as grassy a little sweeter and more viscosity buttery and creamy and i like to sometimes a little more pecan i like it it's like szechuan peppercorns sizzles yeah sizzles i like that a lot yeah there's like an everlasting like burn persistence yeah that's persistent as [ __ ] if you taste an oil and it drops off right away you know something's wrong a great oil you should be able to taste it and sit and i'm not i'm serious 20 minutes later it's still reverberating and echoing and you can taste it in your head i love to get cozy something that's been stewing for a very long time something that takes five days to [ __ ] make tons of olive oil beans greens [Music] yummy [Music] oh wow we just eat it cold i i i know remember you have a toaster oven is there any way to warm things up if not we can eat it i have an idea how we're gonna warm it we're going to use your cultivar frantoyo because ah this dish is from central italy and the most common cultivar that is used in this dish in central italy is the french that's what you are bolita is based on four primary ingredients freshly staled bread black cabbage which is called cavalo narrow in italian white cannellini
