[Music] so before we begin i must admit i am a huge fan of mushrooms and i'll tell you why they're such a versatile ingredient they're very affordable and they're super good for you anyways with that being said today i'm going to show you how to make a classic spanish mushroom dish we're talking spanish vinegar and garlic mushrooms this dish helps in the region of murphy and southeastern spain where it's known as champinones and let me tell you this dish has so many beautiful flavors to it the mushrooms have the most incredible texture ever and it's very easy to make folks this is one of those dishes that comes together so quickly and has so many great flavors you are not gonna believe it this is your first time here don't forget to smash that subscribe button and click on the bell vinegar and garlic sauce i'm gonna grab 5 cloves of garlic remove the skins from the cloves and roughly chop the garlic then we'll add in our chopped garlic into a mortar pinch in a little sea salt and then using a pestle pound down on the garlic until you form a paste-like texture then i'm going to grab a handful of fresh parsley finely chop it and add in about two tablespoons of the finely chopped parsley into the mortar which is eight grams then i'm going to measure out a quarter cup of white wine vinegar which is about 60 milliliters now to make this recipe you can use other vinegars such as red wine vinegar or apple cider vinegar however the white wine vinegar is the one that's traditionally used to make this recipe i'm going to add the white wine vinegar into the mortar and then give this a mix that way all the ingredients are evenly mixed together and set it aside okay let's move on to the star of the show the mushrooms i've got 12 button mushrooms here you can use other mushrooms if you like however the button mushrooms are the best ones for this recipe as their mild flavor works perfectly with that vinegar and garlic sauce i'm going to add the mushrooms into a colander and we'll give them a quick rinse under some cold running water to remove any of the excess dirt then using a disc cloth i'm going to pat each mushroom completely dry and then cut each mushroom in half lengthwise all right let's start cooking up our dish i'm gonna grab a large fry pan important to use a larger pan here now all those mushrooms fit in there in a single layer and i'm gonna heat it with a medium high heat now we're not going to add any olive oil into the pan right now we're going to dry heat it between three to four minutes then we can get nice and hot then we'll add in our olive oil that way it doesn't lose any of its beautiful flavor after heating the pan for about four minutes on a medium-high heat and it's nice and hot i'm gonna add in two tablespoons of extra virgin olive oil which is about 30 milliliters and we'll immediately add in our mushrooms into the pan as well and we'll start mixing this together that way each piece of mushroom is evenly coated in that olive oil once all the mushrooms have been coated in that olive oil you want to put them on a single layer making sure that they're all cut side down and we're going to cook our mushrooms like this for about four minutes without mixing the mushrooms this is going to give them a beautiful brown crusty here which at the end gives the mushrooms the most incredible texture and flavor after about four minutes i'm going to start mixing the mushrooms around again that way they're evenly sauteed all around and as you can see by cooking them for those four minutes without moving them we ended up with a beautiful brown crusty sear on the cut side of the mushrooms after mixing the mushrooms for about two minutes and they're all evenly sauteed i'm going to lower the fire to a low medium heat add in our vinegar and garlic sauce into the pan and season everything with sea salt and freshly cracked black pepper and we'll give this a quick mix that way all the ingredients are evenly mixed together and we're going to simmer this on a low medium heat between four to five minutes or until all that sauce has been incorporated into the mushrooms after about five minutes and all that sauce has been incorporated into the mushrooms and there's virtually no sauce left in the pan this dish is ready to go i'm going to remove the pan from the heat transfer everything into a serving dish and we'll sprinkle it with some freshly chopped parsley our spanish vinegar and garlic mushrooms are done champignonis you saw this very easy to make simple ingredients let's give it a try and see how it tastes i'm telling you the aromas in the kitchen are mind-blowing good here we go absolutely delicious all that garlic it's an insane amount of garlic and the white wine vinegar gives it the perfect balance but the beautiful dish is the texture of those mushrooms they have an incredible sear on the outside so the texture it is absolutely perfect folks you saw this easy to make simple
