hey guys thanks stuff my ballistic BBQ continuation my burger series if you stumbled upon this video looking for a really good copy of the Big Mac by McDonald's search no more you found it there are a few videos out there that I've personally watched and I can tell you I put a lot of effort into trying to nail this recipe first of all thank you fit ang youtuber she suggested that I do this video it's been a lot of fun actually very challenging the first thing we're going to start making is the sauce there are two recipes for the sauce floating around one is a video that was actually produced by McDonald's the other one is on the net I found it was an article supposedly a recipe out of the managers handbook from the 60s or whatever and I made both recipes and the one that was actually produced by McDonald's I think is the closest to this today I actually went to McDonald's bought a Big Mac and at the drive-through window I asked him for a side of the specials Big Mac sauce and they gave me this like anaplastic lid or something this is what I used as my guideline to reproduce the sauce so without any further ado let's get going with the sauce alright so these are the amounts that I came up with 1 cup + 4 tablespoons of mayonnaise 3 teaspoons of sweet pickle relish 1 tablespoon of yellow mustard 1 teaspoon of white wine vinegar 1 teaspoon of onion powder 1 teaspoon of garlic powder 1 teaspoon of ground paprika now all these ingredients together it looked like the McDonald's special sauce but it just wasn't quite as sweet so I suspect that the guy on the video left out sugar and that's what I did I added two teaspoons of sugar and it tasted pretty spot-on so plus 2 teaspoons of white sugar because we're going to place all those ingredients in a small bowl and just whisk it really well okay then the next step which i think is probably the most important step is recreating that bun now as you all know the Big Mac is made with a three level bun they have what they call the crown which is the top the heel which is the bottom and that center section which they call the the club section you can't buy a bun like that anywhere so what we're going to have to do is fabricate our own first thing I want to start with though is get a smaller bun with the sesame seeds on now it's kind of funny when you actually dissect the big mech like I did today they call it the Big Mac but really if you go by weight and size and thickness of the patty it's really not that big of a hamburger and the bun is no exception it's not a real big bun so anyway let's get going with that making that three level bun all right now most of the other videos that you see you know reproducing the Big Mac what they're doing is they're actually cutting a section off the top bun and they're using that as the center section and I get it you know they're trying to not be wasteful but I'm going for accuracy here and the truth is this heel section it actually has the same consistency as the the original Big Mac so what I'm going to do is just cut off the bottom layer that's the crust with a nice sharp red knife here like that there you go now look instead of a bun that's basically the same thickness as this now we got that it's going to be more like the real thing here all right let's get going with the meat now okay now for the patties I'm using 80/20 and basically I made two meatballs a little bit bigger than a golf ball and I'm just going to flatten these out now again Big Macs are not big patties and there are pretty darn thin pieces of meat here so it's not going to be my typical party burger so we're going to get these really really thin now after it's flattened out you can see I mean so less than a quarter of an inch thick just going to round it make it look pretty okay now obviously a burger this thin raw it's going to be extremely hard to handle so we have a couple options I saw one video where the guy froze it no I'm not going to do that I make all my burgers on parchment paper I'm going to leave it on the parchment paper but to make it more manageable what I'm going to do is just take scissors you can take a knife or even tear it I'm just going to tear it right around or cut it right around the burger and I'm going to leave it on there until I'm ready to put it on my flattop and the cool thing about doing that is you can do it to several burgers and stack them put them in the fridge whatever and you'll see it'll go onto the flattop and just stay nice and intact so I'm going to go ahead and get this the next patty done and then we'll move on to the next step and here we go two completed patties as you can see they're easy to manage we're ready to get these on the grill but before we do what I want to do is just cover the garnishes that are going to go on these burgers because I think it's a good idea these cooks so fast is to have everything ready and on hand before you take these out to the grill now the garnishes on the Big Mac are really really simple we've got here extremely finely minced onion to pickle slices some really finely shredded lettuce and I'm going with a slice of American cheese here you know McDonald's website says I use some funky blend of cheese I don't know but tastes like American cheese to me it has the same texture that's what I'm going with so American cheese we're ready to get grilling now so let's go out to my stainless steel flattop outside and get these burgers going alright so we are ready to cook these burgers again on the parchment yep no problems at all little salt little pepper now these buns are going to need a little bit of a toast on them you do this very quickly you see the patties are cooking really fast I just want to you know see that coming up the side the bugs have a nice touch going to put them off to the side here on to the gray to get these guys flipped a little bit more smoked pepper all right looks good these guys off all right let's go make some Big Macs all right guys it's time to make the burger now we have the bottom button metal button top crown bun first thing we're going to do is put some sauce on this bottom we're going to throw on some onion anybody has ever had a Big Mac this looks very familiar so when that shredded lettuce piece of American cheese patty and in the middle by going to go with more sauce more onion lettuce they go with two pickles again I'm going original here second party here we go guys the Big Mac let me give this a shot these a lot like the Big Mac but only the difference is it doesn't have that you know that kind of a core industrialized kind of mass-produced taste tastes more homemade better kind of imagine this is the old burgers at Ray Kroc came up with back in the day anyway thank you fit ang for the suggestion really fun cook its if you like Big Macs or if you've never had one maybe you live in a country that there's no McDonald's they're already countries and no McDonald's give this a shot I mean it's a really good reproduction the sauce is pretty spot-on anyway guys thanks again keep the suggestions coming I've got more burger requests on deck I'll see you in the next video
