i asked myself if i wanted a philly cheesesteak that tastes great but is done in the least amount of time possible with basic ingredients and a simple cleanup how would i do it well this cheesesteak took just 22 minutes to make including a simple cheese whiz [Music] hey everyone i'm ethan a home cooking nerd who likes to find better ways to cook and share them with all of you now is this about to be the best cheesesteak you've ever had probably not though could depend on how many cheese steaks and where you've had your cheesesteaks in the past but for coming together in just a little time that it does this one is pretty damn solid so i'll run through the recipe and then i'll meet you all right back here for the taste test the philly cheesesteak is bread thinly sliced steak with or without onions and your choice of cheese but i like the cheese whiz the onions take the longest so let's start there first trim some of the fat off the outer rim of the steak then slice it thin and we're going to place this on a cast iron over low heat with a drizzle of peanut oil or whatever neutral tasting oil you have the beef fat is going to render out and provide tons of extra bp flavor for the onions to cook it meanwhile grab a sweet vidalia onion and cut it into a pretty small dice not only does this cook faster but the small pieces spread oniony flavor uniformly throughout the cheesesteak move the beef fat pieces from the oil then toss the onions onto the fat to cook along with a small pinch of salt we're looking for the onions to just get translucent which will probably take around 10 minutes or so while those cook let's talk steak i picked up a boneless new york strip steak because it was a good deal but pick out any steak you want just try to get one with some nice fat marbling throughout first cut the steak in half then cut slices across the grain as thin as possible because we want it to be tender not chewy the key here is to use a really sharp and thin knife now i would like to point out you could also toss the steak in the freezer for an hour to if you do have the time but again i wanted to make mine as fast as possible also cutting across the grain here is pretty critical as it shortens the muscle fibers so it's less chewy here's a quick look at the difference [Music] with the slices as thin as possible i like to give it one cut across again just to shorten those pieces a bit more but do it however you want at the stove slide the translucent onions to the back of the cast iron then i added back those crispy little fat pieces then the steak along with another little pinch of salt we want to cook the steak over low heat we don't really want these to become fajitas where the steaming juices are evaporated into the air we want to retain those juices for the actual sandwich while that's cooking let's talk cheese now a lot of people like provolone but i'll save that for my roast pork from denix for a cheesesteak i want cheese whiz and here's the easiest way that i know how to make a decent version set a non-stick pan over low heat and add 30 grams of evaporated milk then break up two slices of american cheese and add it along with 28 grams of shredded cheddar while stirring occasionally let this melt down into a cohesive sauce the evaporated milk has powerful emulsifiers along with the american to keep it nice and creamy with a little extra flavor from the shredded cheddar then just pour that into a bowl and clean that cheese pan as soon as possible it's a pain if you let it dry on there 30 seconds now saves you a couple minutes after you've eaten now let's combine the components turn the heat off and toss together the onions and steak until it's well mixed but before adding the cheese give the steak a taste it should taste well seasoned if it does taste a little flat just add a touch more salt and mix it in then we're going to drizzle over half the cheese sauce into our meat mixture saving the other half to top at the end and how could i forget to talk about the bread so i've been making my hoagie roll recipe like every other week since i released that video but if you don't want to make them just pick up the best looking roll in your grocery store then to assemble we pile the steak and cheese and onion mixture onto the roll then finish with another extra drizzle of that cheese whiz over top and there we go to make it more sandwich shop-esque wrap it tightly in some parchment paper to let those juices kind of work into the bread it's actually kind of nice when it's a little bit soggy then we can slice and enjoy my friends alright everybody it's taste test time i just we're just we're just gonna bite in i swear i eat cheese steaks like two times as fast as any other food anytime i have them they're just something about them is super addicting now i'm not against people putting on condiments on their philly cheese egg i know some people think that's kind of against the rules but i mean a little little ketchup dip every every bite or so is a welcome addition maybe we get a little pickled onion on there too [Music] that is it right there a little bit of pickled onions with the sweet vidalia onions that have been cooked down but everybody that's gonna wrap it up for the video go make this you know get whatever cheese you like get it as thinly sliced as you can work those beefy flavors into the onions and then get a bread roll that kicks ass and you're gonna be in for a pretty great cheesesteak that comes together in about 25 minutes so that's going to wrap it up for this one recipe for this
