welcome back everybody today I'm going to be making tamale pie this is not a pie nor tamales but it's good okay so first things first I'm going to make the ground beef filling for this tamale pie and actually I don't know why they call it the mana pie it's not a pie it's not a thermal or thermal is but basically it's a corn bread baked casserole it's very versatile you can add tons of ingredients to it that you like this is the combo I go for so in a preheated pan with about two tablespoons of oil I'm adding my ground beef and I am not sure using a lean ground beef because that's just if you're using something like 80/20 that has a higher fat to meat ratio so you might not need I'm gonna go in with one beef bullion cube you don't have to use that you could use these salts or salt here I have a 1/2 teaspoon of ground cumin a full teaspoon of onion powder a full teaspoon of garlic powder going in and I'm also going to be using one and a half tablespoons of chili powder black pepper no I'm just going to break this down and continue cooking and sautéing my meat okay so I have this coat I think I want to add more chili powder to this so I'm gonna go in with another half tablespoon of chili powder if that's too much for your taste buds or your taste or preference then you can skip that and just stick with the tablespoon and a half but I really want a nice chili powder flavor because I'm gonna make this sort of like a chili an enchilada gravy with ground beef in it so now I'm going to add two tablespoons of all-purpose flour by the way for those of you that always ask where I get my cookware this pot is actually hello home brand I purchased it from H Mart which is my local Korean grocery store so there you have it that's that okay so I worked in the flour I want to sort of create basically a roux and that's it for this let's go ahead and do that let's start with a cup and a half let me say that was wasn't quite a cut maybe only a couple work I don't need this extra saucy really let's see and you'll see right away it'll thicken into a gravy okay I'm gonna let this gently simmer for about five minutes and if it needs more water I will add a little more water but I think this is exactly what I want so honestly I only used one cup eight fluid ounces of water so keep one to one and a half cups of water on hand because not everyone's tablespoon of all-purpose flour is going to be the same so okay so I turned off the heat I shut it off and here's what I ended up with this is the the liquid in this basically turned into a thickened chili sauce gravy it smells great and you'll want to taste it for salt or seasoning you can add a pinch of salt in here if you think it needs it but that's it I'm gonna let this hang out and set for about ten minutes just to sort of cool off a little bit and now I'm gonna work on my cornbread mixture here in my bowl I have one full cup of yellow cornmeal a half a cup of all-purpose flour one tablespoon of baking powder two tablespoons of sugar 1/2 teaspoon of salt I'm going to give that a good mix and with this recipe you could use you could use jiffy cornbread mix with this actually growing up that's actually what we would do we just use you know a box of store-bought cornbread mix make that and then pour it over shredded chicken or like today I like the ground beef so you know there's a lot of things you could do to make it convenient more convenient okay so that's mixed now I'm going to add one large egg 1 tablespoon of oil you can also use maybe 2 to 3 tablespoons of melted butter if you want and I'm going to add one can of creamed corn it's about one and a quarter cups it measured out about one and a quarter cups of creamed corn but one can I'm also going to add a half cup of milk give that a mix and here you have a cornbread mixture but what I like to do is basically make jalapeno cheddar cornbread and to that I'm going to add let's give that a mix I'm gonna add a half cup of shredded cheddar cheese and I don't think I'm gonna go with the full quarter cup of jalapenos my son's gonna eat this so I like the flavor but basically a quarter cup of fresh diced jalapeno works in this but I went with maybe two tablespoons because my kid's gonna eat this and he does like a little bit of spice but not a lot so here is the cornbread mixture good to go okay so here I have a 2.7 quart baking dish this is not a nine by thirteen this is like a twelve by eight or an eight by twelve I actually do have a recipe that uses chicken and it's a larger quantity that would fit in a nine by 13 baking dish it's for chicken family pie you can check the description below or I'll probably link it somewhere here and you can click on that to sort of see that recipe the ratios are different for the cornbread mix and things like that anyways buttered baking dish a 2.7 quart baking dish I'm going to add half of my cornbread mixture just kind of give it spread it on the bottom so now what I'm going to do is add my ground beef mixture kind of doesn't have to be perfect okay now go in with a cup of shredded cheese actually this is like a cup one and a quarter cups of cheese go over with the rest of your cornbread mix so I'm going to bake this uncovered in a predetermine a 400 degrees Fahrenheit for about 22 minutes to 25 minutes like probably around the 20 minute mark start waiting on it give it a you know check it see if it's cooked through okay into the oven for about 22 to 25 minutes and here is my bait cornbread casserole known as the manna pie so as you can see it pretty much covered up all of that beef that was exposed the cornbread looks fantastic I got that golden brown color from some of the cheese kind of mixing in with the cornbread so I'm gonna let this cool for about 10 minutes you don't want it to cool completely but you do want to let it sit before you serve that's just perfect see how this comes out alright go so here is a piece actually the corner piece is probably my favorite because of this crust that forms right here on the edge so I'm going to add a dollop of sour cream right on top then I get a little bit of my spring onion or scallions and that is
