roll up some strip states whiskey great damn grill I mean what's going on with this winter these storms keep coming coming hey it's enough to the cabin fever but to hell with that let's get a fire going man and cook up some steak you smell it yeah you smell good as soon as we find his damn grill you know it's kind of a strange thing we keep getting these emails and comments to our vids saying man I can't wait for summer so I can pull out my barbecue grill are you kidding me pull it out now yes good oh yeah it's time to cook up some steak and whiskey great all right we're all set up here man we got all the ingredients we need and we're doing some indirect grilling here we got the charcoal on one side got a good amount of charcoal real hot it's gonna be cooking up steaks but first thing here we want to uh we want to make the gravy need some veggies like you know this garlic here the onion the carrot a couple stalks of celery and you're just gonna rough cut them up we're uh we're gonna add a lot of flavor to our gravy with a couple of these veggies of course here this is what it's all about we've got some inch and a half cut New York strip steaks these are all Angus steaks and cut up for special by our butcher you want to get a good quality steak especially you couldn't in the winter like this now I really don't need to take time to show you how to cut up your own veggies you know all about that what the heck good no all right we've got most of our veggies cut up here I'm not chopping up two or three closed garlic and let's get this gravy going now I have a four quart two black iron the saucepan there and I'm throwing about a quarter cup of oil cooking oil in there David there you are we're gonna saute these up and this is going to take a while because you want to caramelize all these veggies who want to get all that sugar out of there get it kind of brown you know what I'm saying so this is gonna take a few minutes try to get yourself a good hot fire like that man I know that neighbors are starting to smell this already they'll be on their way over here I've got a couple cloves of garlic throw them in of course we don't really want to burn the garlic but we're gonna caramelize all this just like I said now the veggies have been cooked down and I'm gonna pull them out of the remaining oil we're gonna make ourselves a gravy loop make sure you get all those veggies left all right let's make a base of this great like I said we're making a roux here and of course we're gonna use some butter and I've got about 4 tablespoons of sweet butter there and we're gonna add it to the remaining oil and that pan melt it down and here I've got some flour and the amount of butter and oil we're using there we're probably going to use about four tablespoons of flour here we'll pour about one tablespoon of thyme in there and just mix it into that melted butter and oil oh yeah you just keep doing that because this is gonna thicken your grading real good you've got to be careful now you'll want to overcook this you want to get it just slightly Brown all right the roux is done here's the magic of this grape gonna put about maybe a third or even a half cup good whisp you want to be careful you don't get a flare-up there you stay away from the fire pour that in there give it a good mix now you don't want to overdo your whiskey you want to see some familiar pitmaster now to that I'm going to add about two cups of beef stock this is a good hearty beef stock just makes that gravy taste real good Hey take a look at that huh it's gonna cook down for about 20 minutes to a half hour it'll get nice and thick you just got to be patient and here of course we're throwing the rest of those veggies right back in there man vegetarians gonna be happy about this recipe now a little salt and pepper to taste maybe a teaspoon of salt at least a teaspoon of fresh ground black pepper corn even more if you like pepper in a grave yeah all right maybe 15 minutes has gone by we've got a nice simmer going on here gravy is starting to thicken up a bit it's time to get these steaks on the grill now you uh you can use your favorite flavorings you want on your steak at least use some good salt and pepper this here is just a blend of salt pepper garlic flake we're going to take them put them directly over to hot coals is we want to sear these here a few minutes each side oh yeah take a look at that keep stirring that gravy all right like I said you just want to sear these steaks until you get a nice layer of flavor on the top man you know what that's all about give them a flip oh yeah now those steaks have been seared and they're rare on the inside so we're gonna move them indirect now on this grill put the cover on depending how thick your steaks are how much meat you got there depend how long it takes now we like our steaks medium rare especially a good quality angus strip steak like this you can cook it the way you want I see it's time to pull them off the grill baby reven nice and thick let these steaks rest for a few minutes all right it's time to plate it up take some of his whiskey gravy pour it all over the strip Kevin Hill there come aboard to speak it's done over there as always uh we're gonna have to eat some of this right in front and we do apologize so the next time you're looking to beat down winter dig
