[Music] welcome to Chopstick travel I'm Luke Martin and today is day three of our Moroccan road trip today we are in the coastal town of esaa it's known for being an extremely Windy City and also for its beautiful architecture Esa of Port City popular with Taurus and we are going to be discovering the best of esa's quisine with our friends at Moroccan food tour it's going to be a great episode so make sure you stay tuned till the end let's go eat some Moroccan [Music] food this is probably the windiest place I've ever visited in my life you see how windy it is up here at the Watchtower a bit windy no not the windy not the windy a little windy then so we're just checking the old city wall of s so you can see it's all built of stone it's remained pretty much untouched something you must do when visiting Morocco stay at a traditional Riad usually they'll have this sort of open courtyard in the middle this one has a beautiful palm tree growing up all these traditional Moroccan architecture with all the beautiful tiling it just makes for such a beautiful place to take photos and stay it's really something you have to do in Morocco we've got a typical Moroccan breakfast which basically includes lots of different types of breads exactly lots of little things yes lots of and little things yes sweet and savory this is the U this is actually uh if you're not having U or argan oil in Isa like where are you having uh This Is The Place actually for U and Argan and we have here emu U which is like almond uh honey and argan oil and this is the Argan Oil Argan Oil that's honey some honey back here Jam but Jak Jam all kinds of different things yeah yeah this is definitely how you want to start your day here in asira yeah let's dig in okay let's try the amlu almond look at how creamy that is well you can still see little chunks of almond in there too yeah it's like a almond butter almond butter almond butter but you has the little honey and like a Argan AR taste I want to taste just the Argan Oil by itself though this is like a specialty here in Morocco but specifically here in yeah specifically here in EST yeah it's a tree that grows mainly here it's light but it's got like a a smell yeah it's a nice nuty flavor and you get like a nice aftertaste to it yeah it's good for your hair too yeah yeah yeah but there are two kinds of Argan Oil there's the culinary Argan Oil there's the Cosmetic Argan Oil oh okay yeah so this one this one is the eatable one what is the name of this bread it's called there is no there's no vowels Ms MN all right an N I don't know how to say but I know it's delicious kind of pulls apart yum yeah it's actually all the different layers that fig Jam is beautiful too nice and sweet so we've got quite a breakfast but we'll catch back up with you after breakfast cuz we're going to be eating a lot more here Inu today [Music] [Music] so this is actually my third trip to Morocco I visited nearly all the most famous places to visit I think in Morocco but I have to say asaa is probably the most beautiful town I visited in Morocco it's absolutely gorgeous the old town is so beautiful right on the coast you get this lovely Breeze now we're just heading over to the port there are thousands of Seagulls everywhere and we're just checking out all the sites before we head for lunch so the port here in es is probably the number one attraction that you have to come see you can see all these blue boats that are iconic here in esira so many seagull seagull everywhere the seagull are also part of esa's image and historically this port was a very important ship building area nowadays just popular with the tourist there's some fish vendors as well of course we're just taking a little stroll through and it is crazy windy here this is still very much a working port and the target fish here is sardines you can see I've got my hood up because uh well maybe you can tell on the ground but uh there is lots of Seagulls which means lots of seagull poop as well [Music] so we've come to a place that's called fishburger fish that's the name of the place yeah exactly as you can guess they sell fish burgers exactly not very creative of the name but very descriptive so we're waiting for our Burgers to arrive but they just brought us to some sardine Croquettes CET so sardines like we we just saw at the Port there it's a important catch here in of course let's try one of these out a little mayo dip oh hot hot that sauce is great too oh yeah well you can taste the Sardis in there it's not just like a deep fried B like there's actually flavor in there exactly exactly fish burger has arrived here at fish burger and we've got a crispy white fish Burger lots of fresh veggies in there some sauce we also got a sardine Burger side onion rings little Moroccan style Western fish yeah let tried it what was it so good I say hits the spot yeah some spice in there too I love that that's Su really crispy not super salty homemade bun with some fla Sesame on top the the Cabbage there like a little cool saw sort of dressing inside oh that is wonderful after lots and lots of traditional Moroccan food it's nice to have a little change yum seriously good burger wow got a little I don't know garlic hoi or something homemade oh good it's messy like it should be like a like a burger should be this one is the Sardine Burger there's like two sardine patties looks like some cheese on there as well exactly let's try this one too y also very good it's a sorted definitely like a sardine flavor but fresh not like too much yeah but really their bun is look so good really good fish burger if you're craving uh something like I said a little bit more Western that's the place to go here in esira but we're going to go try something a little bit more Moroccan next so we popped into another fish market this one is deep within the Medina and they are selling lots of different types of seafood once again but our eyes landed on the fresh shrimp so we bought some shrimp and we're going to take it down the street to a restaurant to cook up a shrimp t [Music] [Music] speee for so we just popped into a super local restaurant we brought our uh our shrimp this a chef here very friendly we brought a shrimp from the market and that's apparently the only way you can really do it for this restaurant you got to bring your own ingredients and then they'll cook it up for you and we we are having Tajin so like the most quintessential Moroccan dish it's actually the the name of the dish that is cooked in so a bunch of spices and uh he just put the shrimp in there there's a lemon some Chili Peppers smells good thank you so much looking forward to trying this this welcome wow thank you so [Music] much beautiful so our first of the trip first SE of the trip yeah never I never made it that far without yeah that's that's accomplishment make it 3 days with no T oh yeah and this is a shrimpin oh yeah but you can have Tajin with chicken you can haveen with beef lamb what about the sauce do it change between Tajin or is it always this tomato based sauce uh it changes between each like very seasonal very Regional be paprika P cilantro garlic lime juice uh yeah human those all right let's take it it's going to be smoking hot oh yeah try to burn your finger I can get a shrimp without burning [Music] myself good that's good yeah once it start to cool down that sauce really thickens up covering the shrimp the shrimp really shrunk up but there's a ton of shrimp in there that's a lot yeah really good I don't think I've ever tried this shrimp T before well no no no have it have it yet but here on the coast I mean it seems like the obvious choice to go for the fresh shrimp fresh seafood exactly that flavor is really good I mean it's not just the tomato sauce it's spiced up with all kinds of different things the best part about the tajine is soaking everything up with your bread you can really get all that flavor soaked into the bread there really like it with the shrimp oh yeah yeah kind go I mean the chicken and the beef is all good but anything in itene is really good y I love the culture around buying the ingredients and bringing it to the restaurant to have cook for you but usually they'll have a menu where they already have the fish there but here it's like you don't have a choice you're going to bring your stuff exactly bring your veggies to be like that they just provide the bread and the you bring the Main Ingredients the thing that you want to be than first what do you think I like the taste it's really unique I can taste a lot of spice kilman Tomatoes but you guys eat it with bread but I love vegetables so I'm going to have the with my wiie [Music] [Laughter] really good got to come here and a can't visit Morocco without a tajine at least one tajine of the many many different kinds but shrimp in ESO right on the coast cannot complain that was some delicious delicious tajine so for dinner tonight we are going to the best place to eat no matter where you are in the world and that is at a locals home so we're going for some homecooked food tonight and not just any food probably my favorite Moroccan food of them all we're having pastilla that's a skill [Music] egg or this is small EG never seen that before we have couple of things in the menu today uh cooked by of course uh the wonderful hands of of course Kad is a fantastic host uh the like amount of care and love that she puts in her dishes wow so we have here Pasa chicken and almond pasa y wow beautifully decorated too of course P actually is a a pie uh chicken almonds like sweet and saory all wrapped in F actually has three different layers yeah the chicken the almonds and then there's like another uh layer which is what brings the the moisture and the sauce together it's like a onion uh sauce reduction with eggs it it almost it looks like a sweet pie but but it's actually served as like a main Savory dish yeah and it's topped with a a sweet and we have sh something they off we have something else in the menu uh today as well uh of course uh a couscous cuscus yeah really only this are what the [Music] sauce so not just pastilla tonight we have another Quint essential Moroccan food the couscous and we were we all just realized that this is the first non Seafood meal we've had in about 3 days oh we've got beef couscous tonight and chicken ptia and this couscous looks absolutely incredible so just little kind of pasta pearls semolina with topped with a bunch of different veggies turnup uh carrots chickpeas cabbage and beef [Music] I don't want get actually even more vegetables going on top we've got some zucchini some pumpkin and some red peppers as well it's like a little pyramid of couscous smells so incredible look at this incredible wow all right let's give the couscous a try it's completely soaked in that [Music] sauce wow yeah wow very tast so good like I feel like home truly I like I feel like exactly mom Grandma's couscous with no no no doubts it's like yeah I love how the like even though it's soaked in the sauce but you can still feel the little ex they're not soggy they're just the the fluffiest the pearls are the high quality or the better couscous yeah that's why actually we steam it we don't pour the but water on on okay you know to keep it to keep it fluffy as fluffy as possible yeah and get the beef a [Music] dry I don't know if it's just because I haven't eaten anything but fish in 3 days but that beef tastes incredible wow yeah that is a nice change Mr H you are a lucky man absolutely incredible thank you so much for having us this is something interesting apparently this goes really well with the couscous yeah the buttermilk buttermilk with couscous it's sour but it goes well with this it's a little sweet me this is such a good dealy we haven't even dug into the past the meat look at how soft this is is so juicy and soft ridiculously tender wow with the honors oh yes that's that puts a lot of PR me this is better than a wedding cake so there's honey on top of there and almonds and and a little sugar as well yeah and then some quail eggs that are rolled in poppy seeds yeah and then this is like a like a sweet yeah with with almonds inside too yes fill filled with almond paste yeah look how figy it is W two pieces right look how thick it is I didn't realize it was that thick [Laughter] too I remember having this dish cooked by your mother yeah and it was definitely one of the most memorable Foods I ever tasted in Morocco so I was looking forward to trying this again and this one looks just as good let's try y good sweet and savory combination yeah a weird combination isn't it no I love it really I do yeah and then you get that crunchy like really flaky feelo and then there's some onion like an introduction in there which gives it a little sweetness as well yum is there some like or orange or like some kind of like orange blossom water Orange Blossom yeah so the the the Almond actually will have cinnamon orange blossom water okay of course sugar yeah you can taste it's a little fruity and then the uh chicken will have uh turmeric ginger powder um yeah no yeah a little bit of uh maybe R water yeah amazing l that but some of the spes that was an unforgettable experience huge thank you to Hussein and hadija for being incredible hosts and cooking some delicious food I went in there thinking Pasa was uh what I was excited about but I was blown away by the couscous the couscous was incredible so it was the ptia but that couscous was definitely the best one I've ever tried in my life incredible huge thank you to you for watching make sure to subscribe if
