eat rotisserie chicken in Syria and it's on the next level but hold on where exactly are we welcome to Damascus Syria founded in the third millennium BC it's one of the world's oldest continually inhabited cities it's a city where you can walk on streets straight out of the Bible the oldest street in Damascus that Paul the Apostle walked St ananus walked at admire the sacred umad mosque and be mesmerized exploring busy ancient Lanes when it comes to street food get ready for Non-Stop Delicacies that will have your taste buds rejoicing but to begin this Syrian street food tour let's find out what just about everyone in Damascus loves to eat in the morning Ramy great to be in Damascus oh man most welcome meet Ramy from Syrian guides whose mission is is to show the beauty of Syria and he knows the best local spots for Syrian food where are we going first so we go first to eat the Friday Meal which is hos fat and those kind of things you will see in your eye yeah and today is Friday so it fits it awesome awesome so F would be especially coming on Friday exactly why because they make you feel sleepy so a weekend is a the best day for you to be sleep work okay okay oh and that's one of my favorite meals to eat I mean one of my favorite meals in this region of the world in the entire world and we are on our way this is one of the gates of damascos it's located in the northeast of damascos and it's called St Thomas gate in Arabic B Tuma okay and you said there's seven seven Gates there is seven Gates city of Damas City yeah surrounding the ancient city yeah oh garlic we are in one of the traditional hos shops and here you can see they are reparing the things like the hos the pool which is the bean shape kind of thing this is the this is the fool the FAA beans yes this place is incredible he has just just ancient metal pants filled with the chickpeas I love how vibrant and yellow those chickpeas are and he weighs them out still using the traditional scale style uh you can order humas here you can order fat you can order fo I think those are the main main dishes oh we got to try them all oh that's the man he has insane skills he just made all of our hummus all of our dishes in minutes just like artfully just swings the dishes back and forth mashes them into the bottom of the bowl adds in olive oil juices the water of the chickpeas all the seasonings that was unbelievable I couldn't even film barely he just was just so fast just back and forth just all those toppings all those ingredients mixing them perfect harmony that's unbelievable insane skills water yeah the colors the olive oil all of the different seasonings on top very important for the Syrian people because we have a proverb says that the eye eats so you need your eye to eat first so that the food is more appealing for you you so I what you're doing in Syria this is unbelievably special okay so Ramy what should we start with uh so maybe you can start with this this one is called fat it's called fat fat so this you can eat it without bread actually with just with the spoon because it already contains the bread can't let's go in let's do it Ry so you have the bread underneath soaked get that tahini that's why it's so rich there's chickpeas whole chickpeas there's mashed chickpeas and the foamy tahini the crispy the soaked bread all the spices in there [Music] m oh wow oh the richness wow the creaminess the nuttiness the tahini the sesame seeds oh it's so good that's really really good yeah that is unbelievable oh that's that's next level yeah and the olive oil they are really uh very generous with adding the olive oil so yeah even def those meals definitely oh I have to take another bite immediately it's actually lifechanging [Laughter] good oh man wow okay let's try the next dish thank you so much oh it's a very thin bread as well very very thin so it has two uh levels actually so I prefer it thinner so it's up to you you can you can take it as as double or you can just do it like this as me okay so you have here two types of FO oh okay uh which is this kind of Bean the fava beans yeah fava Bean exactly all right and so this is with the uh olive oil tomato this is with yogurt and Tahini ah oh you smell the garlic in there too I think exactly the garlic oh look at the oily juices oil oh wow wow oh that's unbelievable yum the garlic G in there the garlic yeah it's very clear the garlic the lemon juice the olive oil the pepper and maybe a hint of human and sumar yeah the the Citrus of the the sumach as well and a little little bit chil no a little bit chil yeah and the way that those fava beans they're so creamy as well I don't think I've ever had creamier softer fava beans in my life that melts in your mouth even the skin sometimes sometimes a lot of a lot of places they actually peel the FAA beans that skin this one it's cooked so tender we have another way to eat the fava Bean is just alone by itself with the cumin and salt and that that case you just take off the the beill with your mouth and then eat the thing inside yeah that's stunning M wow chaste that with the onion it changes everything that crunch oh and the sweetness of the onion as well that's unbelievably sweet great it's one of the greatest fava bean dishes I've ever had in my life grab a bite yogurt a combination of yogurt and uh tahini tahini in there wow again you have that kind of like richness of the the tahini and the yogurt that sourness the creaminess of the chickpeas and again the the starchiness of those FAA beans Al together even more citrus this one but also the tahini is really really the perfect amount of tah that is also the salt stunning yeah wow stunning Sal oh man good this is our first meal in Syria our first meal in Damascus and already I think I'm totally ruined for humus this is as good as beans get so now the classic the humus you can just you make a little cone make exactly and then you then you'll be able to ah exactly like okay then you'll be able to scoop it in more [Laughter] wow he has the perfect ratio of tahini and lemon chick Beach and lemon and lemon maybe a little bit of garlic in there too and garlic yes yes and some some hummus can have a lighter texture or a fluffier texture this one is dense thick sticky just unbelievable flavor yeah that's incredible wow that's some of the best hummus I've ever had in my life you want to try one of these Peppers as [Music] well oh juicy a little bit spicy but mostly just salty and that amazing kind of crunch of the chili okay moving back over to the fat and this is one of the favorite things here man with that sprinkle of ghee that that roasted that boiling ghee and what I'll do with this one taste it with the turn it pickle Shan Shan thank you thank you K and fat was just unbelievable just blew my taste buds we are off to an incredible start Syrian food in Damascus and just conveniently just around the corner Ramy is bringing us to the next spot look at this giant charma yes chicken have you seen bigger than this that is huge hello hello so you can either order two versions the chicken or you can order the lamb over on this side and what they do is they slice it off thin they put it into the bread but they do so much more to the bread with the bread they soak it in the juices either chicken juices or lamb juices and then they kind of like keep toasting it on the fire wow the crispy chicken the garlic sauce oh man this is Sharma Paradise right here cheers man wow wow okay Damascus is on another level that is some of the greatest Shawarma single bite ever I love the contrast of the the salty acidity of the pickle and the creamy richness of the garlic sauce wow yeah with the chicken just embedded plastered inside I eat this maybe every week but I'm always impressed by the test yeah oh this is something never get bored of yeah you would never get tired of for sure oh that's insanely good and the way they toast up crispy that bread that also makes it Incredible without a doubt one of the greatest bites of Sharma you'll ever have and we haven't even tried the lamb yet how is it Ramy wow you know it's delicious that I eat it very fast you know is this one of your favorite places for sha yeah this is called alour alour mean the tower right ah so this is for more than 50 years here when I was kid I used to come here and and eat from this place awesome it's really good oh and he's just soaking that bread soaking that bread into the shaara juices the oils of the Lamb oh wow that lamb is insane oh man it is so very very very very very [Laughter] [Music] good okay lamb Shan and this one is a bit of a different style we got the lamb and we got a different bread this time as well [Music] wow oh wow okay that deserves a moment of silence you taste the fire exactly reacting with that lamb all the lamb just so tender salty the crispness of the onions and the parsley the tapini giving it that richness the texture of the bread it's like very soft so this is onion parsley the lamb and the tahini that's all sometimes they put T pickle but this one I can't see but it's still delicious wow oh yeah I got a bite of pickle on that bite as well giving it that acidity plus the crunch of the onions The Parsley the richness of the tahini all I can say with some certainty is the best sh I've ever had in my life really it is wow yeah this is unbelievable like this sha right here is worth coming to Damascus just to eat you'll be happy oh wow this is this Lam Sharma is the Sharma of your dreams I I'm stunned actually I don't even know what to say I'm I'm at a loss of words here Shawarma happiness this is this is the definition of shawarma and then the perfect combination to eat with it drink with it the Iran oh yeah just creamy Rich refreshing cold not too salty oh it's really good you can't go wrong whether you choose chicken or lamb but I'll just say that you don't want to miss the lamb thank you shakran shakran thank you thank you okay Sharma was so good where are we off to next WoW we will go to the food Street there is a little food Street inside the ancient city so we'll go there let's see what we find okay yeah so the the ancient city is divided into quarters we are now in the Christian quarter so this square is called B Tuma Square Thomas Square the translation so yeah you can see the more uh majority Christian people here okay this place oh okay now we're really getting off onto the the ancient narrow Lanes of Damascus again it is just surreal to be walking down these narrow Lanes of ancient Damascus buildings on both sides just the Ancient Ancient streets dating back thousands of years the ancient part of Damascus so the more you excavate the more civilizations you have this what we see now is at least 300 years old it's really complicated that we even locals sometimes get lost it's just completely surreal to be walking down the ancient Lanes of Damascus and I remember for the first time when I was a kid learning about Damascus reading the Bible um and especially the Apostle Paul here in Damascus and so to be walking these same streets where Paul walked I mean we're in biblical times in this city and it truly is I'm I'm having it's one of those cities that I'm just barely I mean we've barely started to explore and yet I'm already having a hard time just grasping the thousands of years the centuries upon centuries of History and civilizations that have made the city what it is unbelievable Damascus such a cool city so we arrived to the church it's called St ananas church and here Believe It or Not Here St Paul the Apostle was baptized [Music] sent ananas and Paul the Apostle actually a lot of people uh know about Paul the Apostle but not St ananas but believe it or not he's the one who baptized St Paul and who influenced St Paul to turn into C Christianity and he taught him Christianity and without this single person there would be no Christianity in [Music] Europe so first you step inside to this Courtyard it's just so peaceful but the actual church is [Music] underground you can see these three icons and actually they represent the story of uh St Paul the Apostle and his transformation because he came to Syria and he wanted to persecute Christians he was but on the way to Damascus and exactly that icon he was hit by a light and he fell over his horse and Jesus Christ appeared and he told him sa Saul why do you persecute me because his name was Saul before he turned into uh St Paul and then Jesus Christ said go to the street called straight simultaneously Jesus Christ appeared in this very place and he talked to sent ananas and he told him go to the street called straight and you will meet someone and so the two guys met actually s ananas hosted him in his Chapel which is this one and then he baptized him he taught him Christianity and from that place he started to really go uh on his expeditions to invite people to Christianity this is incredible dates back 2,000 years ago the original Chapel as a Christian myself it is something that I I almost don't have words to express something interesting that Ramy was telling me is that uh it's underground now but before it was not underground it was on ground but the city has just been built on on top of each other on top of each other on top of each other as well as sunk uh so now it is underground [Music] we are in the oldest functioning Street in Damascus the street called straight and it's mentioned in the bible it's 1500 long which is the length of the ancient city okay actually I can't just ignore this place this place is really important it's unusual he is open on Friday it's his weekend but meet the artist Muhammad and he is the brain behind all these kind of decorations wow and actually some people call this aami but he disagrees he call it the dine art ah uh so the theasin art is kind of calligraphies kind of these kind of um uh textures butns like this and it is used to decorate your house the ceiling the walls and everything [Music] you see it's like in damascos every few meters you will find a free water like this and it's very cold and pure spring so it's just natural spring water from the ground exactly yes we were walking by with our empty bottles after eating all the Shawarma and they said we should fill our bottles with the the spring water from their neighborhood right here and yeah need some hydration oh yeah it even tastes good really tastes good you can taste the minerals in it oh man ancient spring water from [Music] Damascus I love this City Damascus is just it's incredible it's one of those cities you could just look in Direction and there's something unique fascinating historical and incredible oh yes yes so he he mixes all those spices and I think some of the cream cheese and then he kind of mashes it all together look at how juicy that corn is he slices it all off the cob too oh and then slides it directly into a a little bowl ch let's try this out let's do it would this be a Common Street Food snack in Damascus [Music] okay wow oh it's kind of cheesy it's similar to Doritos you know that chips yeah it does it tastes like like powdered cheese maybe that orange powder is I think tastes like cheese this is good hey Ramy you're right it totally tastes like corn on cob Doritos like that powdered cheese mixture no never would would have expected no it's very addictive wow it's good [Music] uhhuh so they do this kind of bread you know with the black seed and sesame here and they actually uh put it in the this kind of oven the charcoal let me show you okay so we're going to step into the Bakery uh right across the street from where we ate the corn to see the inside the the oven oh man it is old it's a dunking so the dough gets a dunking into the black seeds which I think I I think they're Nigella seeds he has an ancient tandor and he just slaps that bread onto the side of the oven walls of the oven there's a raging hot fire on the bottom um and that's just producing so much heat that bread Cooks in a couple of minutes keeping all the the topping of that that black seeds on the top and crusting it hot fresh bread so would this bread be used eaten with meals or just eaten yeah you can eat it with the The Pride meal the humus the everything okay but sometimes they stiff it with cheese so if you look there there are the kind of things they actually stiff it like maybe muham uh chill Z even olives you like to try the one mam it's like M mam yes so the the best combination is muham with cheese okay sure it's a walnut paste with tomatoes with chilies and then we're going to try it with cheese this combination oh so oh he puts the mukam into the dough and cheese oh and then makes it more into a cone or a triangle shape oh there it is oh shakran woo and it came out of the oven flaming hot wow just straight out of that unbelievably hot fire burning tandur oven wow oh so good all the mam I never would have thought of combining mamara and cheese and baking it in a pocket of dough that is it's the perfect amount of chilliness mhm and maybe the cheese is it's more prominent than the mam yeah it's like a very neutral cheese neutral tasting almost like a mozzarella but more flavor yeah has a nice stretchiness to it man with that the com is so flavorful it has that really vibrant red chili pepper flavor to it oh that's delicious oh man another Syrian food street food in Damascus that's just blowing our taste buds there's so much good food on this street and just down the road from where we had that bread there's a famous Falafel shop he's making a fresh batch of Falafel right now you can see that mixture and what's cool is the deep fryer is kind of within the wall I got this custom deep fryer tucked within the ancient wall that's so cool so he fills it up into the little dispenser and then just plucks it out into the hot oil this little Patty of falafal oh man I love falafal thank you oh man the benefits of beating in the kitchen a Falafel snack face test oh wow that's hot and Cy oh man very tasty okay so he's starting with a big handful of salad looks like shredded lettuce and purple cabbage on there as well and tomatoes go on I think those are pickled pickled turnips or some kind of pickle purple pickle goes on oh it's so beautiful and colorful and then more herbs sliced herbs go on oh that's the entire slice of lemon what a genius move yeah we got the fresh batch of Falafel oh he just pours it on oh I love that move what a move gives it a press down into that small mountain of herbs on top of the bread and yogurt goes on pomegranate molasses goes on then he rolls it up really tight absolutely loaded and colorful I've had a lot of falafel but this is easily the most colorful falafel I've ever seen and again I love how this entire sculpture all of these pink and purple and green and red and yellow all of them go into your falafel sandwich that's something that's [Music] incredible oh man it's the herb The Parsley that slice of lemon not just the squeeze of lemon the entire slice of Lem that sets this falafal apart that is so herbaceous it's so refreshing it's so healthy I mean you really are eating an entire salad plus falafal all wrapped up in bread and just the yogurt gives it some um some kind of Saucy richness to it man as you keep on eating it the flavors keep on mixing and mingling I forgot about the sweetness of the pomegranate molasses that incredible sourness coming from the lemon the Tomato the pickled cabbage you taste the mint in there too but it's incredible and I would say that it's not one of the best falafal I've had um in terms of just the actual falafel but it is one of the best falafal I've had in terms of all of the toppings and ingredients the entire package it's truly stunning it's unbelievable these colors just make a magical combination wrapped inside bread CA I'm like can't even believe the fa combination here truly a food Paradise oh thank you welcome to Syria bro thank you now that is a welcome to Syria right there pull a move here where we break it into the center that way we can all see what's in the center of it look at all the salad coming up all the pickles I mean without a doubt the most refreshing ffo you'll ever [Music] have Shan people coming here to enjoy the weekend in Damascus uh hello hello shopping street snacks people hanging out games almost yeah like a like a [Music] carnival music playing at every at every shop yeah huge bright colorful candies hello [Music] it's so this is kind of bulgar inside there is meat and they barue it like this called K next up on this Syrian street food tour in Damascus we're stopping at a little family shop where they specialize in a few variations of kid Bay and people you'll see people walking down this busy Lane and everyone stops for the kid they kind of Grill it in their Courtyard or they fry it and then they serve it right out of the the doorway or the archway right out of their little compound oh all the fat comes out of it oh sh is um so pomegranate molasses goes on top okay sh again two different versions but this seems to be the more popular one the grilled one that lamb fat and then the drizzle and pomegranate molasses oh wow oh that's incredible oh the bulgar wheat so gummy and it's so rich with the lamb P oh wow and then inside is lamb with spices and then you've got that really Smoky flavor because the fat mixed with it the bulgar it grills really nicely and Browns really nicely as that fat FES out then with that sprinkle of pomegranate massis that just gives it a nice tartness and a sweetness to you can see Lamb in Lamb inside lamb outside Syrian food is on another level if you don't have lamb oil dripping down your fingers all the way to your arm you're not eating the kid be right oh man look at the crowd now you can see so many people I mean it's one of those things that you just you can't not stop next up this evening on this Damascus street food tour we are heading outside of the old city but still I mean all the city is years old but we're going to a street that's well known for [Music] food so where are we at Ry so now we are in this food Street outside of the ancient city it's called jasmati it's full of food we will start with this kind of uh food we will see inside it's called Mahaba it's very popular actually all the syrians come here and you will see how is this yes already step into the restaurant you can just smell like this hot steam of lamb just hits you in the face oh man this place is dedicated to lamb but not only lamb especially the organs the head the brains the legs the intestines they serve it all oh man oh man this is just like a a lamb organ Disneyland here this is okay the brain yes sheep oh whole basket all the intestines going in oh picks up a fist full of it wow W oh man oh that's next level oh my God here they are putting on a show they specialize in all of the Lamb organs in ptin the whole head all stuffed it simmers in this trough of lamb broth they make a variety of things like lamb lamb fet the whole lamb head all chopped up the meat juices oh and the Brain goes back in oh it's a steam room of lamb in here and they're so funny so hilarious oh this is this is where you come if you want to eat lamb organs I think this is our tray along with lemons oh and with soup too I think you should use your Bear Hands that's the authentic way to okay okay definitely okay so maybe you can take one okay right oh I'm going to grab a there's some of their some of them are more chunky some of them are thinner I'll go over a chunky one right and this by the way stuffed with rice and lamp as well [Music] okay wow so good that is the pure Taste of sheep the intestines are so tender I love the texture of the rice it's kind of chewy and then it's just nicely seasoned with maybe like some pepper I think black pepper something like this but because it is very dry you need to combine it with the uh soup yeah with the yeah okay on the inside the rice kind of dehydrates and dries out exactly maybe you can soak it or you can eat it and it okay so then you can pair it with some of the soup which is really thick and Rich I love how they serve you a whole plate a whole platter of lemon for this meal you can squeeze in squeeze in some lemon some parsley as well okay and so this can be your accompaniment to your wow your sheep organs M oh the broth is incredible yeah the broth is just it's Rich it's very sheepy it's really thick and buttery as well oh man that so tasty though wow that's tasty I love the and the intestines are very well cleaned like it's just a casing that kind of snaps and you feel the fattiness of it when you bite down you can just finger finger break it it's so tender drop it into the soup and then from there you go in and that way you got the broth just submerged into the intestine sausage that's really good that way is really good because it absorbs the just goes into the sausage oh the oh the steam Theo with the lamb all that br oh man the lamb juices are out of control here oh [Music] so we already had fat today uh but uh the the vegetarian version this one is I've never had and I have had fet before but this is my first time to ever had a have a a lamb fat that is next level okay oh man let's go for it oh wow oh my God that lamb just oh my God in your mouth oh wow it disintegrates that is extremely rich and heavy wow it's like tahini with garlic with the lamb and the kind of bread and it melt in your mouth oh my God that's I think I got a piece of tongue on that bite and yeah the tenderness of the Lamb the the fattiness even the bread just kind of melts because it's been DEH it's been hydrated it's been saturated in the the juice the broth he hydrates that with the broth with the same broth the bread until it goes soggy and just absorbs everything then hydrates it again with that tahini yogurt wow and even the flavor of the cumin just comes through so nice cumin yeah yeah it gives it really very good taste yeah and the lemon juice in there yeah the lemon brightens it up as well yes exactly you're going to need to chase that with a bigle wow W okay got a whole brain just swimming around in a bowl of broth yeah oh can be easily cut oh it's so creamy you said you should put parsley on it and lemon juice as well or just parsley uh yeah maybe a little bit maybe a little bit of lemon juice some drops it's so creamy so silky smooth so pudding is wow actually I took some time to understand the taste but it's really really subtle and very good yeah very good you're right it's really not a strong flavor not a strong yeah no hidden like hid yeah you need some time to really understand I've definitely had a lot of lamb brains but I've never had that combination with with fresh parsley like that that really brightens it up let's go with the big intestine oh this one is thick let me thick oh it just breaks apart though and you can see that it's so packed in there excellent too the the rice is like more herbal tasting or maybe it's the same just more rice because it's a the big Ines okay and next up one I think this one is a one of the stomachs right uh I think so yeah a ni little it is yeah you could take a nap on [Laughter] this oh yeah oh this one you can see is so shut as well oh it's just sprouting with that [Music] rice oh then taste that with some of the soup oh yeah that mixes all together in your mouth for the Perfect Harmony rehydrating in your mouth I think the rice mixture is still the same but every organ has a different texture to it I'll dip it into the yogurt [Music] sauce oh that's garlic yogurt oh nice it's really cool and refreshing the big old pepper wow that's salty really good though a little bit spicy really salty really juicy and crisp this is a meal you need to have some tea to follow to wash it down yeah that was a seriously heavy dinner my my my stomach is fully fully expanded uh but now the street is really picking up this night Street traffic going down here lots of the restaurants are starting to fill up as well just the Aromas the grills looks like this entire street is just dedicated to lamb and meat meat Street oh and chicken too oh man the chickens oh that's so much heat coming out of there okay so we ordered the sandwiches oh oh he dips it in the juice again oh in the fire what a move [Music] oh shakran he's giving me a bite of the chicken skin oh wow oh man that's good oh and you just put the chicken skin debones all the chicken directly into the bread with the garlic Su sauce all fried potatoes go in like fries but slices of potato oh man that's going to be so good oh it's so oily and juicy here has to wrap it in double bread oh it's getting another dip oh into the fat onto the fire oh and then he actually grills it inside of the rotisserie cabinet this is unbelievable I'm almost ready he even has to add an extra piece of of bread to wrap around it because it's so oily and juicy oh man wow it's so much garlic cream sauce oh and the potato the fried potato gives it some creaminess oh the combination the garlic cream the juicy rotisserie extra salty chicken this is the whole chicken you know it's not like shaura shaa is only the breast yeah this one is the whole chicken so the flavor is different than schwarma yeah I mean it's it's prepared similarly but the meat cuts are different yes and you have the thigh we had the drumstick in here all the juicy skin the skin yeah SK oh man okay from here on out there's rotisserie chicken and there's Cal rotisserie chickens this sets the new standard yeah so bright W oh my God yes so this Samina inside there is the Kurt oh okay okay yeah s Molina with third almond on the top oh [Music] man okay so this street is also well known for their sweets and we've come to a a chef here oh man the master of the sweets he has like a mountain of sweets with incredibly bright lights that are reflecting off of all the sweets and all the desserts with lanterns and neon lights and we're going to try one of the there's some kurd on the inside with semolina on the outside oh yeah that's good that's very good not very sweet yeah oh man the creaminess of the curtain and then the the cholena forming that crust on either side and then with some of the Arabic coffee oh with the flavor of the cardo yeah yeah yeah that's like good enough so this piz ja let's try oh so this uh also smolina pistachio and ghee this is really sweet so oh yeah it's like drenched in that syrup but it is good and fragrant and I love the topping of all those pistachios but yeah it is very sweet but goes great together with the coffee the the unsweetened coffee and the um the flavor of the cardamom in the coffee I mean I love I love the coffee Shak when you come to Damascus come try his sweets amazing sweets hello hello theaa is fresh it just come out from the open all right this one they said was fresh out of the oven all that cheese on the bottom
