welcome back to sous-vide everything guys we've got the wrong char down we were just making a video name I don't want to take my shirt I want to take a shirt either listen everybody I did a video a while back you guys asked me to make creme brulee I thought it would be interesting for somebody that never made creme brulee so that they can ask the questions that you guys might ask and make it yourself and since angels favorite thing to eat as a dessert is scrambled egg I'm gonna teach you how to make it well we'll have to do first we gotta get to serve you ready I got the perfect words let's do it [Music] you [Music] all right that left we need eggs sugar salt heavy cream and vanilla extract and most importantly a scale okay got it well you got three sugars bro Oh which one do I use they're like different types extra fine regular granulated all right so this one here we're definitely don't want to use this one here this one is got something else gaga okay okay for mixing the sugar inside this one will be best and for burning the sugar this one is the one I recommend daddy so we're gonna put this one on the top when we're done what we're gonna use this one for the actual mix you got it my friend I just noticed something where's the vanilla extract got it no you got to separate the egg yolks from the white crack it and open up your hand on your hand [Music] did you just make a master nah we're good oh look anger I give up angel look are you going no give up I'm done there's a better way let me show you how I am gonna show you three different methods and you're gonna try them and you tell me which one you like best and then the artist should be same as your sounds good my first one is very easy what you are trying to do just break the egg see here and then you want to open it as you start see as you start opening it just drop it in your hand up just like so see how you dropped it in my hand and then open your hands a little bit and then just shake it that's what I'm gonna do but then it's up so you know just shake it see how it comes out lift and you got a egg yolk right there yep easy peasy second method you can use one of these spoon here or if you don't have that use one of these or you can even use one of these doesn't matter which one you have check it out easy peasy hold it like this break the egg inside see how you feel like that and then just shake it shake it all up shake it come on and if it's being stubborn pull it out man no big deal yeah third and final method they're probably the fastest one just break the egg directly on the window how do you call this sake yeah break as many as you want so just for demonstration purposes I'm going to that's just as good three yeah I think this is the fastest to do all of them no I want you to try and tell the artist which one is best any plastic bottle ready squeeze and squeeze it back inside put it put it down squeeze it back inside take it off straight now and then back inside like so see how they go directly inside here straight inside and pull it out a little bunch of them at the same time and then dump em in easy enough all right now you you try them and you tell sugar a lot 47 make a bit of sweeter 46 46 I'm almost on the money I went a little one gram of salt one gram of salt one gram oh boy boy six gram offer an ela extract 300 grams of whipping cream boom mix it well and we're done you're risking a bro I think it's good that's good now we need containers yeah which one in the row you're like a million show it to me one minute which one you want to use this if you use that one open it up let's show it to them this one is not good cuz what a Wolverine it's not perfectly sealed we need to use that this is gonna have a nice tight seal let me see down there you go that one will like you want to use that whatever you want to use the smaller one there's a small ones too you're gonna fill it all the way to the top you have to if not you'll float which more [Laughter] there you go everybody that's how much it will give you now gotta seal it up and cook it for 1 hour at 185 degrees Fahrenheit okay no all right [Music] something happened with the Audion this part I was standing him in order to remove the bubbles on top just torch it very quickly the all the bubble should come out be sure not to cook it so how can I get closer to type if you close it too tight when it's cooking the air inside is going to expand and then it will be almost impossible to open it so that's why you don't take it off I'm going to let it cool down and a Weiss ice back or just let it cool down slowly mm-hmm so it doesn't overcook right then when I put in the refrigerator okay and do your favorite part which is [Music] other than the Lakers why is it like that so what happened here is you messed everything up and you know I follow you were telling me to do you must meal now what happened was you didn't take out all the bubbles when you did it with with a torch but that's okay I'm sure it's gonna taste fantastic it doesn't look that great but I have a trick to fix this I grabbed a spoon and then with the back of the spoon you just scrape it and smooth it you see this in the beginning starts look kind of funny no big deal it's your first time it just gets better and better from here there we go all right suppose some sharing of burning and we move on with life all right you try okay you don't biggie like some sort of professional some sort of professional sometimes it's Google amazed you know and now you gotta grab a plate and the strainer and the sugar [Music] so what I say now I know it doesn't look that good right now but watch this no you're doing it right and Joe all right over [Music] generally I supposed to do alright we're not angels creme brulee here and it looks good we got the boys oh I brought the young ones you brought the young ones I brought the young ones oh right we're gonna be we're gonna be angels judge I'm gonna tell him if it's good or bad yes I cover labor board oh because you tell me oh my god Oh dinner getting a big one you need a spoon oh it's nice and hard crunchy grungy Wow Dylan getting right to work
