Souper Tuesday: Hasenpfeffer, or Rabbit Stew

[Music] good afternoon and welcome to super tuesday today i'm going to be making huss and pepper and i'm ready to get started so let's get going first thing that i'm going to do is i've got four slices of bacon diced up i'm going to put this on a medium-high heat and begin to brown the bacon haas and pepper is rabbit stew i got this domesticated rabbit from my dad who got it from one of our cousins that raises rabbits for 4-h and i'm going to brown the bacon to get some fat rendered and also to add some flavor of course i've got here a half a cup of flour putting it in a pie tin just for convenient so to my half cup of flour i've added about a teaspoon of salt teaspoon of paprika and a half teaspoon of pepper just going to mix that in all right turning it down to low i'm going to remove the bacon and leave behind all that wonderful bacon fat i'm going to take the pieces of rabbit it's cut into quarters front quarter that's a front quarter piece i'm going to dip it in the flour coat it really well drop it in the bacon grease turn that back up on medium high i think what i'll do is half at a time here's the high quarter next and the back is one long piece i'm going to cut it into two small pieces okay i've got half the rabbet in there i'm going to go ahead and flower the other half i'm gonna brown the rabbit on each side for about five minutes i'm going to remove the first half to the plate [Music] all right while the last half of the rabbit is browning i'm going to chop up one whole onion all right second half is the brown now that absorbed all of my bacon grease i'm gonna put a couple more tablespoons of bacon grease in the pan a little bit of olive oil a whole onion chopped up cover it for about five minutes while the onions are browning i'm going to prep my garlic three medium sized cloves here not counting the one that fell on the floor get it in the press and i like to go ahead and squeeze it because i've read that squeezing it starts a chemical reaction give that a few minutes and then add that to the onions onions are nicely caramelized [Music] add the garlic i'm going to add the remaining bits of this flour i've got a three sprigs of rosemary here from the garden two bay leaves from my garden red wine i diluted the one cup of wine with one cup of water add that drop in the two bay leaves and then return the rabbit i'm going to lay the sprigs of rosemary in there over the top push them under turn that up to medium high and to bring it up to a boil so while i'm waiting for the stew to come to a boil i'm going to start cutting the potatoes and carrots [Music] oh yeah so now i'm going to turn this down to low let that simmer for about an hour the rabbit has been simmering for an hour what i'm going to do now is remove the pieces into this plate to cool pull out the sprigs of rosemary nail and the bay leaves as well okay i'm going to add the potatoes it was three potatoes diced up three carrots diced and i decided i would put a stick of celery diced tablespoon of fish sauce and i'm almost out so i'm just going to go ahead and finish the bottle off one tablespoon of tamari soy sauce a teaspoon of salt and about a teaspoon of dried thyme i think i'll add some parsley about a tablespoon give that a stir and it is extremely thick and hearty so my veggies are not quite covered so i'm going to add just enough water to barely cover the veggies about a cup i'm going to turn it back up to medium high and bring it to a boil meanwhile i'm going to shred the rabbit we're boiling i'm going to turn it back down to low cover it and let those potatoes and carrots boil for about 20 minutes so i'm thinking about the proverbs 31 woman right now and i said a while back that i was going to do a particular study on proverbs 31 and i still intend to do that but anyway there's a verse in there that talks about a virtuous woman bringing her food from afar of course we go to the market which i'm sure the virtuous woman did the same thing and the food had come in from all over the world but anyway here i have my domestic rabbit that my dad gave me as a gift from mississippi and i'm here in georgia so my food comes from afar you can compare it to [Music] what eve didn't do and one of the things that she did not do is she didn't go and get her food from afar so there is a little bit of comparison that can be made with what to do and what not to do so i'll get into that a little more detail when i do my proverbs 31 study and i've said in a previous video when i made tomato juice i talked a little bit about proverbs 31 and i don't know if i quite said it like this but you can't let the proverbs 31 woman be intimidating to you to the point where you say well she's perfect and there's no way i can be perfect which is absolutely true but the scripture has a lot to say about christ in you and how we're perfected in him and that's really what the proverb is pointing to so maybe just hearing that will be encouraging to some of you the word of god is supposed to make us grow and that's why salvation is very important um it's the most important thing you know the first step if you don't get saved it's not going to do you any good to read and study the word of god and try to grow the bible makes it clear that any works that you are attempting to do in your flesh will all be burned up at the judgment seat of christ it's only those things done in his body the church which is his body but anyway step one salvation and that is as i always say over and over and over again that salvation for us today is to trust in what christ did on the cross for each of us he offers it to everyone not as calvin falsely teaches just to those that he chose before the foundation of the world that's not it at all god desires that all men be saved and he died for the sins of the whole world so step one trust christ step two read and grow knowing that the only perfection we'll ever achieve will be when we're raptured out of this world and completed but meanwhile we should strive to understand god's will and to grow up into him all right so potatoes are just getting tender so i'm gonna go ahead and add all this rabbit meat back into the stew and remember all that delicious bacon from the very beginning yes i'll let that cook for about five minutes more maybe a little longer i've got some garlic cheese biscuits in the oven they have about 14 more minutes on the timer so about 14 minutes i'll come back and do a taste testing and after that it'll be supper time okay the soup is done scooping out a small portion for myself to give a taste test all right my house and pepper has cooled i'm going to get me a bite with a carrot and a little potato and a bit of rabbit and celery that is very hearty such a thick flavorful gravy i think that will be an excellent dish for super tuesday yum i hope you'll try that i'll post the recipe below and as always thank you for watching foreign
