[Music] today we are doing candied salmon it's almost done it's getting dark here i got the yard lights going got my set up over here kids clubhouse back there that i built i had a pallet wood [Music] a little over two and a half pounds of atlantic salmon kosher salt black pepper brown sugar one of these aluminum trays with the lids so what we're gonna do is we're gonna mix up our dry brine first okay guys i have one cup kosher salt two cups brown sugar though some pepper they're not really gonna measure just give a decent amount gonna mix all this up i want to mix this up pretty good now this is a dry brine you could do a wet brine but i prefer the dry brine it's a lot easier less mess no liquids to really spill now i'm going to take half of this i'm going to spread it out on the bottom of the pan here make sure it's all nice and even so now we have that we have this saved let's go ahead open this guy up come on salmon i always do smell check you never know better do a smell check and then instead of putting all your time into it and realize something right there all right so i'm gonna cut these in about one inch wide pieces like that and since this is such a big piece we're going to cut this down the middle all right keep slicing now that we have all the salmon cut up we are going to lay it skin side up in rows cover this up since this is bigger piece of salmon i'm going to do kind of two layers here do the same thing we got that taken care of let's take the rest of our dry brine and we'll sprinkle it on [Music] kind of pat it down now we take our lid that comes with our little cheat pan here so it's airtight and this goes in the refrigerator for three to five hours today we are doing candied salmon now it's time to smoke it [Music] all right we are doing applewood this applewood is sourced locally from my local orchard this is a glaze made out of maple syrup and some more pepper [Music] [Music] it's almost done [Music] all right guys here it is [Music] thanks for watching guys like and subscribe stay tuned
