[Music] smokey what's going on backyard grinders today is memorial day weekend and uh we're going to be smoking a two 2.14 pound uh atlantic salmon fillet it's a skin-on uh fish it's going to be very simple guys we're going to be trying this new apple wood well i don't know if it's new it's new to me applewood rub from grill mates i did taste it it's uh very good it's got a little bit of heat to it a little bit of sweet but i think it can use a little bit more flavor so i'm going to i'm going to add some seasoned salt uh to to add in the flavor process so i'm going to get this out of the cryovac i'm going to i'm going to wash it you know give it a quick rinse check for any uh bones that may have been left behind and i'm going to slice it okay be right back okay so you grab your rub and you can add as much or as little as you want guys you're only gonna season one side you're not gonna season the skin side because well i don't eat that smells good huh yeah like i said you can add as much or as little as you want guys put that down get your seasoned salt and that's it how simple was that guys let me go out of the backyard make sure the grill is nice and hot and we'll be back all right guys i never say this on my videos but i cannot stress enough that any time that you're handling raw food uh it's very important that you disinfect the area where you were prepping the food that way you don't get sick or go get anybody else sick guys just a little quick tip okay guys so we're out in the backyard today we're going to be cooking on my pit boss pellet smoker it's the 820b in case you guys are interested and as you can see this is how you start up the grill on the smoke setting before before you dial in that temperature that you're looking for this is the time where you want to adjust your piece setting okay i've had a lot of questions on this i don't think i've mentioned it a whole lot but you can only adjust the piece setting when you're on the smoke on the smoke setting here okay so you just get a pan or a little toothpick i'm gonna go to five and then i'm gonna set it to 200 degrees i'm gonna get a little i'm gonna allow the grill to go and get a little bit hot then i'm gonna wipe off those uh grill grits i guess it would help if i explain why i uh adjusted the pea setting guys the piece setting the higher the number guys the more smoke you're gonna get when you decrease the pea setting it's going to get hotter it's going to burn a lot more fuel but you're going to get a hotter burn and that's uh that's like when you want to steer off a steak or something like that but for smoking d5 that's my go-to piece set okay guys so what you want to do next after you have set your uh your grill to the cooking temperature that you desire i normally have cooking spray that i like to spray my grill with but i'm all out today so you just get a little roll of uh napkins and just uh lightly brush your grapes i know uh i know for a fact that this side of my grill burns uh cooler so that's where i'm gonna position my salmon i might put some here on top okay let me get this out of the way and i'll show you what i do next okay so you want to grab your salmon just gently pick it up and set it on your grill bricks just make sure you have a little bit of room in between them guys so that he can uh and smoke and circulate around skin side down okay there you go so we're going to shut the lid guys and this is not a long cook you can cook it as fast or as low as you want since we're cooking at 200 degrees the reason for that is i just want to introduce some smoke into that salmon then i'm going to crank up the heat just a little bit more so this this is going to be anywhere from an hour and a half to two hours guys it's not that long and we will be back okay so 30 minutes at 200 degrees guys and look at that get a nice color you can see that rub had some sweet to it had some sugar so it's starting to caramelize and that's coming along nicely guys so we're going to shut the lid and we'll check it check it again in about 30 minutes [Music] before i forget guys i like to use this spray butter i use it on chicken i also like to use it on fish [Music] it just adds another dimension of flavor in my opinion [Music] and it keeps it moist shut the lid 45 minutes into the cook at 200 degrees guys we're just gonna give it a quick check and uh look at that so the safe uh internal temp for salmon is 145. let's give this one a quick check right in the middle [Music] oh we're there so let's check this one 45 47 48 [Music] how about this one this one's a little bit smaller [Music] yep these boys are done guys i forgot to mention guys i know at the beginning of the video i said i was going to crank it up a little bit more so i didn't have to as you can see at 200 degrees it looked very very nice very quick it's only 45 minutes into the cook and we're done man we're ready to eat let me put this bad boys off the grill take them inside and show you what they look all plated up [Music] all right guys so let's see what this bad boy does check it out tender look at that flaky juicy look at that little crust let's give it a try [Music] oh wow guys that rub it's really really good guys i think it was a very good idea that i added that seasoned salt it's not overpowering at all it's just very very delicious guys guys just to
