[Music] welcome back to everyday barbecue my name is Mike this is my co-host Leah she likes to be in my videos so she's gonna hang out here while I tell you what we're gonna do today today I'm gonna try to solve a mystery that's been in my house for a while and that is our ribs better wrapped or our ribs better unwrapped as far as the cooking process goes so I'm gonna tell you a little bit about what I'm gonna do I'm gonna go ahead and I'm gonna package these I'm gonna clean them off with rinsing them off with water I'm gonna trim them a bit pat dry them and then we're gonna season them and this is gonna be for my spritz and for my rep so I'm going to show you exactly what you're gonna need here first of course you're gonna need some ribs however much you might like for my seasonings I'm gonna try to keep this simple today and I know you're gonna say that's not simple but it's simple for us if you saw some of the rib rubs that I make here at home you'd be like dude what are you doing so this is gonna be simple for me we're gonna use some garlic salt we're gonna use some black pepper I've told you guys about legend bran powers before they're Chipotle rub is excellent I love that on the ribs the whole family does so we're gonna use that and just some Famous Dave's rib rub so that's what we're gonna put on the exterior of these before we get them out on the smoker now another important thing I don't do the three to one method if I knew the three to one method when I wrap the ribs become way too tender and they pretty much fall apart they're harder to handle so mine's more like a four one one method so one of these is gonna get four hours of smoke one hour of wrap and then one hour unwrapped with barbecue sauce the other is just gonna get six hours of smoke pretty much with the last hour being sauce okay now throughout the process probably every hour I'm gonna go out and I'm gonna spritz these and I'll share at least one of those videos with you but all we're gonna do is have a spray bottle some good clean water and some apple juice and what this is gonna do is gonna go in the bottle probably maybe two to one water for apple juice something like that I'll put it in the description and then the one that I actually wrapped before I put it back on to Braves in the Rebbe I'm going to add a little bit of brown sugar and honey this has been something that I've done for a bit it wasn't my idea I found it on YouTube I think Malcolm Reed did it he's probably one of my favorite youtubers and when I did that our ribs turned out great so the ones I wrap are gonna see that so I guess that's it just hang around I'm gonna get these prep I'll bring you back when I'm ready to season these up and then we'll go to the next [Music] important step that I want everybody to see and I'm doing this just in the interest of keeping everything consistent with both racks of ribs for this test you can do whatever you want when you look at the back of these ribs with this membrane a lot of people remove it some people score it so if you wanted to you could just score across and go across on both sides just to kind of loosen that area up and that will help to allow them to tenderize as they cook however a lot of people will remove this membrane and it's a real simple process that you just have a paper towel you're gonna start on this end I already just kind of started here and you're just gonna grab that with the paper towel to get your grip and you just pull it right off I mean it is really no big deal so I wanted to do both of these the same way and pretty much that's what I'm gonna do I'm going to take care of the other one here and when we get to the seasoning process we'll be right back I'll show you how we do it okay now that I've got them trimmed up pretty well and pulled the membrane off the back i padded these dry I'm just gonna lay down a layer of seasoning on both sides of each of these now I always start on the backside because then I flip them over I do the top and then I don't have to go ahead and flip anymore so it's just the thought you do it how you want to do it one thing I forgot to mention is I'm going to use a little bit of oil you can use pretty much anything you want some people use mustard other people they're going to use a any kind of oil like an olive oil or maybe canola oil vegetable oil whatever it is that you want it all this does is it serves as a binder okay and so I'm gonna start with some and I did wash my hands by the way just so you know I'm gonna start by just putting some garlic salt down and we don't have to get too crazy with this but we definitely want some good flavor and we're gonna use some of this famous Dave's and you really want to get this on all sides if you can you've got some black pepper here and then last but not least we've got our legend brand Chipotle powder alright and then what I'd like to do is just kind of Pat this around so that we can cover this up well you can rub it in some people will even poke holes you know just to get that seasoning and I don't really do that these always turn out great but you know you do it how you like to do it and that's pretty much it so I'm gonna get a coating on both of these on both sides and then when we're ready to come back and put these out on the smoker I'll bring you guys with okay hang in there [Music] I got these all prepped and I hope you enjoyed the prep photos with a little bit of comedy there hopefully I get some good feedback there if not I'm gonna feel pretty dumb but anyway these are prepped and ready to go I've done what I normally do with these I'm not a competition cooker so I'm an everyday guy and this is how I do it every day but they're ready to go we need to get outside and preheat the smoker and I'm gonna bring you guys with me so just I'm here at the pellet smoker I've got a pellet smoker here it's a guerrilla silverback I've had it for a few months I really love that any pellet smoker will do I'm not telling you you have to have a silverback to make ribs okay so I am literally just gonna set this at 225 and I'm gonna let these things go at 225 the entire time when they cook so for all six hours that's what we're going to be doing so should come out really well I'm excited about that and we will do a couple of small clips through the cook process maybe when I spritz but I'm going to go ahead and open this up let it breathe for a minute as soon as we start getting some smoke we're gonna put these ribs on so negative smoke here so we're going to put these on alright I'll come back when I'm ready to spritz I gotta go decontaminate my hands so that I can close this lid alright everybody we're about an hour into this and I'm ready to go ahead and spritz for the first time so just gonna show you what I do this is easy oh and check this out this hundred subscriber thing really went in my head I had a custom spritz bottle here good thing my wife has me handwriting way better than mine so we're just gonna pretty much give decent coverage people poison you can see there are together some color on which is great should be good okay so I'm not gonna show you every time I do this I'm gonna get this little ugly so we don't lose here but I'm going to repeat this several times and I'll come back when we get to the process of wrapping the ribs [Music] they look really good they've got color and like I said earlier when we first got started I'm gonna pull one of these and wrap it for about an hour so I'm just gonna grab this one here set that in the foil and I want to get the loophole and right away don't let too much heat out next step here the juice mixture I'm just gonna kind of pull sides up and this is just a little bit of apple juice and water and I don't really want too much in here I just want to create a little bit of steam for them while they go back in I'm just trying to be gentle there so I don't get too much all right so we got there go ahead and take a little bit of kind of room that on top there last week some brown sugar here gonna go too heavy on get on the top I'm just gonna fold up these edges here and you wanna rap is not you kind of want anyway this is how I space up on the top the most important thing is just to make sure it is so that all this game stays now that that's good to go in here we're about an hour once that hour is up we're going to go ahead I'm going to unwrap these get it back and we're gonna sauce both of them off okay so just hang in there about an hour I went ahead and I unwrapped the ribs that I took out just about an hour ago those and the unwrapped ones around the back now it's really getting dark out and there's committed light so I'm gonna Bank sighing until we get in and I'll show you guys the finished product the last thing I'm gonna do now is sauce these up for about the last hour maybe 45 minutes we're out of our favorite so I had some of this laying around in the fridge and this is what we're gonna go with just gonna kind of Lele cloak down here and just kind of spread that out once I get on both I'll add some more and thicken it up a bit so you guys just stay tuned and I'll show you the finished product inside as soon as I get them inside okay I got these off the smoker and brought them inside and I'm going to show you guys I'm trying to see a difference here you can see the bones kind of pulled back on the one here that I had wrapped and these kind of stayed in place and now they're both pretty tender I'll be honest neither one of them turned out as tender as I thought I bought these ribs at a different store this time and they're still tender they're good but I can tell from the way they were when I was taking them off the smoker but I am Not sure that they're gonna be as tender as I want so I'm just gonna kind of show you guys a slice with each so we're gonna start with the ribs that were wrapped here so let me just get a spot and they're just coming right apart if I could just get my knife on the right so here we go I'm trying to make clean slices okay so we have that now let's just see the difference yeah these are definitely not as tender and we don't like them where they just fall apart I mean they're just so hard to manage and handle you know we kind of prefer them to have a little bit of bite and so that's kind of what we get here and you can see there's a good smoke ring I'm not good at cutting stuff especially with this knife but the difference between the two so here we've got the one that was wrapped and you can see that these are just super juicy I mean these are really good and I'm sure we're gonna see the same thing here same thing where we've got not as much juice but there a nice smoke ring I'm both of these I'm just gonna take a quick little nibble out of each one and see if I can taste the difference so this is the one that was not rapped okay and I'm gonna just take a quick bite I [Music] love the flavor in this one it's real smoky and it's perfect as far as the tenderness for me I don't like where that everything just falls apart my face is gonna get messy now I'm gonna try the one that was wrapped a big difference just coming right off the bone now what I will say is that the ones that were not rapped definitely smoke here to me definitely more of that crusty type texture that I look for and that I like these are probably more like my wife and my daughter's type where you know they're just more tender but they're both super flavorful they take they just turned out you know they turned out good I expected them both to be more tender than they are I think it's the place where I bought them but either way this won't be the last time I do this I think I'm going to do another experiment and buy them at the same store that I always get them at so I'm gonna get some of this plated up and take some good photos and we'll see you guys next time okay I think this one's kind of left to to be continued but a little difference in the tenderness little difference in the taste it's both turned out great I'm going to eat a little bit of both so we're gonna do another test down
