hello everyone uh welcome back again my name is terry uh like i say in all my videos i've been a meat cutter for over 40 years um so what i'm going to cover today is is processing the sirloin tip at home for yourself uh this particular meat i've had for a little while i want to say it was 268 a pound um so 268 a pound versus 599 699 799 for a certain tip roast well a lot of people say well if i process it myself what do i do with the rest of it well i'm going to show you so basically what you're going to do is you're going to you're going to start with a big piece like this i'm using a forstner six and a half inch uh curve semi-step bony knife um i've done a video on basic knives uh so you can go go to that and and reference the knives um so basically what you're gonna do is you're gonna start you're gonna clean it up and clean up your fat just like this you're gonna take your fat off of it turn it this way you can see a little better so i'm going to take this off all this now as you can see right here this is what's known as as connector tissue you can cook it but it's it generally comes out pretty tough so you're gonna clean all that connector tissue off of there all the way down just like that now let's talk about how we're going to process this so this is what's known as the lean side of the sirloin tip okay you can take this little piece right here and basically what you're going to do is you're just going to follow that sink all the way down i'm going slow so you can see it so what i'm gonna do is i'm gonna come all the way down okay so this is what's known like i said as the lean side of the sirloin tip so what you can do with that you can take that okay and you make what is known as a breakfast steak so what you're gonna do you come here and all in the world a breakfast steak is there's this little piece right here and you're gonna slice it in that's it that's all there is to it now you can use this little piece right here for whatever you feel like you're using it for you can braid it up fry it you're gonna grill it thin like this it'll be very tender you can use it for stir-fry you can serve it at breakfast whatever you want to do or you can just cook the whole piece it's just kind of up to you so anyway back to our whole piece so what i'm going to do is take this bottom part right here off as you can see there's a lot of stuff down here on the bottom you can see i've got some bowls over here set up to catch what i'm trimming i'm going to take this little piece of muscle right here off and i'm going to pull out this part right here this is actually you can see right here this is actually a tendon from the cow it's very tough i usually take that part completely out i don't even i don't even put it in my grind uh mainly because it's tough so basically what you're going to end up with there's this little piece right here so you can take and you can cut it you can make one two roast out of it so can you say well what i do with the rest of it okay fine take that little piece right there and cut you down some stew meat and you can cut the you know the pieces however small you want to so on and so forth um so basically that's how you break down the sirloin tip as you can see these are i had to guess these are about two pounds a piece there's only two of us at home right now so it's more than enough for for us um like i say this piece here it's exceptional um you can even make kebabs out of it it does pretty good for kebabs so with that being said hope you all enjoyed it thanks have a great day like and subscribe
