so a cool story about the beef shoulder clot it was a young meat cutter actually I was a meat Apprentice at a local grocery store they paired a meat cutter with a meat apprentice and a wrapper for a cutting competition for the entire store and there was man there was probably I don't know 10 groups of us that were cutting in this competition and we were paired up again to cut a beef shoulder clot and it was going to come across things like uh the best yield the the best appearance well my meat cutter that I was paired with quit three 3 days before the competition so the grocery store manager came to me and he said hey Chris I'm going to go ahead and cut with you because you're meat cutter he quit get got a different job and I asked him I said well tell you what why don't you go ahead and let me compete let me cut but here's the deal if I win then I want to go ahead and be named a meat cutter and I want the pay that comes along with it the rest is history I'm going to pull this out some good lean meat for uh stew meat this trim we're going to send to the pile for ground chuck arm roast pretty good roast it's definitely my second favorite people tend to like it lean so I try to clean it up the best I can fixing to cut the arm out of it now here's the other thing a lot of people would want to just cut but the actual grain's this way so I'm going to cut at an angle back to this flat iron Square this off again I can get some good stew meat out of that first armrest oh she's a be S that up the marbling in that try to get one more top this off just a little bit and square that we try to cut these at about 3 lb in average for the meat case it's a great roast that's a good looking be have a little bit more lean meat that I'm going to pull off here for some stew meat come back and get that later and I'm going to work on this this is actually going to make me a couple flat iron steaks real popular steak it's one of my I don't know I guess you would say my one of my favorite steaks to cut just because there's a little bit of a challenge to it actually a really good steak Kind of a Funny Story my wife loves these things but we very rarely get to take them home because there's only four of these on an entire beef so this going to be a pretty and they usually go pretty quick so instead of being selfish I'll let them sell going go ahead and play this off and end up taking home something else a piece of gristle that runs back in there do this a little bit I like to spend a little extra Time Square this thing up you don't have to but Wild Country we try to do things just a little bit different even rare it's tender steak and I usually just spend a little extra time cleaning these things up squaring them up trim is great for grind makes good hamburger just a little bit of that gristle off come through here Square it up a little bit flat irons come back into some of that meat off the CLA clean it up for some stew meat I don't need a lot but I'm going to get a little bit of stew meat out of this I like to cut my Ste meat chunks in just about a 1ex one square some people like it smaller some bigger but you can always do a custom cut some really Goods to me
