[Music] hey everyone today i'm sharing some great really simple vegan cheese recipes with you guys these are so so simple to make and they suit a whole bunch of different purposes there's a parmesan cheese and two different cheese sauces that i really enjoy making for pastas or nachos or toasties various different things and then there's also a firm cheese which is just a really simple recipe and you can use it for crackers or sandwiches or writing onto things so yeah they kind of an array of from cheeses that are useful for different purposes and they're all so easy to make and tasty as well so i hope you guys enjoy them to get started i'm making the parmesan cheese and i really like this recipe and it's just ridiculously simple so i'm using for that just cashews nutritional yeast and garlic salt if you only have normal salt definitely add some garlic powder as well because it definitely makes it really tasty so i'm putting into the blender half a cup of cashew nuts and i'm using roasted cashews because i think they're actually nicer for this two tablespoons of nutritional yeast and two tablespoons of garlic salt and then i'm just blending that up until it forms a kind of crumbly powder and it's definitely got that cheesy texture to it and it just tastes really delicious and i like to sprinkle it over top of pastas or pizzas or various different dishes or even in sandwiches so now i'm making my easy cheese sauce and for that i'm using some oil flour plant milk ideally a creamy one like soy or cashew some nutritional yeast and some garlic salt and cayenne pepper into a small saucepan i'm putting about a tablespoon of olive oil and allowing it to come to heat on about medium heat and i'm adding into that one tablespoon of flour and i guess this is quite a conventional cheese sauce recipe in this regard so you mix the flour through and just allow that to be fully mixed before adding your milk and i'm using a cup of cashew milk and slowly adding it over about two minutes just mixing it in until it thickens nicely and then i'm adding two tablespoons of nutritional yeast [Music] and then i'm adding a small dash of garlic salt and some cayenne pepper as well and that just enhances the flavor of it i find and so once it's been simmering for a little bit it'll be nice and thick and then you can take it off the heat and use it for whatever you want to use it for i particularly like using this for lasagna the next cheese sauce is equally simple and it's got some vegetables in there it also doesn't have any nuts which is great for people who have nut allergies so it's got some potatoes carrots nutritional yeast olive oil lemon juice garlic salt paprika and optionally you could add some jalapeno or cayenne pepper or roasted red capsicum if you wanted to make it more of a nacho sauce to soak nachos or burritos or anything like that so to start with i'm taking two potatoes and one carrot and i'm just peeling them and chopping them up into similar sized pieces putting them in a pot with some hot water and allowing them to cook through then i'm draining them and putting them into my blender with two tablespoons of nutritional yeast two tablespoons of olive oil [Music] half a lemons juice a dash of garlic salt and some paprika and as i said you could also add jalapenos at this point or anything else and then blending that up and using it for whatever i want to use it for i particularly like this is a dip actually it's just really nice and thick and cheesy and delicious and then for a basic firm cheese i'm using some milk some sweet potato paprika cumin salt soy sauce garlic powder or cloves of garlic some lemon juice and nutritional yeast as well as some acreage powder i'm taking a good sized sweet potato and i'm peeling it i want it to equivalate about a cup of cooked sweet potato and i'm just chopping it up into equally sized bits and putting it into a pot and putting it with some hot water and allowing it to cook through into a blender i'm putting a cup of my plant milk i'm actually using cashew nuts and water for this just to make my cashew milk so i'm using a third of a cup of soaked cashews and a cup of water and then i'm adding my cup of cooked sweet potato half a teaspoon of paprika half a teaspoon of cumin one teaspoon of salt one tablespoon of soy sauce two teaspoons of garlic powder or two cloves of garlic half of a lemon juice and two tablespoons of nutritional yeast and i'm just blending that up until it's a nice fine puree then i'm taking a small saucepan and adding one cup of cold water in there and two and a half tablespoons of agar agar powder and mixing that through then i'm putting it on low to medium heat and just mixing it for about five minutes until it's thickened up really nicely and then i'm pouring this thickened again mixture into my blender with my other mixture and blending it through and then i'm pouring it into my molds you could use pretty much any container it comes out really easily so any bowl or container or silicon mold and putting it into the fridge for about half an hour before taking it out and popping it out and then you can just use it as it is for whatever you want to use it for store it in the fridge for four or five days it also melts nicely as you can see on this cracker i put it in the microwave for about 15 seconds and it melted through completely so it's great for pizzas it's great for various different things and i hope you guys enjoy these recipes as i said they're all really tasty and as you can see they're really
