Roasted Lemony Greek Potatoes: The BEST Smashed Potatoes Recipe

[Music] hi guys yasas que calo sir tate to another episode of dimitra's dishes today i'm going to teach you how to make the perfect side to any meal greek style smashed potatoes they're lemony garlicky the perfect amount of butter and they're just all around delicious and so easy to make serve them with lamb roasted chicken anything they're so good and easy to make let's get started so i'm using these smaller potatoes these baby potatoes i just washed them scrubbed them and then dried them as best as i could i'm going to put them in the pot you can use any potatoes for this baking potatoes are best for this put them in a pan and cover them with cold water so anytime you're boiling potatoes you want to make sure you start off with cold water and never bring the water to a boil and then put the potatoes in there because what happens is they cook from the outside and then it takes a while for them to get cooked on the inside and they get overcooked on the outside not cooked on the inside you don't want any of that you want them to all cook evenly from the inside out now in the pot you want to add about a teaspoon and a half of salt this is a little over two pounds of potatoes the the recipe that's going to be written on the blog calls for two pounds but they were about five six potatoes extra i wasn't going to leave them on the side because then they were going to go to waste so i just added them in there so you want to bring the water to a boil and then reduce the heat to a medium and let them cook for about 15 or 20 minutes or until a fork that's inserted in the center comes out easily and they're fully cooked you don't want them to get overly cooked and mashed because we're going to cook them more we're going to cook them a little bit more in the oven when we roast them we'll move on to the next step when we get to it so the potatoes are ready it took 25 minutes for my potatoes to be fork tender keep an eye on them start checking them at around the 15 minute mark because i also did put a few extra in here so that is going to take a little bit longer it also depends on the size at the 15 minute mark start checking and once they're fork tender like mine are then go ahead and drain the water out so i went ahead and i drained the water out now we're gonna make the dressing which is super simple i'm gonna grate these garlic cloves in some melted butter i have two ounces which is four tablespoons of melted butter i use salted butter for this recipe but you can definitely use unsalted butter so the recipe calls for four cloves of garlic but since i have those extra potatoes in there and these garlic cloves are kind of small of course i went in and added a few more cloves who really measures garlic right so much flavor so to the to the butter i'm gonna add a little bit of olive oil about two tablespoons this helps it cook evenly you can do all butter too that's fine i'm gonna add some dried oregano if you're measuring one and a half to two teaspoons is what you need some black pepper i'll just put a little bit of salt in here but i am going to add salt over the potatoes as well and then i have some fresh lemon juice just mix this all up and the flavoring component is ready okay so i'm going to add my potatoes to a baking tray and we're going to smash them so the best way to smash them i've done this and i've tested it a few times i use the potato masher and the potato masher did not work well the potatoes literally got stuck in between and there was a mess so the best way to do this is with a cup a mug or even a bowl anything that has a flat bottom [Music] and go ahead and smash them they should be about a half inch in thickness so i had to get another little tray because they didn't all fit on one now i'm going to take a spoonful of this delicious marinade and just spoon it on top of each one of the potatoes and then whatever's left i'm just going to pour it evenly over all of the potatoes this right here is flavor and make sure there's room in between the potatoes that they're not squished together so that way they can roast and get crunchy all around and then last i'm going to sprinkle a generous amount of salt on top potatoes really need lots of salt so that way it can bring out all the flavor but if you like your food less salty by all means salt it to your liking don't do what i'm doing if you don't like it a little bit extra salty like we like it make sure that your oven is preheated to 500 degrees fahrenheit but if your oven heats way hotter than maybe mine does because sometimes i do get comments stating that the oven temperature was too high if you feel like 500 is too high for your oven you can definitely lower it to 475 degrees fahrenheit bake the potatoes in the bottom and the top rack if you're using two trays like i am if you're using two pounds of potatoes they will all fit on one half sheet baking tray you won't need the extra one at that point just bake it on the middle rack for about 15 minutes then go ahead and turn on the broiler element and let them get nice and golden still on the middle rack if you move them high close to the heating element what's going to happen is that the garlic is going to start to burn and you don't want that you want nice color and nice crunch and nothing to burn about five minutes of the broiler is what it's gonna need i'll show you what they look like as soon as they come out so the potatoes are ready took exactly the amount of time that i said 15 minutes at 500 and then about five minutes under the broiler all on the middle rack keep an eye on them once they're golden and beautiful take them out of the oven and then let them rest for five minutes because they are going to be way too hot to eat i happen to have some tadziki in my fridge so i did put a little scoop in the plate before i do the taste test but you can serve this in so many different ways you can sprinkle some parsley on top and by the way you can keep this vegan by leaving the butter out and cooking this in olive oil that will work you can sprinkle some feta cheese on top of this and maybe the last five minutes while it's under the broiler take the pan out sprinkle some feta cheese on top you could do parmesan also or shredded gourier or gouda would be great too you can make this in so many different ways but this way is definitely my favorite serve it with some zadziki or lemon wedges and now is the best part of making these videos which is a taste test um it's like a mashed it's like a mashed roasted potato makes sense the inside is very creamy so flavorful because when you mash it on top and it opens up the dressing goes inside and it just tastes so delicious creamy on the inside crisp on the outside you can definitely peel
