this is my protein packed meal prep that's easy to make absolutely delicious completely plant-based and each meal contains over 60 grams of protein this is perfect if you go to the gym and weight train we're going to be making a rich and luxurious black bean stew with all the Mexican flavors and to accompany it I'm going to make a dip that I tasted in Mexico an ancient Mayan pumpkin seed dip called sickle pack it is so tasty but also packed full of proteins and other amazing vitamins and minerals we're going to serve it with some quinoa and some lovely broccoli so I really love to work out and keep fits I played sport all my life and it's still with me today I'm pretty much training every day a couple years ago I did a marathon and you can see how I fueled myself during that training by clicking this link but today I'm going to show you a meal prep that I eat quite often because right now I'm lifting weights I'm trying to get strong and this meal prep is my go-to because it's not only hitting all the the macros I need it's got loads of great vitamins and minerals in it but it tastes so delicious it's not boring and Bland like many other meal preps out there so I'm going to show you how to make it today let's get cooking first up for that lovely stew I'm gonna finely chop up some onion garlic and chili and get that sauteed in my saucepan for a few minutes in a little bit of oil [Music] thank you so now I'm going to add some spices you must get a good Pantry at home of dried Hertz and spices because they elevate dishes I'm going to add some dried cumin dried coriander some oregano and a pinch of ground cinnamon if you don't have any of these don't worry it's not going to destroy the dishes you don't have one of them just add a little bit more of another one or add a spice or a herb that you think will complement the dish nicely be creative so Avid watches of the channel may know that I actually cooked this dish for a special guest on the channel a flavorings to help make this really rich I'm going to add some tomato puree Chipotle paste soy sauce and some black beans and chickpeas I've got about 500 grams of beans going in here it averages around 7.5 grams of protein per 100 grams so just make sure these beans are coated and all those amazing flavors nothing fancy about these Beans by the way they're they're organic but they're just from cans from the supermarket I've just drained and rinsed them I'm going to get some water in here now plus some thyme some salt and then pop a lid on and let it bubble away for about 15 to 20 minutes and I'll show you how to make the quinoa next so to make the perfect light and fluffy quinoa rinse off your quinoa and get it into a saucepan and just cover it with some water about a centimeter above the quinoa add a pinch of salt and then pop a lid on the pan and just let it cook over a low heat for about 20 minutes and here are some quinoa fats quinoa is one of the most protein rich foods we can eat it's a great source of fiber it's rich in iron and magnesium per cup has about eight grams of protein the seed comes from Peru and Bolivia I'm gonna actually try and grow it in my garden this year in Wales when the quinoa has plumped up and you can see a little strand coming off it it's ready so let's make that ancient Mayan dip sickle pack pumpkin seeds have 20 grams of protein per 100 grams I only get these blitzed up in my blender with some chopped garlic spring onions a couple of small Tomatoes a little bit of chili some ground cumin I'm also going to add a pinch of salt and some fresh coriander foreign [Music] [Applause] [Music] now you can have it as chunky as you like this is looking perfect now this is bringing back some good memories right now I'm going to add a squeeze of lime to the dip and give it one more pulse in the blender and that's it done right let's check on that quinoa yes that's perfect it's nearly absorbed all the water and you can see those little strands I was telling you about they've now separated so that shows that the quinoa is cooked special ingredient going into the stew because it's nearly ready some dark chocolate rich in antioxidants but also we're just going to add this really luxury Rich uh luxuriousness too I'm running out of uh adjectives it's too cold today guys I'm warming up but we're also going to stir through some chopped coriander too but it smells so good it really does and this is going to be great meal prep [Music] foreign it's time to serve up the meal prep it didn't take me that long at all I've got my meal prep containers laid out for four days first up going in there my lovely light and fluffy steamed quinoa I'm going to top it with the beautiful luxurious black bean and chickpea stew then some of that incredible sickle pack a few tablespoons of that because that's going to help bring everything together and I've got some big hitting toppings that you need to incorporate into your diet because they are protein packed and mineral Rich first up some organic tofu I just roasted My Tofu you can cook it however you want but there's eight grams of protein per 100 grams and this is going to be the perfect crispy topping to my meal prep no meal is complete without some lovely greens I'm putting on some steamed broccoli okay my secret topping this is going to take the dish to the next level because they're protein packed and they're so good for your hair skin and Nails hemp seeds these seeds are unbelievable 10 grams of protein per two tablespoons I'm gonna get a generous sprinkle over the top plus I'm gonna top with some fresh coriander and some chopped spring onion and that is the meal prep done [Music] the meal prep was still in your fridge for up to five days I simply reheat mine in the microwave for around four and a half minutes when it's piping hot enjoy that meal it tastes so good [Music] this meal prep is so tasty guys if you take this into work your
