gonna smoke me a fatty brisket i got my barbecue shoes on the barbecuepitboys.com today we're grilling up a rack of lamb at the pit and it's real easy to do all right for this recipe you're going to need some fresh mint you're going to need some rosemary and of course a rack of lamb which is often referred to as the best part of the lamb right moist and tender if you cook them up right you'll need some garlic you'll need some butter you're going to need some seasoning like our spg you're going to need some peas you're going to need some par boiled potatoes and you're going to need a little cooking oil all right first thing we're going to do is chop up that rosemary and that's an important ingredient to doing a rack of lamb right and as with the mint it's traditional you got to check it out all right so we're going to oil down this rack just a little bit this will allow our um our seasoning and our rosemary to adhere to it [Music] oh man you definitely gotta check this out right so now we'll literally uh sprinkle on some of our spg salt pepper garlic fennel paprika chili flakes they go perfect with a rack of lamb you definitely got to check it out and head to our website if you need something we'll ship some too all right get that to rosemary on there just rub it on we're gonna be eating good tonight martha now we're gonna place it on our grill all right and uh this is what it's all about grilled rack of lamb there's nothing better right and the first thing we're gonna do is basically sear the rack briefly both sides of the rack we want a texture right and uh if you cook your rack of lamb on the grill as many of you know it's just about near perfection right so we'll sear quickly both sides the grill temperature is about 350 to 375 degrees fahrenheit so this won't take long all right with our adjustable rack we can control the temperature perfectly right again don't cook the rack just sear it first and while we're waiting we're going to smash up some garlic another essential ingredient perfect oh man and if the garlic gets away from you just smash some more simple enough then we'll take a few tablespoons of butter all right and with these parboiled potatoes it won't take long throw a little more rosemary on there and we'll put them with our cast iron pan right on the coals for a quick cook oh rack is going perfectly so now we've got the mint and the peas this is very traditional down under right they got to have the mint and the peas so if you're not into the veggie thing just turn your eyes the other way and uh we'll heat up the peas with the mint it won't take long [Music] oh look at that rack coming along we're cooking it like i said 350 degrees our peas and our mint will swap with the potatoes at the top again we have ultimate control of the heat and the cook [Music] oh this won't take long to do and in the miracle of time we've got an internal temperature of about 125 degrees fahrenheit again we want it medium rare at the most or rare man look at that this rack is done perfect are you getting hungry or what now we're gonna let that rack rest for 10 minutes it's important right so all those juices can re-permeate into that meat to make it real juicy so let's um let's cut this rack so you can take a look what's inside okay i'll tell you [Music] take a look at that perfect you got that redness you want [Music] can you smell that it smells good oh man and uh in fact if you're not in a rush we'll cut up a few more chops and they're sold this way as chop sometimes right but this is what you have for the rack i'll tell you what if you want to treat the girlfriend or the boss because you're looking for a raise definitely cook them up a rack of lamb now to eat it just a little bit of coarse salt some sea salt and touch it and this is where the pit master is eating in front of you and he's not apologizing so of course to get more information about this recipe head on over to our website barbecue pit boys for life right for sure you can print it out there [Music] and while you're there sign up for a chapter we have almost 18 000 chapters in over 100 countries thumbs up we'd be proud to have you sign up and of course you always want to take care of the help the guard dog right and no we don't feed our dogs the bone right that's just bs right you let them eat off the bone but don't let them eat the bone that's not good for your dog right so the next time you're looking for a recipe for your pit check out barbecuepitboys.com
