pollo alla romana Roman chickens Jew this is a wonderful heady mix of chicken stew down with green peppers and all sorts of wonderful herbs with a little bit of wine and tomatoes it is an absolute classic and it is well worth making at home because it is rich and it's comforting so we're gonna make this by starting off browning our chicken in pieces in a pan so a tablespoon or so of oil goes into the pan good quality olive oil not extra-virgin in this case because we were using it to brown I've got an entire chicken which I've joined it up that needs to be seasoned with a little bit of black pepper and a little bit of salt and I'm gonna continue to season as this fries offs or to get a really nice seasoned exterior to this chicken no tongues here we go right so straight into that hot oil now you're looking for a high heat here to ensure that you get a really nice brown color on your chicken and you kind of need to do this in batches because otherwise this won't brown and you won't get that lovely color you're after so do this in about two batches and you should be in business yep when you have your pan up nice and hot it does happen quite quickly so keep your eye on it what are these sort of safe jobs that you kinda want to do in a high-sided posh because it does space and bubble a little bit now this recipe is inspired by one of the first episodes of a series are called Grandma's Boy which I filmed across Italy cooking with the Nona's obviously and this Roman chicken was actually part of the pilot episode but when I made it I was terrified by the grandmother because she used a meat cleaver to beat the absolute bejesus out of the chicken and it was slightly terrifying but ever since I've been making this jus and I always think of that lovely Nonna what right this is looking wonderful golden chicken is where we need it to be I'm gonna transfer these out on to a little baking sheet or a place you can use whatever you have and crack on with the rest of this just until I have all my chicken nicely browned off [Music] right this is that gorgeous golden color we are after here now so just transfer the remaining bits of chicken straight into this pan and going to use all that lovely fat in the bottom of the pan because have a look at what's going on in here this is where it's at come on in this lovely juice and that has that great chicken flavor in there so to that we're going to add in some pancetta and my top tip which is what I learned from the Italian Nonna is to put your garlic in in whole cloves so you get the flavor of garlic but you don't get the astringent C of the garlic in there so give that all a bit of a muddle in there it's gonna turn there in the heat ever so slightly yeah it's funny because with Italian food you think garlic garlic garlic but actually the Italians like a much more subtle flavor of garlic or so I've been told by the Italian Nonna except that I've added three cloves and she probably only would have added one but I like garlic so you know okay fry this off just until that starts to brown and you can see how quickly that's coming out now that that pancetta is nice and sizzling get straight in there with a whole pile of green peppers there's no other vegetables in this - except for these green peppers and I really like that contrast with that kind of slight bitter sweetness you get from green peppers in here alongside the chicken so I'm just gonna get a little bit of softness into them now for a little bit of aromatic in here I'm going to pick off the leaves of some oregano and the leaves of some time so now that I've added the herbs in there I'm going to add in some white wine and get that up to a nice sizzling temperature you want the sweetness from the white wine rather than the alcohol so it's all about reducing that down just to the point that the alcohol that almost burns off and if you don't want to use alcohol in this jus and you don't have to you can just use chicken stock which I'm actually gonna top this up with now the last ingredient in or the stew element of this dish is some Tomatoes now I've got a tin of whole plum tomatoes going in here so just bring that up to a steady simmer and I'm gonna nuzzle this brand off chicken straight back into this tree it's gonna be a huge big pot of warm covering remember to get all those juices from the pan in there as well stick the lid on and this is never gonna cook for about 40 minutes and you'll be in business not an Italian harmed in the process oh yes this is what I'm talking about Stevi tender chicken in that beautiful thick and tomato sauce and I'll turn the heat off at this point and just look at how rich and gorgeous this stew looks I'm gonna try and get up a nice piece of chicken it is one of those dishes that you know what it's not the prettiest but it is ultimate comfort food it's the sort of thing you want to eat with either pasta or a little bit of bread to mop up the juices and best of all it is incredibly easy to make to finish it off all you need is a touch of parsley if you want us it's up to you I might throw in a few capers but I'd probably be beheaded by a mob of angry Italians but that's alright and then when you're gonna do and dig in I mean you need no more it is simple food it is rustic food and I'm just gonna stop talking to talk in because this look how tender it's just literally falling off the bone and those peppers have gone super soft as well ah I mean you can take whatever fancy food but for me hands down this sort of rustic cooking just always wins it's simple it's easy and it is so ridiculously tasty and only a handful of ingredients now if that doesn't convince you I have no idea what will so check out the link in the box below over on my website be sure you hit that subscribe button for lots more delicious recipes it's beauty and of course like this video comment beneath letting me know if I've done justice to this pollo alla Romana and if I haven't Italians please be kind and until then my friends happy chicken cooking and I'll see you soon [Music] thank you very much and also goodbye uh okay one more and until then my friends happy chicken cooking and I'll see you soon that's a knife that's a fork oh dear I'll just tuck in
